Dave Roberts' Mac & Cheese


Dave Roberts' Mac & Cheese

INGREDIENTS

SERVINGS 12

1 (16 ounce) box rigatoni pasta
8 ounces sharp cheddar cheese, shredded
8 ounces monterey jack cheese, shredded
4 ounces parmesan cheese, grated
2 cups heavy cream
salt and pepper

DIRECTIONS

Preheat oven to 350°F.
Prepare rigatoni noodles according to package directions, but add a good bit of salt to the water. Once cooked, drain but do not rinse the pasta.
Transfer pasta to a large mixing bowl. Add half the cheddar, monterey jack and parmesan cheeses, as well as the heavy cream. Stir well to combine, season with pepper to taste.
Transfer the mixture to a 9"x13" casserole dish. Sprinkle the remaining cheeses on top and bake for 30 minutes until golden brown and bubbly.

John's Milestone!!


My friend, John Cooper Sr. has hit another milestone. He's now under 400 lbs.!! Now, if you have it in your head to lose this much weight this quickly with ANY product, I just want to warn you that John works his butt off (literally) every day in his home gym!! John is one of the nicest people I've ever met and I would love to tell you that his Skinny Fiber made him that way but that would be a fib, if you're looking to be as nice as John, you'll have to work that out yourself!!

So as many of you know, I was at 515 lbs. on April 3rd 2015. I bought a scale that was rated for 500 lbs. The first time I stepped on that new scale it read "OVER". Crock Pot Roast


Crock Pot Roast

Ingredients:

1 (4 -5 lb) beef roast, any kind
1 (1 1/4 ounce) package brown gravy mix, dry
1 (1 1/4 ounce) package dried Italian salad dressing mix can use half to cut down on slatiness and sodium
1 (1 1/4 ounce) package ranch dressing mix, dry
1/2 cup water

Directions:

Place beef roast in crock pot.
Mix the dried mixes together in a bowl and sprinkle over the roast.
Pour the water around the roast.
Cook on low for 7-9 hours.

Add baby carrots and taters around the roast they will be delicious!

Easy Cheese Bread


My friend Lisa has it going on in her kitchen up there in Canada. Wish we were neighbors!!

Easy Cheese Bread

Ingredients

1 3/4 c flour
1 ts sugar
2 1/2 tsp baking powder
3/4 tsp salt
1 1/2 c cheese plus 1/2 c for the top
1 egg
1 c milk
1/3 c oil
1/2 tsp garlic powder
1/2 tsp italian seasoning

Directions

Pre heat oven to 375
In a large bowl, mix flour, sugar, baking powder, salt cheese and spices. Add egg, oil and milk. Mix well. Pour dough into a well greased loaf pan sprinkle with 1/2 cup of cheese and bake for about 35 min or till done.

Pumpkin Bars

Ingredients
4 eggs
1-2/3 cups sugar
1 cup canola oil
1 can (15 ounces) solid-pack pumpkin
2 cups King Arthur Unbleached All-Purpose Flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

ICING:
1 package (3 ounces) cream cheese, softened
2 cups confectioners' sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1 to 2 tablespoons milk

Directions
In a bowl, beat together the eggs, sugar, oil and pumpkin until well blended. Combine the flour, cinnamon, baking powder, baking soda and salt in a different bowl; gradually add to pumpkin mixture, mixing well. Pour the mixture into an ungreased 9-in. x 13-in. baking pan. Bake at 350° for 40-45 minutes or until set. Cool completely before icing.
For icing, beat the cream cheese, confectioners' sugar, butter and vanilla in a small bowl. Add enough milk to achieve spreading consistency. Spread icing over bars. Store in the refrigerator. Makes 2 dozen.

Funnel Cake Bites


First start by mixing your milk, egg,vanilla, and butter together. 
🍴 add in your salt, baking soda, and sugar. 
🍴 slowly include your flour and mix until everything is a smooth combination. 
🍴 pour your mixture into a giant gallon baggy or if you have a icing bag or funnel. Set aside for a few minutes.

🍴 Pour about a 1/2 inch of vegetable oil into a deep frying pan. Let it heat up for about 2 minutes of high then turn down to a low medium. To test if the oil is hot enough drip a small dot of the batter into the oil. If it frys up, then its ready.

🍴You want to get your bag of batter and make little dots in the oil. Let it sit for about a minutes and then get a fork and a spatula to slowly flip them over. Until they are golden brown. The place on a paper plate with paper towels and sprinkle with powder sugar. Can serve with whip cream or fruit to top them off with.

CAUTION- Working with any kind of hot oil can be dangerous. Make sure you take proper precautions when making these. The oil does not need to be on a high heat at all. Just enough to make it warm and keep it warm.

Taco Casserole


Taco Casserole 

Ingredients
1 lb ground beef
1 (1 1/4 ounce) envelopes taco seasoning
1 (10 1/2 ounce) cans mushroom soup
1 (8 ounce) cans beef broth
1 (14 ounce) cans rotel
6 slices cheddar cheese
1 (8 ounce) bags tortilla chips

Directions
Brown ground beef.
Add taco seasoning, mushroom soup, beef broth, and Rotel tomatoes.
Bring to a simmer. Simmer for about 5-10 minutes.
Pour chips into bottom of casserole dish (leave whole).
Pour beef mixture over chips.
Place sliced cheese on top.
Bake at 375° for about 10 minutes or until cheese looks melted.

It gets better: Research has found that spinach may boost weight loss by reducing cravings for sweets and salty junk food.

Greek Yogurt
High-protein foods, such as Greek yogurt, can spur the creation of life-is-good brain chemicals like dopamine and norepinephrine and also rev up our energy levels and alertness, says Young. Luckily, this is also a golden food for helping with weight loss: Researchers at the University of Tennessee in Knoxville found that people who ate 18 ounces of Greek yogurt daily while cutting total calories lost more weight and more belly fat than those who skipped the creamy treat.

Cherry Tomatoes
These are rich in the phytonutrient lycopene, which helps slow the accumulation of inflammatory compounds tied to bad moods and feelings of sluggishness, says Young. Because these poppers are also bite-sized and low-cal, they keep you on track with your weight-loss plans.

Tuna Sandwich
Tuna is high in omega-3's, while whole grains help keep you feeling good, says Young; they prompt the body to release the mood-regulating hormone serotonin, leading to feelings of contentment. Whole grains also promote satiety, so you're less likely to overeat.

Blueberries
Berries get their color from a purple pigment called anthocyanin, which is a mood enhancer, says Young. What's more, all berries are high in fiber and water, so you feel full for a longer period of time when you eat them.

"Wow what a year this has been for me!!!! Many of you know I have started Skinny Fiber for NOTHING else worked for me. I kept following so many of the posts and things kept catching my eye, finally said ok let’s try it nothing to lose since there is a 30 day empty bottle return.

Caramel Apple Sheet Cake

This delicious apple cake is perfectly moist and has caramel frosting infused in each
and every bite! It is heavenly!

Ingredients
2 cups flour plus 2 Tablespoons flour
2 cups sugar
1 teaspoon cinnamon
½ cup butter
1 cup water
½ cup shortening
½ cup buttermilk
½ teaspoon baking soda
2 eggs
1 teaspoon vanilla
2 cups chopped green apples
Frosting:
½ cup butter
6 Tablespoons milk
3½ cups powdered sugar
½ teaspoon vanilla
⅛ cup caramel sauce (I use caramel ice cream topping)

Instructions
1. In a large mixing bowl, measure flour, sugar and cinnamon and stir to combine. Set aside.
2. In medium sauce pan combine butter, water, and shorting. Bring to a boil. After mixture reaches a boil add it to the
four mixture and stir to combine. Add buttermilk, then baking soda, then eggs, then vanilla in that order, mixing in
between each addition. Stir in apples.
3. Pour into a 15x13 inch greased jelly roll pan.
4. Bake at 400 degrees F for 20 minutes. Let cool completely.
5. While cake is cooling, make frosting by combining butter, and milk in a medium mixing bowl. Microwave until butter
is melted. Add powdered sugar, vanilla, and caramel sauce and stir until smooth. Pour frosting evenly over cooled
cake.

Cauliflower Alfredo Sauce Recipe


Cauliflower Alfredo Sauce Recipe

Found this one over at "juliasalbum" and it reminded me that I need to get busy checking out some of these cauliflower recipes. This one looks and sounds yummy!

Ingredients

1 cauliflower head
1/2 cup hot cooking water
1/2 chicken bullion cube
1/2 cup Parmesan cheese
1/4 teaspoon salt
salt and pepper, to taste
nutmeg, to taste (optional)


Instructions

Clean the cauliflower head from green leaves, and chop it into reasonably large but manageable pieces. Place it in the big sauce pan with water, bring to boil and boil for 30-40 minutes until cauliflower is really soft. Remove from heat and drain cauliflower from water. You should have about 3 and 1/2 cups of cooked and sliced cauliflower pieces. Do reserve some cooking water.
Dissolve 1/2 of a chicken bullion cube in 1/2 cup of very hot reserved cooking water.
In a food processor, combine drained cooked cauliflower (from step 1) and 1/2 cup of hot reserved cooking water you just made (from step 2) with 1/2 cup grated Parmesan cheese, and 1/4 teaspoon of salt, and process really well, until a very creamy sauce forms:
Transfer sauce into a large sauce pan and keep it warm on the stove top. Season with salt and pepper, and nutmeg (optional), to taste.

1. All this time you’ve just been putting Bounce in the dryer! It will chase ants away when you lay a sheet near them.?? It also repels mice.

2. Spread sheets around foundation areas, or in trailers, or cars that are sitting and it keeps mice from entering your vehicle.

3. It takes the odor out of books and photo albums that don’t get opened too often.

4. It repels mosquitoes. Tie a sheet of Bounce through a belt loop when outdoors during mosquito season.

5. Eliminate static electricity from your television (or computer) screen.

Apple Pecan Spice Cake with Brown Sugar Cream Cheese Frosting.

SERVES: 12

INGREDIENTS
4 cups Granny Smith Apples, chopped into small pieces
2 cups sugar
½ cup vegetable oil
2 eggs, lightly beaten
1 teaspoon vanilla
2 cups all purpose flour
2 teaspoon baking powder
½ teaspoon baking soda
2 teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon salt
½ cup milk
1 cup pecans roughly chopped
Brown Sugar Cream Cheese Frosting:
1 (8 oz) package cream cheese frosting, room temperature
¼ cup butter, softened
2 teaspoon vanilla
1 cup golden brown sugar

INSTRUCTIONS
Preheat oven to 350 degrees and grease and flour a 9x13 inch baking pan. Set aside.
In a large mixing bowl, combine apples and sugar. Stir in oil, eggs, and vanilla.
In another mixing bowl combine flour, baking powder, baking soda, cinnamon, nutmeg and salt. Add the flour mixture to the apple mixture. Add milk and stir until just combined. Add chopped pecans.
Pour into prepared 9x13 inch pan. Bake for 30-40 minutes or until toothpick comes out clean. Let cool completely.
To make the frosting: Beat the cream cheese until smooth. Add butter and continue to beat until smooth scraping down sides when needed. Add vanilla and brown sugar. Beat for 5 minutes until it is light and fluffy and the sugar has dissolved. Spread evenly on top of the cake. Refrigerate after frosting.

Delicious soft and puffy pumpkin snickerdoodles with a surprise cream cheese center.

INGREDIENTS
3¾ cups all-purpose flour
1½ tsp. baking powder
½ tsp. salt
½ tsp. ground cinnamon
¼ tsp. freshly-ground ground nutmeg
1 cup unsalted butter, at room temperature
1 cup granulated sugar
½ cup light brown sugar
¾ cup pumpkin puree
1 large egg
2 tsp. vanilla extract
Filling Ingredients:
8 ounces cream cheese, softened
¼ cup sugar
2 teaspoons vanilla extract
Cinnamon-sugar coating:
½ cup granulated sugar
1 tsp. ground cinnamon
½ tsp. ground ginger
Dash of allspice

INSTRUCTIONS
In a medium bowl, whisk the flour, baking powder, salt, cinnamon, and nutmeg together. Set aside.
In a kitchenaid mixer with a paddle attachment, beat together the butter and sugars on medium high speed until fluffy about 2-3 minutes.
Blend in pumpkin puree, beat in egg and then add vanilla. Slowly add dry ingredients on low speed just until combined. Cover and chill dough for an hour.
To make the cream cheese filling, blend cream cheese, sugar and vanilla together. Chill for an hour.
Preheat oven to 350 and line your baking sheets with parchment paper. In a small bowl, combine the sugar and spices for the coating and set aside.
To make the cookies, take a tablespoon of the cookie batter. Flatten it like a pancake and place a teaspoon of the cream cheese in center. Form another tablespoon of the cookie batter into a flat pancake shape and place on top of the cream cheese. Pinch the edges together sealing in the cream cheese and roll into a ball. Roll in the cinnamon sugar coating and place on the prepared baking sheet 2 inches apart.
Repeat until the dough is gone and flatten the cookie dough balls with a heavy bottomed glass or measuring cup.
Bake the cookies for 10-15 minutes or until the tops start to crack. Let cool on the baking sheet for 5 minutes and transfer to a wire rack. Enjoy!

Chicken Tortilla Soup



Chicken Tortilla Soup

1 tbsp. of olive oil
1/2 cup diced onions
2 tsp. chili powder...
1 lb cooked chicken
1 can of corn (optional)
4 cups low sodium chicken broth
1 can of stewed tomatoes or salsa

Garnish :
shredded cheese
tortilla chips
plain greek yogurt (optional)

In a medium skillet, cook the olive oil, onions and chili powder until the onions are tender. Then add chicken, corn, broth and stewed tomatoes, Cook uncovered on Medium until a slow boil, then reduce heat and simmer for 15 minutes. Serve with cheese and tortilla chips.

Cabbage Stew


Cabbage Stew

1 lb ground beef
1 14.5 oz can stewed tomatoes
8 oz tomato juice
4 carrots chopped, or about a cup of baby carrots
1 package dry Italian dressing mix
1 medium head cabbage
1/4 cup chopped onion (or to taste)
1 tsp pepper (to taste)

Brown hamburger meat with onions in a pan. Drain grease. combine all ingredients in a boiler or large skillet with water ( enough to cover, but barely unless you want it real runny) and bring to a boil then simmer until carrots and cabbage are tender.

Mary And Her Story!



This is Mary and what she has to say about her experience with Skinny Fiber, looking great, isn't she!!

"Back in the fall of 2013, I decided that something had to change in my life. I was too overweight at 170 pounds for my 5'2 frame. I started to research online and found Skinny Fiber and Coach Jones. I contacted him and it wasn't long before I placed my first order. Like so many, I only ordered 1 bottle to "give it a try".... I gave it a try and continued to eat as I usually did. I have had lots of people ask if I take Skinny Fiber. The answer is yes, yes yes. So, I figured it was time to update my before and after. The first pic was when I first adopted my little girl before my weight loss journey. The second is a couple days ago. I am so thankful to have been introduced to Skinny Fiber. I have many health issues so weight loss has always been an issue for me. I am down a total of 43 pounds. I have recently started weight training and increased my cardio workouts as I have so much energy. I feel better, sleep better, have way more energy and overall feel fantastic. I went from a size 15/16 to a 9/10 currently and working towards something a little smaller. Im not really concerned with what the scale says, just aim to feel my best and get stronger every day. I am Skinny Fiber for life.

Stuffed Bell Peppers


Stuffed Bell Peppers

Pre-cooking the meat first and then mixing it with the cooked rice is the secret to a great stuffed pepper!...

TOTAL TIME: 1hr PREP 20 mins COOK 40 mins
SERVINGS: 6

INGREDIENTS:
6 medium green peppers
1 lb ground beef
1 chopped onion
1 (6 7/8 ounce) box of Rice-a-Roni mix, Spanish flavour
1 (16 ounce) can tomato sauce
1 teaspoon sugar
1 (14 1/2 ounce) can tomatoes (for use in making the rice)
1 cup shredded cheddar cheese or 1 cup American cheese

DIRECTIONS:
Remove tops and seeds from peppers; parboil peppers for 5 minutes and drain.
Place peppers in a baking dish.
Combine ground beef and onion and cook together until done.
Drain and set aside.
Prepare Rice-A-Roni according to package directions.
When rice is done,combine it with the beef and onion.
Fill peppers with rice mixture.
Mix the 1 teaspoons sugar with the tomato sauce and pour this AROUND the peppers (not over).
Cover the baking dish.
Bake at 350°F for 35 minutes and then uncover and top with the shredded cheese.
Bake uncovered for about 5 minutes more to melt cheese.
Serve with the tomato sauce.
