An update from!

Hey ya'll!
Today is a BIG day for me... As I was looking at my starting picture from Oct. 5th, and the one I took this morning ( messy hair in both because it was 3 am lol) I am starting to see a different person. For years I have been up and down on this thing we call the weight loss rollercoaster.. when I found skinny fiber in 2012 my life changed! I lost 80 pounds.. I felt amazing and everything was great. Well a few months ago, I struggled very seriously with depression and anxiety panic attacks daily... I was very very depressed, I ended up gaining back 40 extra pounds on top of the pregnancy weight I didn't lose all of with my last child Brayden 18 months. 4 weeks ago, I was with my daughter at her dance comp.. sitting by myself trying not to be seen by anyone... I was embarrassed of the way I looked... When the dance comp was over we had to tackle this HUGE hill straight up.. I got about 20 steps in and had to stop... my daughter was telling me to come on but I couldn't.. and that is when it all clicked.. For years I have made excuses why I can't lose any more weight or to just settle for the way I look... I CANT do that. I have to be HEALTHY and FIT for my 4 children! 3 1/2 weeks ago I RESTARTED taking skinny fiber consistently, and going to the gym every day at 4 am. It hasn't been easy but below in my pictures I believe you can see a difference.. This is the hardest thing to me to bare my body to the world, but if it helps just one person who is struggling like I have for years then I am at peace! Coconut Chicken Tenders

Coconut Chicken Tenders


4 Boneless Skinless Chicken Breasts, sliced lengthwise into strips
2 Egg whites, lightly beaten *
1/4 Cup Coconut Flour
1/4 cup Arrowroot Powder
1/2 Cup Shredded Coconut
1/2 Teaspoon Sea Salt
1/4 Teaspoon Pepper
Coconut Oil for frying
*Egg whites are used for a crispier chicken finger but whole eggs will also work fine in this recipe too.


1. You will want to fry your chicken fingers in 2-3 inches of coconut oil. The amount of oil you use will depend on the size of the skillet you use.

2. Melt coconut oil in skillet over medium heat, approximately 375 degrees.

3. Mix coconut flour, arrowroot powder, salt and pepper together in a medium bowl.

4. Pour shredded coconut into a small bowl and set aside.

5. Next your going to dip the chicken strips into the flour mixture. Make sure they’re well coated with the coconut flour and arrowroot flour mix.

6. Then dip the chicken strips into the egg whites.

7. Now your going to coat the chicken with shredded coconut. Dip the chicken strips into the coconut and place them on a clean plate.

8. Once all the chicken is coated you’re ready to fry them up!

9. Test your first chicken strip in heated coconut oil. The chicken should turn golden brown and be completely done in 4-6 minutes.

10. If the chicken fries up too quickly, adjust heat and test another piece.

11. Turn chicken fingers half way through cooking.

12. Serve hot with a side homemade dipping sauce. Enjoy!

Coconut Oil Fudge

Super metabolism boosting coconut oil fudge recipe made healthy with natural ingredients like coconut oil, cocoa powder, raw honey (stevia can be used if you prefer) and vanilla extract. That’s it! No corn syrup, marshmallows, frosting or chocolate chips needed. Enjoy!
Coconut Oil Fudge
1/4 cup Coconut Oil (buy here)
1/4 cup Cocoa Powder (buy here)
1/2 Teaspoon Vanilla Extract
Raw Honey (or other natural sweetener like maple syrup or stevia)
Pinch of Sea Salt
Optional: 2 Drops Peppermint Essential Oil (buy here)
1. Measure 1/4 cup of coconut oil and scoop it out into a mixing bowl. Whip the coconut oil with a stand or hand mixer until it’s light and fluffy (like this). Note: If your coconut oil is room temperature and already liquid you can skip this step.
2. Mix the whipped (or melted if you live in warmer climate) coconut oil, cocoa powder, vanilla and salt together. Mix well and slowly add honey or sweetener of choice. Taste as you go to make sure you don’t over sweeten your fudge. Mix in 2 drops of peppermint essential oil if using.
3. Pour fudge into a 9×5 inch pan (this is a bread size pan). Spread fudge evenly cover the pan with a lid or plastic wrap. Refrigerate until fudge is set and hard, about 4 hours.
4. Cut fudge into small squares and serve.

Bacon Ranch Cheesy Ball

Totally low carb!!!!!

Bacon Ranch Cheesy Ball
(2) 8 oz packages of cream cheese, room temp
1 cup shredded cheddar 
1 cup bacon crumbles, divided
1 package of Hidden Valley Ranch Dip Mix


Take 2 packages of cream cheese (softened) and mix till slightly whipped.
Add packet of ranch dressing and mix till incorporated.
Fold in 1 cup shredded cheese.
Pour bacon bits in a plate or pie tin.
Form cream cheese mixture in to a ball with your hands.
Roll ball in bacon bits till covered. Wrap cheese ball in plastic wrap and place in the fridge.
When cheese ball feels firm, remove and serve with crackers.

Cant decide between pie or cake...don't worry have both with this DELICIOUS combination! All that's needed is a scoop of homemade vanilla ice cream!


Each serving is 6 WW+ points and 218 calories.
Serves 24
Prep Time - 15 min
Cook Time - 35 min
Total Time - 1 hr

1 box yellow cake mix
1 1/2 cups water
1/3 cup vegetable oil
3 eggs
Apple layer
6 apples, peeled, cored & sliced (or cubed if you prefer)
4 tbsp brown sugar
1 tsp pumpkin pie spice
1 tbsp lemon juice
1 cup salted caramel sauce (homemade or in a jar)
3/4 cup flour
1/2 cup brown sugar
1 tsp salt
1/2 cup butter, cubed

Preheat oven to 350
Spray a 9x13 pan with nonstick spray, set aside
In a large bowl combine all the cake ingredients and beat on medium for 2 minutes, or whisk by hand vigorously for several minutes
Pour into prepared pan
In a medium bowl combine apples, brown sugar, pumpkin pie spice and lemon juice until apples are evenly coated
Place over cake batter, but make sure to not stir, we want a layered effect
Drizzle caramel sauce over apples
In a small bowl combine all the topping ingredients with a pastry cutter or your fingers until mixture is crumbly and butter is pea sized
Sprinkle over apples
Bake for 30-35 minutes, or until cake is set and a toothpick comes out clean when inserted in the center
Remove and let cool completely before serving
Top with powder sugar or whipped cream or serve with ice cream

1 lb. Mueller's Cut Macaroni
1 large cucumber, peeled and cut in small chunks
2 cups diced fresh tomato
5-6 chopped green onion scallions
8 pieces bacon, cooked crisp and crumbled
1 cup mayonnaise or Miracle Whip
1 package Hidden Valley Ranch dry mix
1.5 cups traditional cut shredded cheddar cheese
Cook pasta according to package directions. Drain in colander and cold water. Place drained pasta in large bowl. Combine mayonnaise and dry ranch mix and gently stir into pasta coating well. Add cucumber, tomatoes and scallions and gently blend. Add bacon and cheese and blend all well. Refrigerate until chilled

Philly Stuffed Peppers

Philly Stuffed Peppers
1 lb Thinly Sliced Sirloin Steak (or you can use roast beef)
8 Slices Provolone Cheese
4 Large Green Bell Peppers
1 Medium Sweet Onion
1 pound White Mushrooms
3 Tbsp Butter
3 Tbs. Olive Oil Salt and Pepper – to taste
Slice a thin piece off each pepper lengthwise, remove ribs and seeds.
Slice onions and mushrooms.
Saute over medium heat with butter, olive oil, and a little salt and pepper.
Saute until onions and mushroom are nice and caramelized.
Salt and pepper the steak and saute in a little olive oil until just not pink. About 5 minutes.
Preheat oven to 400F
Add steak to the onion/mushroom mixture and stir to combine.
Line the inside of each pepper with a slice of provolone cheese.
Fill each pepper with meat mixture until they are overflowing.
Top each pepper with another slice of provolone cheese.
Bake for 15-20 minutes until the cheese on top is golden brown.
*Note I would pre-roast the peppers so the consistency of them can absorb all the flavors.

Peanut Butter Fat Bomb

2 TBS coconut oil
2 TBS grassfed butter
4 TBS peanut butter
3 TSP cocoa powder
3 packets stevia
1 TSP vanilla extract
1.5 TBS cream cheese
Mixed all together ingredient and put in the microwave for 30 sec & stir it very well and if need more dissolved put in the microwave again 15 to 30 sec then pour into mini cup cake size then put in the freeze at least 30 mins. VOILA!!

Crock Pot Taco Soup

Crock Pot Taco Soup

12 oz. dried pinto beans (do not soak)
64 oz. chicken broth (I used 2, 32 oz. cartons)
1 large onion, chopped
1 lb. ground beef
2 pkgs. taco seasoning
1 C. water
10 oz. can diced tomatoes with green chilies (juice also)
1 C. frozen whole kernel corn

Toppings: Shredded Colby jack cheese, chopped green onions or whatever you may like on yours.

In a 6 quart crock pot add the dried beans, chicken broth and chopped onion. In a skillet, brown the ground beef, breaking it up as you cook it. Drain the grease and add the taco seasoning and 1 C. water, stir to combine. Remove from heat and add to the crock pot. Add the canned tomatoes with juice. Stir to combine well and cook on high for 5 hours or low for 7 hours. Add the corn during the last hour of cooking. Serve with shredded cheese, green onions and Fritos or Tortilla chips.

1 package devil's food cake mix
1-2/3 cups water
3 eggs
1/3 cup oil
2 cups cold 2% milk
1 package (3.9 ounces) instant chocolate pudding mix
2 cups (12 ounces) semisweet chocolate chips

1 - In a large bowl, combine the cake mix, water, eggs and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Transfer to a greased 4-qt. crock pot.
2 - In another bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Spoon over cake batter; sprinkle with chocolate chips. Cover and cook on high for 3-4 hours or until a toothpick inserted in cake portion comes out with moist crumbs. Serve warm. Yield: 12 servings.

Banana Pudding Poke Cake

1 box yellow cake mix (& package ingredients to make cake)
2 box (small) instant banana pudding
4 c milk
8 oz whipped topping
20 vanilla wafers, crushed
sliced bananas

Follow the direction on the cake mix box to prepare the actual cake. Prepare it in a 9 x 13" pan. When golden, remove from over and let cool for a few minutes.

When just slightly cooled, use the end of a wooden spoon (the handle end) to poke holes into the baked cake. Don't be shy; make the holes big enough for the pudding to seep into and go deep enough with the spoon that you hit the bottom of the pan.

Prepare your pudding mixture. Combine your 4 cups of milk and the instant pudding mix; whisk until fully combined and there are no lumps.
Fill the holes pouring the pudding mixture onto the entire cake, taking care to get it into all your holes. Use the spoon to help really get it into the cake and spread evenly.

Refrigerate for at least two hours or until set. Top with whipped topping, crushed vanilla wafers and sliced banana.

Spooktacular Halloween Pudding Cups

Spooktacular Halloween Pudding Cups

4 cups Oreo cookies, crushed
1 (16 ounce) container Cool Whip
4 (3 1/2 ounce) vanilla pudding mix
8 cups milk (2 cups per package of pudding)
orange food coloring
16 clear plastic cups


Make pudding according to the directions on package.

Add food coloring.

Refrigerate if using the cooked kind or instant to allow to cool and or set up.

Crush entire package of oreos.

Divide amount in half.

Distribute the first half evenly among the cups.

Add 1/2 cup pudding to each cup (this recipe makes 16).

Evenly top each cup with remaining oreos.

To make the ghosts on top you can fill a large baggie with the coolwhip and snip off a nickel sized portion of one corner.

Pipe on the ghost.

Add eyes with anything you would like, I used black icing gel, you could use M&M's, chocolate chips etc.

Yield 4 servings
The easiest 5-ingredient meal EVER! And yes, you just need one pan with 5 min prep. It's quick, easy and effortless!


4 (8-ounce) pork chops, bone-in, 3/4-inch to 1-inch thick
16 ounces baby red potatoes, halved
16 ounces green beans, trimmed
2 tablespoons olive oil
1 (1-ounce) package Ranch Seasoning and Salad Dressing Mix
3 cloves garlic, minced
Kosher salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley leaves


Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
Place pork chops, potatoes and green beans in a single layer onto the prepared baking sheet. Drizzle with olive oil and sprinkle with Ranch Seasoning and garlic; season with salt and pepper, to taste.
Place into oven and roast until the pork is completely cooked through, reaching an internal temperature of 140 degrees F, about 20-22 minutes.* Then broil for 2-3 minutes, or until caramelized and slightly charred.
Serve immediately, garnished with parsley, if desired.

*Cooking time will vary depending on the size and thickness of the pork chops and potatoes.

Cream Base
1/4 C Butter
3Tbls Flour
1 C Milk
1 Cube Chicken Bouillon

2 small boneless skinless Breast
1 Small boneless skinless thigh
1 Large can of Pillsbury Grand Biscuits
2-3Tbls of oil
1/2 onion chopped
1 Carrot thinly sliced rounds
1/2 C cream Corn
1/2 C Frozen Peas
1 Pinch of Onion Powder
1 Pinch of Nutmeg
Pepper to taste


Melt butter in a saucepan. Add flour and make a paste. Add milk and bouillon cubes. Cook over low heat until thickened. It will be thick.


Cook chicken as desired.
Saute Onions and carrots in oil on low heat until soft and onion translucent. Salt well to keep from browning.
While onions and carrots are sautéing, chop chicken and add to a large bowl. Mix in cream base, frozen pea's, cream corn, and onion, and carrots, adding onion powder, nutmeg and pepper. Mix well.
Spray or butter 3 small 3 by 6 Inch Baking crocks, add one biscuits each, stretching to fill bottom of each crock. On top of each biscuits fill with chicken mix top with 2 biscuits stretched and pinched together to fit top,
Bake @ 350 for 17-20 min. until brown warm and bubbly.
