CHICKEN AVOCADO PITAS



CHICKEN AVOCADO PITAS

Healthy and delicious Grilled Chicken and Avocado Pitas are the perfect summer sandwich!

Serves: 4
INGREDIENTS
½ pound shredded cooked rotisserie chicken
2 avocados, hollowed and cut into small pieces
½ cup plain Greek yogurt
1 teaspoon cilantro, divided
1 teaspoon garlic salt
6-8 cherry tomatoes, quartered
4 slices of thin baby Swiss cheese
Juice from half a lemon
4 whole wheat pita pockets
1 tsp. extra virgin olive oil
INSTRUCTIONS
Cut 1 piece of Swiss cheese into each pita pocket.
In a small bowl, combine Greek yogurt and garlic salt. Set aside.
In a medium size bowl, combine avocado, tomatoes, lemon juice, and half of the Cilanto. Set aside. In a skillet, brown the cooked chicken with the olive oil over medium heat for 3-4 minutes. While cooking, sprinkle with half of the cilantro.
Take off of heat and add ¼ of the chicken to each pita.
Top the chicken with a drizzle of the yogurt mixture followed by a large spoonful of the avocado mixture, all within the pita pocket. Can be served cold, or grilled on a sandwich maker/foreman grill for 2 minutes to serve warm.

Bacon Cheeseburger Meatballs



Bacon Cheeseburger Meatballs

A low carb and gluten free meatball recipe inspired by the bacon cheeseburger.

Ingredients

For the Meatballs:
1 lb ground beef (I like 80/20 for these)
1 egg
1/4 cup almond flour
3/4 tsp salt
1/4 tsp ground black pepper
1/2 tsp garlic powder
1/4 cup chopped raw bacon (from the fatty ends)
bacon fat to cook the meatballs in
For the Sauce:
1/4 cup mayonnaise
1 Tbsp sugar free (or low sugar) ketchup
1 tsp dijon mustard
1 Tbsp dill pickle juice (or dill pickle relish if you prefer chunks)
To Serve:
3 oz cheddar (or other) cheese
4 cups iceberg lettuce, shredded
3 slices of bacon, cooked and broken into 12 pieces
Make a Bacon & Cheese Hash Brown Quiche

Instructions

Combine all of the meatball ingredients in a medium bowl and mix thoroughly. Form into 12 meatballs. Fry in a non-stick pan in the reserved bacon fat (or use the oil of your choice) for about 4 minutes for the first side. Turn them over and top each with a slice of cheese. Cook for another 4 minutes, or until done to your liking. Remove from the heat, and top each meatball with a piece of bacon.
For the Sauce:
Combine all of the sauce ingredients in a small bowl and whisk together until smooth.
To Serve:
Place 1 cup of shredded iceburg lettuce on a plate. Top with 3 meatballs and drizzle with about 1 1/2 Tablespoons of sauce.

Approximate nutrition information per serving:

1 meatball: 160 calories, 11g fat, .25g net carbs, 14g protein 3 meatballs w/sauce & lettuce: 591 calories, 45g fat, 1.5g net carbs, 42g protein

Mango Sauce Laced Black Beans



Mango Sauce Laced Black Beans

Flavorful and colorful potassium-rich, light and healthy lunch or after-workout snack packed with 13g of fiber and almost 17g of protein! Whip up a big batch to have on hand throughout the week! It’s vegan, too!

1 - 8 oz can of black beans...
1 - small mango
1 - tbsp juice from lime
1 - tbsp juice from lemon
1 - tbsp juice from orange
3 - tbsp chopped cilantro (or to taste - I love cilantro so I tend to add a little extra!)
1 - tbsp maple syrup (I excluded the maple syrup to cut down on the sugar but added ½ - onion diced to complement the juices and cilantro).

Drain and rinse black beans and pour into a large bowl.
Dice the mango and combine with black beans.
Add the lime juice, lemon juice, orange juice and maple syrup to the bowl.
(If eliminating the maple syrup as I did, dice the onion and mix with other ingredients in bowl).
Chop the cilantro and add to bowl.

Summer Vegetable Grill Packets



Summer Vegetable Grill Packets

* Save for summer meal planning!

Ingredients:...

2 slices bacon
4 ears fresh corn
1 red bell pepper, large diced
2 zucchini, cut in 1/2 inch slices
1/2 cup onion, diced
1 teaspoon cavender's all purpose Greek seasoning
black pepper, freshly ground
Reynolds Wrap Foil
4 tablespoons butter

Directions:

Preheat your oven to 400 degrees.

Place the bacon on the rack of a broiler pan and bake for 10 to 20 minutes, depending on the thickness of your bacon. You want it crisp but not burned.

While baking the bacon, scrape the corn off the ears of corn. Combine the corn kernels, red bell pepper, sliced zucchini, and diced onion in a bowl. Sprinkle the Cavender's Greek Seasoning over the vegetables. Add some freshly ground black pepper if you would like.

Tear off 2 12 x 12 pieces of Reynolds Wrap Aluminum Foil. (I like to use heavy duty for grilling). Place half the vegetables on each foil sheet.

Cut the butter up into small pieces and put 2 tablespoons over each vegetable packet. Bring the ends of the foil together, fold over 3 times and twist the ends together. (Each packet serves two).

Grill over hot coals for 15 - 20 minutes. While the veggies are grilling, crumble the bacon. When the veggies are ready, carefully open the packets (watch out for steam!) and sprinkle a slice of crumbled bacon over each packet.

Carb Breakdown



A low carb diet can help you lose weight. But if you go on the Atkins Diet or the South Beach Diet, or any low carb diet, your friends and family might think you're doing something dangerous. Go on a Weight Watchers Diet and it doesn't bother anybody. Why? Because low carb diets are unfamiliar. Read this and you can put their minds at ease.


WHEN YOU EAT CARBOHYDRATES (carbs), your body releases ...insulin into your blood stream. The insulin tells your cells what to do. It tells most cells to absorb the sugar out of the blood and tells your fat cells not to release any fat to burn (because there are carbs already in the blood to burn).

One of insulin's jobs is to take sugar out of the blood — the sooner the better, because sugar in the blood damages the body. The reason diabetics have such bad health problems (blindness, circulation problems, etc.) is because of the damage sugar does when the person can't make enough insulin.

When you eat something with a lot of sugar in it, the body kind of panics and usually overdoes it. Too much insulin is released to mop up the sugar. It takes all the sugar out of your blood. Then your blood sugar is too low, so you crave more sweets.

So insulin saved the day, keeping that sugar from damaging your body, but in the process, it makes your body store fat and prevents you from burning fat.

A low carb diet, like the Atkins or South Beach Diet or Protein Power all vary in how much to limit carbs, but the rough average is thirty carbs a day. At that level, you don't put very much insulin into your system, so your body burns any fat you eat as fuel, and if you need more, your fat cells freely release fat into your blood stream to be burned as fuel.

But when you eat a large amount of carbs — a hundred grams, two hundred grams, or more (most Westerners get about 300 grams a day) — your body releases insulin in huge amounts, which makes it almost impossible to burn fat. And makes it really easy to gain weight. Some people don't gain weight, of course, even though they eat lots of carbs, and we'll get to that in a minute. But first understand this basic process. This is why people lose weight so easily and quickly when they cut carbs: Because carbs increase insulin, which leads to storing fat and preventing fat from being burned.

Eat To Live!



While we often try to not draw a line in the sand regarding good foods and bad foods, but rather try to talk about moderation, the truth is that there are some foods that nutritionists, the food experts among us, would never eat. Let’s take a look inside your cabinet – what foods in there should you set aside for something better?

1. Soda
Soda is a nutritionist’s worst nightmare. Essentially a bo...ttle of soda is just liquid sugar. There is nothing nutritious about it, and with all that sugar it isn’t even good for quenching your thirst. Do away with soda today and switch to water and milk. Just think about it – if a can of coke can eat through rust, do you really want that inside your body?

2. Sugary Cereal
High sugar, low nutrient cereal is a terrible way to start your day. Many of these cereals will make health claims because they are fortified, but you would do better with a cereal containing less sugar. And don’t just make the switch to granola – many granola lines on the market are no better for you than sugary cereals. They are often high in fat and calories, even if they are lower in sugar.

3. TV Dinners
These premade frozen dinners are the equivalent of a giant salt lick. The sodium level in these meals is extremely high, often exceeding what you should have in a day, never mind just one meal. Instead of buying TV dinners, try cooking ahead of time for the week and freezing your own meals. This is a much healthier option to the premade variety.

4. Hot Dogs
Many nutritionists cite hot dogs as a food they simply wouldn’t eat. Even those hot dogs that are nitrate free are too difficult to source when it comes to where the meat is from.

Hot dogs are a convenient way to hide things that we wouldn’t otherwise consume.

5. Cereal Bars
Cereal bars are often packed with far more sugar than you would expect. Even those that bill themselves as energy bars or high fiber bars are often no better. A cereal or granola bar is often no healthier than some frosted PopTarts. Avoid pre-packaged muffins as well – those are notoriously high in sugar.

6. Instant Noodle Cups
Ramen noodles may be a godsend for the broke college kid, but they will do a number on your daily sodium intake. Particularly for those with any history of hypertension or diabetes, these noodles should absolutely be out of the question. There is no nutritional redeeming value in these cups of noodles.

7. White Bread
If you’re going to eat white bread, you might as well have a cupcake. Both are made from basic carbohydrates that quickly break down into simple sugars, leaving you with your energy crashing and very little in the way of nutrition.

Try out sprouted grain breads if you’re looking for a bread with real nutrition packed into every bite.

Cheesy Broccoli Rigatoni



Cheesy Broccoli Rigatoni

Ingredients...
12 ounces uncooked rigatoni pasta
3 garlic cloves, minced
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon salt
1 tablespoon olive oil
2 1/2 cups nonfat milk
5 cups fresh broccoli florets
2 cups shredded part-skim mozzarella cheese, divided
Directions
Cook pasta according to package directions. Meanwhile, in a large saucepan, saute garlic in butter over medium heat for 2 minutes. Stir in flour and salt until blended.
Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat; set aside. Drain pasta and toss with oil; set aside.
Add 1 inch of water to a large saucepan; add broccoli. Bring to a boil. Reduce heat; cover and simmer for 4 - 5 minutes or until crisp-tender. Drain and rinse with cold water.
in a 13 x 9 x 2 baking dish coated with nonstick cooking spray, layer 1 cup white sauce, half of the pasta and broccoli and 1/2 cup of cheese. Repeat remaining layers. Top with remaining sauce and cheese. Cover and bake at 350 degrees F for 25 - 30 minutes or until heated through.

STUFFED CABBAGE



STUFFED CABBAGE

Ingredients:...

2 Heads Cabbage
2 large onion chopped
1 lb Bacon partially frozen (sliced thin)
3lbs Ground beef (leaner the better)
2 tsp minced garlic
4-5 pork neck bones
salt and pepper to taste
2 eggs scrambled
1 LG can sauerkraut
1 LG can tomato puree
1 LG can whole peeled Roma tomatoes
Rice ( I use 2 boil bags of Brown rice)

Directions:
Pre heat oven to 350°
Brown bacon and onion till just about crisp.. add garlic at end of fry..
Make rice whether it be boil in bag or not... approx 4 cups. let cool slightly.
Mix Bacon mix ,rice and eggs together. add salt and pepper.
Blanche Cabbage
Removing leaf by leaf..
Cut away any additional core
Place ground meat mix into each leaf and roll tucking sides in as you go..
Place top leaves of Cabbage at the bottom of pan... line with neck bones... roll each cabbage and place in pan... each layer will be topped with tomato puree and sauerkraut. when finished layering crush whole tomatoes on top and bake for 3 hours......... DELISH!

Old Fashioned Goulash



Old Fashioned Goulash (Better than that boxed stuff!!!)

1 1/2 lbs of ground beef...
1 can of petite diced tomatoes
1 diced yellow onion
1 lb of rotini or macaroni noodles
1 can of corn drained (Optional)
Chili Powder (To taste Preference)
Directions:
Brown burger and onion in skillet. When cooked place all other ingredients in pan and add enough water to cook the noodles in. Use chili powder to your taste preference. I use quite a bit of it myself. Simmer with a lid on till noodles are cooked through.

BAKED BROCCOLI



BAKED BROCCOLI

This broccoli dish will melt in your mouth!...

1 pound broccoli, rinsed and trimmed
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/4 cup Parmesan cheese

Preheat oven to 425 degrees F.

Cut the broccoli florets into bite size pieces. Cut the stalk into 1/8-inch thick, round slices. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, sea salt and pepper. Spread into a baking pan, place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes. Remove from the oven, toss in the cheese and serve immediately.

Need: 2 packets Dry Italian Dressing Mix
1/2 Cup Brown Sugar
6-8 Chicken thighs (You can use any chicken pieces, skin on)
Preheat oven to 350 deg.
Line a metal rimmed baking sheet or pan with foil.
Place brown sugar and seasoning packets in a large Ziploc freezer bag and shake to mix.
Add chicken pieces to bag and coat.
Place chicken pieces on pan skin side up.
Bake for 35 minutes for thighs, longer for thicker breast pieces or until juices run clear.

INGREDIENTS: ...
1 lb ground beef
1 med. Chopped onion
1 lg bag Fritos-Scoop kind
26 oz. Can Ranch Style Beans with Jalapenos (do not drain)
10 oz. can Ro-Tel Mexican Lime & Cilantro diced tomatoes
1 sm can Campbell’s Fiesta Nacho Cheese Soup
1 pk Enchilada Seasoning
3 cups Shredded Cheddar Cheese

DIRECTIONS:
Preheat oven to 325 degrees
Brown beef in large skillet with chopped onion then drain grease. Add beans, Rotel, Soup and Enchilada Seasoning & Mix well. Simmer until thoroughly heated. Lightly grease a large baking pan. Crush Fritos and spread in bottom of baking pan. Pour a layer of beef mixture and then a layer of ½ of the shredded cheese. Make another layer of Fritos, beef and cheese. Cover with foil and bake approximately 20 minutes at 325 degrees.

Baked Sweet Onion Cheddar Dip

INGREDIENTS
1 1⁄4 cups finely chopped yellow sweet onions (Maya, Vidalia, etc)
1 garlic clove, minced
1⁄4 cup mayonnaise (Best Foods, Hellmann's, or Vegenaise)
1⁄4 cup plain yogurt or 1⁄4 cup sour cream
1⁄2 cup grated sharp cheddar cheese
Tabasco sauce, to taste
1⁄8 teaspoon curry powder, to taste (optional, but oh so good!)
1⁄3 cup grated parmesan cheese
1⁄8 teaspoon smoked spanish paprika or 1⁄8 teaspoon dried ancho chile powder or 1⁄8 teaspoon sweet paprika
1 tablespoon chopped green onion, for garnish

DIRECTIONS

Preheat oven to 350 degrees F.
In a bowl, mix together the onions, garlic, mayonnaise, yogurt or sour cream, cheddar, and Tabasco (and curry powder, if using).
Spread into a lightly pan sprayed small-ish baking dish.
Top with Parmesan and sprinkle with paprika to taste. (Ground ancho chile powder can be substituted for the paprika, for a little more kick. I prefer the ancho.).
Bake in preheated 350 degree F oven for 25 to 30 minutes. Garnish with chopped green onion (scallion).
Serve hot or warm with crackers, bread, or raw veggie dippers.
Makes about 6 servings. I usually make a double batch! :).

(Homemade is so much better than canned)
Ingredients
3 cups peaches, peeled, pitted and sliced
1 cup water
1 tablespoon fresh squeezed lemon juice
2/3 cup light brown sugar (feel free to use less sugar if you have extra sweet peaches)
1/4 cup cornstarch
1/2 teaspoon vanilla
1/4 tsp ground cinnamon
Instructions
In a large saucepan, combine water, juice, sugar, and cornstarch then add peaches.
Stir over medium heat until thickened and bubbly.
Once it is bubbly, cook at the same temperature for another 2 minutes(until thickened), constantly stirring. Remove from heat, stir in vanilla and cinnamon. Cool to room temperature, then use right away or pour into Mason jar and store in the refrigerator.
This is enough for one 9 inch pie or cobbler.
Please note if you store the filling in the refrigerator, but it may separate.
Reheat everything back up in a saucepan until combined and thickened.
So yummy you will want to just eat it with a spoon.
Great served with a scoop of vanilla ice cream or some whipped cream.

Corn Fritters

SERVINGS 5

2 cups corn (frozen)
1 egg, well beaten
1 teaspoon sugar
1⁄2 teaspoon salt
1 tablespoon butter, melted
2 teaspoons baking powder
1 cup flour
2⁄3 cup milk
1 tablespoon canola oil (more may be added to additional batches, but is not necessary)
DIRECTIONS
Thaw frozen corn by placing it in a strainer in the sink and run cold water over it, stirring occasionally, until it is completely thawed.
While corn is thawing, mix all of the remaining ingredients except oil in a large bowl.
Add thawed corn to batter and mix well.
Heat oil in a large non-stick skillet on medium-high.
Drop spoonfuls of batter into skillet. Brown on both sides.
Drain on paper towels before serving

1 mango, peeled, cored, chopped in small cubes
2 cups pineapple, chopped in small cubes
1 cup cherry tomatoes, each chopped in half
1 red bell pepper, chopped
1/4 cup red onion, minced
1/4 cup cilantro, chopped finely
2 tablespoons freshly squeezed lime juice
a pinch of red chili powder (optional)
a pinch of cayenne pepper (optional)
Salt and pepper to taste
Instructions

Mix all chopped ingredients for in a large bowl, add lime juice, add salt and pepper to taste and optional spices (if desired) - and mix well. Set aside to allow the juices combine together.

Loaded with protein, veggies and healthy grains, these stuffed bell peppers will provide the nutrition that you need for a healthy, balanced meal!

INGREDIENTS

3 cups cooked quinoa
1 (4-ounce) can green chiles
1 cup corn kernels
1/2 cup canned black beans, drained and rinsed
1/2 cup petite diced tomatoes
1/2 cup shredded pepper jack cheese
1/4 cup crumbled feta cheese
3 tablespoons chopped fresh cilantro leaves
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon chili powder, or more to taste
Kosher salt and freshly ground black pepper, to taste
6 bell peppers, tops cut, stemmed and seeded
INSTRUCTIONS

Preheat oven to 350 degrees F. Line a 9×13 baking dish with parchment paper.
In a large bowl, combine quinoa, green chiles, corn, beans, tomatoes, cheeses, cilantro, cumin, garlic, onion and chili powder, salt and pepper, to taste.
Spoon the filling each each bell pepper cavity. Place on prepared baking dish, cavity side up, and bake until the peppers are tender and the filling is heated through, about 25-30 minutes.
Serve immediately.

BRUSSELS SPROUTS BACON SALAD

You may think you hate brussels sprouts until you have this amazing, super crisp bacon-loaded salad - even your pickiest of eaters will gobble this up instantly!

INGREDIENTS
6 slices Jones Dairy Farm Cherry Hardwood Smoked Sliced Bacon, diced
12 ounces brussels sprouts, trimmed, finely grated or shredded with a knife
1/4 cup sliced almonds
FOR THE LEMON VINAIGRETTE
1/4 cup olive oil
1/4 cup apple cider vinegar
Juice of 1 lemon
2 tablespoons sugar
INSTRUCTIONS
To make the vinaigrette, whisk together olive oil, apple cider vinegar, lemon juice, and sugar in a small bowl; set aside.
Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
To assemble the salad, place brussels sprouts in a large bowl; top with bacon and almonds. Pour the dressing on top of the salad and gently toss to combine.
Serve immediately.

Here is another precious success !!  One of the best elements of sharing all of these testimonies, is not just the outside transformation of these women and men and teens,  but the changes that take place inside, absolutely bring me to tears.

Hello All! Here's my update. I have completed my 1st 90 Day Challenge, and I intend to complete a second 90 Day Challenge. I'll tell you right now, I didn't do any measuring or weighing - so I can't tell you about inches or number of pounds lost. What I can tell you is I was wearing a 12/13 in the "before" picture and now I wear a size 8/10. I wear "mediums" instead of large/extra large. Loaded Cauliflower Casserole



Loaded Cauliflower Casserole
Just like mac and cheese without the pasta

Ingredients:
... 2 lbs cauliflower florets
8 oz shredded sharp cheddar cheese, divided
8 oz shredded Monterrey Jack cheese, divided
8 oz block cream cheese, softened
4 tablespoons heavy cream
2 bunches green onions, sliced (1 1/2 cups)
6 sliced bacon, cooked and crumbled
1 clove garlic, grated
Salt & pepper to taste

Direction:
Preheat oven to 350 degrees.
Steam cauliflower florets until tender.
While cauliflower steams, cream together 6 oz of the shredded cheddar, 6 oz of the Monterrey Jack, cream cheese, and heavy cream.
Stir in sliced green onions, chopped bacon, and garlic.
Set aside.
Drain any liquid from steamed cauliflower and add to cheese mixture.
Stir cauliflower and cheese mixture together.
Taste for seasoning, and add as necessary.
If you want a finer texture, give a few mashes with the potato masher.
Pour into a 2-3 quart casserole and sprinkle on remaining cheddar and Monterrey Jack cheese.
Cover dish with foil and bake for 25 minutes; remove foil and continue to bake until cheese is brown and bubbly.

Oven Baked Tacos!



WooHoo its Taco Tuesday!!

Once you try these you may never eat ordinary tacos again! These are to Die for!!!

Oven Baked Tacos!

Brown your ground beef and drain completely - then add refried beans, taco seasoning and about half a can of tomato sauce. You can add whatever you like really! Mix together and scoop into taco shells, (stand them up in a casserole dish).
Sprinkle the cheese on top and bake at 375 for 10 minutes!!!!!! You can then top with sour cream or any other toppings!

Skillet Mac-n-Cheese



This mac-n-cheese is not only delicious, but it is made all in one skillet...even better it is lower in fat and calories than a lot of other mac-n-cheese recipes, but trust me no one would ever guess it!!

Skillet Mac-n-Cheese
Serves 12

Prep Time - 5 min
Cook Time - 20 min
Total Time - 25 min
Ingredients
3 1/2 cups water
12 oz can fat free evaporated milk
1 lb elbow macaroni
2 tsp salt
1 tsp pepper
1 tsp garlic powder
1/2 cup fat free milk
1 tsp cornstarch
1 tsp chili powder
2 oz reduced fat cream cheese, cut into cubes
6 oz cheddar cheese
6 oz Monterey jack cheese
Instructions
1.In a large skillet combine water, evaporated milk, pasta, salt, pepper & garlic powder
2.Heat over medium-high heat to a simmer, stirring often, until pasta is tender (7-8 minutes)
3.While pasta is cooking, in a small bowl combine milk, cornstarch & chili powder until smooth, set aside
4.Shred cheddar cheese & Monterey jack cheese, set aside
5.When pasta is tender add in cornstarch mixture and stir to combine
6.Bring to a boil and stir until mixture thickens some
7.Stir in cream cheese until melted and smooth
8.Remove pan from heat and add in shredded cheese one handful at a time, making sure to fully incorporate the cheese before adding in more
9.Taste and adjust seasoning or add in more milk if necessary to reach your desired consistency (I didn't need to, but we like very thick mac-n-cheese)

TRES LECHES CAKE (Three Milks Cake)

Ingredients:
1 - 18.25 ounces package yellow, french vanilla or butter recipe cake mix +
eggs, oil and water to make the cake
1 - 14 oz can sweetened condensed milk
1 - 5 oz can evaporated milk
1 - 7.6 oz Nestle Media Crema (table cream) found in Latin isle or whole milk
1 - pint whipping cream + 4 tablespoons powdered sugar or
1 - 8 oz container whipped topping (cool whip)
sliced fresh fruit for garnish

Directions:
Preheat oven to 350 degrees. Prepare and bake cake according to package directions for a 9x13 inch cake. Grease and flour a 9 x 13-inch baking pan.
Pour cake batter into prepared pan and bake cake until done, about 30 minutes. Remove cake from oven.
While cake is still warm, using a fork, or the back of a wooden spoon poke holes in the cake every 1/2 inch. In a large glass measure, stir together condensed milk, evaporated milk and whole milk.
Slowly pour the milk mixture all over the cake making sure to get the milk into the holes. Pour half of the milk mixture and let the cake sit for about 10 minutes, then come back and pour the rest of the milk over the cake.
The cake should absorb all of the milk if poured slowly. (If you don't want a really wet cake only use half of the milk mixture).
Allow cake to sit at room temperature for 30 minutes. Cover with plastic wrap or foil, and refrigerate for 30 minutes to an hour or until well chilled.
Frost the cake with cool whip or use fresh whipping cream. If using fresh whipping cream, whip the cream on high using an electric mixture.
Add 4 tablespoons of powdered sugar to the whipped cream. Garnish with fruit and chill until ready to serve.

Julienned Potatoes



Julienned Potatoes

2 large potatoes
3 T. butter
3 T. all purpose flour
1 to 1 1/2 C. milk
1/4 tsp. mustard powder
1/4 tsp. salt
1/4 tsp. paprika
1/4 tsp. pepper
2 C. shredded sharp cheddar cheese
In a pot melt the butter and whisk in the flour over med. high heat. Cook for 30 seconds then add 1 C. of milk, whisking as it begins to thicken. Add in 1/4 - 1/2 C. more milk, until it reaches a "thin gravy" like consistency remove from the heat and stir in 1 1/2 C. cheese and the seasonings.
Wash the potatoes, leaving the skin on, use a mandolin to julienne them or a knife to cut them into thin matchsticks. Place half of the potatoes in the bottom of a 2.5 quart casserole dish. Pour half of the cheese sauce over the potatoes and spread around. Top that with 1/4 C. of the remaining cheese. Place the rest of the potatoes on top of that and then top with remaining sauce. Cover with foil and place in a 400 degree oven for 30 minutes. Remove and uncover and top with remaining shredded cheese. Return to the oven for 15 more minutes. Let sit 5 minutes before serving.
