White Chicken Lasagna



White Chicken Lasagna

1 lb boneless, skinless chicken breast
2 cups cottage cheese
4 oz fresh spinach leaves, lightly chopped
1 egg
1 tsp minced garlic
1 lb roasted chicken deli slices
4 oz Tomato Basil Feta cheese , crumbled
8 oz shredded Mozzarella cheese

Poach chicken breast in water until tender. Cool and shred. Prepare one large casserole dish or two smaller ones with cooking spray.
In a medium bowl, combine cottage cheese, egg, chopped spinach and garlic. Line the base of the dish(es) with a single layer of deli chicken slices. Top those with a thin layer of the cottage cheese mixture. Top that with some shredded chicken. Add a sprinkling of the feta cheese. Add another layer of deli slices. Top that with a sprinkle of Mozzarella. Alternate the remaining ingredients, varying the layers according to how many slices of chicken you have. Reserve a sprinkling of both cheeses for the top of the casserole. Bake at 350 degrees for 30-35 minutes. Let cool 5 minutes before slicing.

Serves 8 generous portions:

Creamy Soup Base



Make sure you SHARE to SAVE this one!! This will save you tons of money and cut down on your sodium too!

Below are all the recipes to make your own FAVORITE Cream soups!

NEVER BUY CANNED SOUP AGAIN!!!

For soup making: Add 1/3 c. dry soup mix with 1 1/4 c. water and stir with whisk in a saucepan. Keep it stirred until it is smooth and creamy. Bring to a boil and continue stirring for approx. 2-3 min or until it thickens to your liking. Set aside and allow to cool. Put in sealed container and place in refrigerator. Should keep at least 1 week. This is equivalent to 1 can of store bought soup.

To make cream of chicken soup: Use 1/3 c. dry mix with 1 1/4 c. chicken broth instead of the water. Fresh chicken broth is always best when available.

To make cream of mushroom soup: Use 1/3 c. dry mix with 1 1/4 c. vegetable broth. Sautee 1/3 c. chopped mushrooms until tender. Add to soup as it is thickening. This is equivalent to 1 can of store bought soup.

To make cream of celery soup: Use 1/3 c. dry mix with 1 1/4 c. vegetable broth or water. Chop 1/3 c. celery, with ribs removed, and cook until softened. Add to the soup as it is thickening. This is equivalent to 1 can of store bought soup.

To make cream of potato soup: Use 1/3 c. dry mix with 1 1/4 c. vegetable broth or water. Add 1/3 c. diced and pre-boiled potatoes to the soup as it is thickening. You can also smash the potatoes up before adding to make it even creamier. This is equivalent to 1 can of store bought soup.

Crock-Pot Cheesy Chicken Spaghetti



Crock-Pot Cheesy Chicken Spaghetti

If you love creamy, spicy pasta dishes, this Crock-Pot version of my Cheesy Chicken Spaghetti will blow your mind. Cook the sauce for a few hours and then toss with pasta when you're ready to serve!

yield: 4 SERVINGS prep time: 10 MINUTES cook time: 4 HOURS 30 MINUTES total time: 4 HOURS 40 MINUTES

INGREDIENTS:
1/2 cup diced yellow onion
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 small can mild diced green chiles
1/2 teaspoon cumin
1/2 teaspoon garlic powder
salt & pepper, to taste
2 chicken breasts {about 1 lb.}
1 can cream of mushroom soup

3/4-1 lb. cooked spaghetti

3 cups grated cheddar cheese

a few splashes chicken stock {optional}

DIRECTIONS:
Place onion, bell peppers, green chiles, cumin, garlic powder, salt, pepper, chicken, mushroom soup and 1 cup of grated cheese together in a crock-pot. Stir to mix ingredients. Cook on high for 3-4 hours or until chicken is fully cooked. Remove chicken breasts, shred and return to crock-pot. Pour in cooked spaghetti and remaining cheese. Toss to coat pasta in sauce and melt cheese, adding in a few splashes of chicken stock where necessary to get sauce consistency you want. Cook another 20-30 minutes on low and serve.

**Freezer directions: Place onion, bell peppers, green chiles, cumin, garlic powder, salt, pepper, chicken, mushroom soup and 1 cup of grated cheese together in a large plastic freezer bag. Seal and freeze. To cook, defrost in fridge, place in crockpot and cook according to directions listed above.

Meatball Parmigiana



✿ Hugs & Cookies Meatball ✿ WORLD’S MOST AMAZING MEATBALL PARM!!!!!!! This dinner was AMAZING!!!! To make it gluten free, I used Scharr brand bread crumbs but you can certainly use regular bread crumbs if you’re not gluten free. Use your favorite sauce-homemade or jarred. I used Market Pantry brand from Target and was shocked by how delish it was!!!!

Ingredients:
1 1/2 pounds meatloaf mix (beef, pork, veal combo)
4 cloves garlic-roughly chopped, not minced
a handful of chopped parsley
1 cup bread crumbs (I used Scharr brand)
1 cup shredded Parmesan cheese (not grated)
2 eggs
salt to taste
Sauce of your choice (approx two 24-oz jars)
Mozzarella cheese to top it off with!

Best Meatloaf



This meatloaf is so moist and has TONS of flavor!

Best Meatloaf

Ingredients:

2.5 lbs of Extra lean Ground beef (may use Turkey also)...
1/2 medium sweet onion chopped
3/4 cup of Chopped Scallions (Green Onions)
1 heaping tsp of minced Garlic
1 tsp Salt
1 1/2 tsp Black Pepper
4 slices of Natures way Whole Wheat bread (no High fructose corn syrup) toasted and processed.
( you may use bread crumbs of your choice)
2 Eggs
4 Tbs Sour Cream
2 Tbs Worcestershire Sauce
1 can (15oz) Tomato Sauce (divided)
3 Tbs Reduced Sugar Ketchup ( I used Heinz)

Directions:
Pre heat oven to 400°
Combine together all ingredients **(leaving a 1/2 of can of tomato sauce and 3Tbs Ketchup to the side)** and Bake uncovered for 50 Minutes .
While that is baking mix together 1/2 can of sauce with 3 Tbs Ketchup.
At 50 minutes cooking time remove from oven and pour sauce mix over top of meatloaf and cook for 10-15 minutes more!
ENJOY!!!!!

EASY BREAKFAST CASSEROLE

INGREDIENTS:
1 pound Italian sausage (hot, but mild or sweet also work)
1 medium white onion, peeled and diced
3 cloves garlic, minced
1 red bell pepper, cored and diced
6 eggs
1/3 cup unsweetened almond milk
1 (20 ounce) bag frozen hash browns, thawed
2 cups shredded cheese
1/4 teaspoon freshly-ground black pepper
thinly sliced green onions

DIRECTIONS:
Preheat oven to 375F.

Add the ground sausage to a medium pan. Cook over medium-high heat until browned. Remove sausage with a slotted spoon and transfer to a large mixing bowl. Save 1 Tbs. of sausage grease in the pan and toss the rest. Add the onion and red pepper to the pan, and saute for 5 minutes until cooked. Add the garlic and saute for an additional 2 minutes. Pour the vegetable mixture into the mixing bowl with the sausage. Add the hash browns and 1 1/2 cups of the cheese to the bowl. Stir well.

In another bowl, whisk the eggs, milk and black pepper. Add to the hashbrown mixture, and stir. Pour the mix into a baking dish, and top with the remaining 1/2 cup of shredded cheese. Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an extra 10-15 minutes..until the top of the potatoes begin to lightly brown. Remove and let it rest for 5 minutes. Sprinkle with green onions if you like and enjoy!

Creamy Mozzarella Chicken Bake:

4-6 Boneless skinless Chicken Breasts
6-8 Slices Mozzarella Cheese
1/2 c Mayonnaise
1/2 c Sr Cream
3/4 c Grated Parmesan Cheese
1/2 tsp salt ( to taste)
1/2 tsp pepper
1 tsp crushed garlic or ( 1 tsp garlic powder )

1. Heat over to 375 degrees.
2. Place Chicken in greased 9x13 pan.
3. Layer Mozzarella cheese on top of chicken breasts.
4. Mix together mayo, sr cream, 1/2 c of shredded Parmesan cheese and seasonings.
5. Spread on top of the Mozzarella cheese over Chicken breasts.
6. Sprinkle with 1/4 of shredded Parmesan Cheese.
7. Bake 1 hour.

BROCCOLI CAULIFLOWER SALAD

 This salad is AMAZING! The creamy dressing is beyond delicious and go perfectly with the crisp broccoli and cauliflower! This is one recipe you are going to want to try out!

INGREDIENTS
2 cups cauliflower, cut in bite size pieces
2 cups broccoli, cut in bite size
½ cups celery
1 cup frozen peas
1½ cups cooked and chopped bacon
Dressing
2 cups mayonaise
¼ cup sugar
¼ cup Parmesan cheese
2 teaspoons vinegar
¼ teaspoons salt
¼ cup chopped onion
INSTRUCTIONS
In a large bowl toss cauliflower, broccoli, celery, peas, and bacon.
In a medium bowl combine mayo, sugar, Parmesan cheese, vinegar, salt and onion. Mix well. Pour over salad and toss to mix well and serve.

Fresh Tomato Salsa



Here is a simple and delicious salsa recipe. It is almost identical to the guacamole recipe I use, only diced tomato instead of avocado. This can be used as a dip, a condiment, an addition to eggs, wraps, sandwiches...etc. There are lots of applications and it's so fresh and vibrant you definitely won't be feeling guilty after eating it! Here it is:

Fresh Tomato Salsa

6 organic tomatoes (medium ...dice)
1/4 medium red onion (fine dice)
1/2 bunch of green onion (sliced)
1/2 bunch of chopped cilantro
2-3 Tbsp cumin
1 lime (juice)
Salt and Pepper to taste
2 jalapenos seeded and diced (optional)
Did you know? Lycopene (the pigment that makes red fruits/vegetables red) is a free radical fighting antioxidant. That basically means it goes around and fights things in the body that promote disease. Studies are also showing it to be a preventative measure in many forms of cancer. One doctor I spoke with (he researches this stuff) suggested eating a half a can of tomato paste per day. Why not? haha. You could also just eat a lot of this salsa!

Low Carb Walnut Cookies



Low Carb Walnut cookies

2 ounces cream cheese, softened
2 tablespoons butter, softened
1/2 cup sugar substitute (called for 1 cup but I reduced)
1 large egg
1 teaspoon vanilla extract
1 cup almond flour
1⁄2 teaspoon baking soda
1⁄4 teaspoon salt
2 ounces chopped walnuts

1. Preheat oven to 375 degrees and line a sheet pan with parchment paper.

2. Using a stand or hand held mixer, add the cream cheese, butter, sugar substitute, egg and vanilla to the mixing bowl and beat on high until creamy and fluffy.

3. Add in the remaining ingredients and mix on medium until well blended.

4. Using a teaspoon or 1 ounce ice cream scoop, drop 16 evenly spaced cookies on the lined pan and bake for about 8-10 minutes. Let cool 10-15 minutes before serving.

Note: Press the cookies down into the parchment paper a little before baking for a crispier cookie.

Cold Oven Pound Cake



Cold Oven Pound Cake
This recipe is over 100 years old.
DO NOT PREHEAT YOUR OVEN.
1 cup oil
3 cups sugar
3 cups flour
1 cup buttermilk
6 eggs – add one at a time
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon lemon extract or to taste
Mix your dry ingredients together, add oil and buttermilk. Then add eggs, one at a time. Last add your extracts. This recipe makes a thin batter and should not be over mixed. Only mix by hand. Pour into a cold, greased and floured bundt pan. Cook 300 degrees for 1 and 1/2 hours. Cool in pan for exactly 10 minutes.

YIELD: Makes 16-20 wedges

INGREDIENTS:

2 apples, sliced into wedges

1/4 cup peanut butter

1/4 cup granola, your favorite

1/4 teaspoon ground cinnamon, for sprinkling

Semisweet chocolate chips, optional*

DIRECTIONS:

Coat tops of apple wedges in peanut butter and sprinkle with granola and cinnamon.

Melt chocolate chips in the microwave, stirring in 30 second increments until melted. Be careful not to overheat.

Drizzle wedges with melted chocolate, set on a large platter and serve.

TIPS

To substitute the chocolate drizzle, you can sprinkle mini chocolate chips on top of the wedges. Or, leave the chocolate out altogether. They’re still delicious!

If not eating immediately, brush each side of apple wedges with a little lemon juice to avoid browning.

Unbelievable. These little “pancakes” can be made with just two ingredients, but I’ve added some baking powder and whey protein in this recipe. They’re a super quick and healthy breakfast or snack. They come out with almost a crêpe texture. You can add vanilla extract, cinnamon, cardamom — whatever you want! You can also ditch the protein if you’re not looking to supplement yours. Each pancake is just around 30 calories!

Serves: 9-10 3-inch pancakes
Ingredients
1 large banana (it should yield about ⅓ – ½ cup, mashed)
2 eggs
⅛ teaspoon baking powder (optional but recommended)
2 tablespoons vanilla whey protein powder (optional; you can also add a touch of vanilla extract instead)
Instructions
Place a medium skillet over medium heat on the stove. Let it heat up while you prepare the pancakes. It’s ready when water dropped into the pan sizzles.
To prepare the pancakes, mash the banana well with a couple of forks. Add the eggs, baking powder, and protein powder (if using) and whisk until well combined. Spray the skillet with nonstick cooking spray before adding in 2-3 tablespoons of the pancake mixture (I used a sprayed metal ring to make mine so round — if you don’t want to bother, they’ll just be a little wonky shaped.)
Let the pancakes cook for 25-30 seconds before flipping and letting the other side cook for the same amount of time. Remove to a plate and serve with nut butter, sugar-free syrup, butter, fruit, or whatever you’d like!

Low Carb Snicker Doodle Cookies



Low Carb Snicker Doodle Cookies

Cookies:
 1/2 cup unsalted butter
 2 eggs
 2 1/2 cups bob's red mill almond meal/flour
 1 1/2 cup stevia in the raw
 1 tsp cream of tartar
 1 tsp vanilla extract
 1 tsp baking soda
 1 pinch salt

Coating:
 2 tbsp stevia in the raw
 2 tsp ground cinnamon

Instructions:
 1. Melt the butter and mix in the stevia and eggs till smooth. Then combine remaining ingredients until you get a dough like texture.
 2. Chill the dough in the fridge for about 15 minutes. After 10 minutes, start your stove to pre-heat it to 350.
 3. Mix coating ingredients in a small dish. Shape the dough into rounded spoonfuls and roll it in the coating.
 4. Place on greased baking sheet and flatten a bit with a fork. Bake for about 10 minutes or until set. Cool and Enjoy!!

*This made 33 cookies.

Tips:
 I didnt flatten the first batch with a fork and they came out almost like little donut holes! So this can make a good breakfast or treat!

 Calories 78, Total Fat 7 g,Total Carbohydrate 2 g, Dietary Fiber 1 g,
 Sugars 0 g, Protein 2 g. Net Carb: 1g per cookie!

Directions
Heat the oven to 350 degrees F. Lightly grease a 13x9x2-inch baking dish. Stir the chicken, soup, sour cream, tomatoes and green chiles, beans and seasoning mix in a large bowl.
Layer half the chicken mixture, 3 cups tortilla chips and half the cheese in the baking dish. Layer with the remaining chicken mixture and tortilla chips. Cover the baking dish.
Bake for 30 minutes. Uncover the baking dish. Sprinkle with the remaining cheese.
Bake, uncovered, for 10 minutes or until hot and bubbling and the cheese is melted. Sprinkle with the chopped tomato, green onion and cilantro before serving, if desired.

So excited. I haven't done a personal update in some time. I have been working my butt off and sticking with working out and with my low carb way of eating and it is paying off.

Cauliflower Patties

1 head cauliflower
2 large eggs
1/2 c cheddar cheese, grated
1/2 c bread crumbs (regular or gluten free)
2 cloves of finely diced garlic
1 finely diced red onion
mixed herbs, salt and pepper to taste

Preheat oven to 180 degrees Celcius or 375 Farenheit

Cut cauliflower into florets & cook in boiling water or microwave until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, bread crumbs, garlic, onion and seasoning to taste.

Grease a baking tray then form the cauliflower mixture into patties about 3 inches across. Bake until golden brown & set, about 15 - 20 minutes.

The negative calorie diet soup recipe is the belief that there are negative calorie foods that take more calories to digest than the actual calorie content of these foods and so creating a negative caloric effect. The extra energy to break down these foods is taken from the stored fat in the body causing weight loss through the negative calorie diet. For example an apple containing 50 calories may call for 100 calories to digest via the negative calorie diet recipe. So an additional 50 calories have been burnt simply by eating that particular food via the negative calorie diet. These calories are taken from the body's fat reserves in the negative calorie diet recipe.

Negative Calorie Soup Recipe 1

1 head green cabbage, cut into 1 inch pieces
1 medium onion, peeled and diced
4 large carrots, peeled and sliced
4 stalks celery, sliced
4 turnips, peeled and cut into cubes
2 zucchini, peeled and cut into cubes
2 cans green beans
32 ounces beef stock or chicken stock, or 16 ounces tomato juice and 16 ounces water

Direction:

Combine all ingredients in a stock pot and bring to a boil. Add water, if needed, to cover all vegetables. Reduce heat to a moderate simmer and cover. Cook about 1 hour, or until all vegetables are tender.

Negative Calorie Soup Recipe 2

6 onions
2 green peppers
2 cans whole or crushed tomatoes
1 head cabbage
1 large bunch celery
2 pkg. dry onion soup mix

Directions:

Cut vegetables into medium size pieces, add soup mix and cover with water. Cook on high for 10 minutes, then lower heat and simmer until vegetables are tender.

Eat as much soup each day as you want. The more you eat the more you lose. (You may add seasoning such as oregano, thyme, old bay or whatever you like. Varying the seasoning varies taste of soup so you don’t tire of it.

Go Irish Brownies



Go Irish Brownies

BROWNIES:
1 c all purpose flour
1/2 tsp baking powder
1/2 tsp salt
4 squares semi-sweet baking chocolate (1 ounce each)
1/2 c butter
1/2 c sugar
1/4 c irish cream liqueur
2 eggs, beaten

IRISH CREAM FROSTING:
1/4 c cream cheese
Local Shopping
Philadelphia Cream Cheese 1/ 3 Less Fat Garden Vegetable
On Sale Now (8.00 oz)
2 Tbsp butter, softened
2 Tbsp irish cream liqueur
3-4 drops green food coloring
1 1/2 c powdered sugar

DRIZZLE:
1 square semi-sweet baking chocolate (1 ounce)
Directions Step-By-Step
1 Preheat oven to 350 degrees. Butter an 8 inch square pan.

In a small bowl stir together flour, baking powder, and salt. Set aside.

Melt chocolate and butter in a microwave safe medium bowl. Watch carefully. Stir to blend. Stir in sugar and liqueur. With a whisk beat in eggs, one at a time. Stir in flour mixture. Spread batter in buttered pan.

Bake for 20-25 minutes. Remove from oven and place pan on a wire rack to cool.
2. Make frosting: In a mixer bowl beat cream cheese and butter until well mixed and smooth. Add liquer and food coloring. Mix well. Gradually mix in powdered sugar.

Prepare drizzle: Melt semi-sweet chocolate.
3. Frost cooled brownies with green frosting and then drizzle with melted chocolate. Score where you want to cut bars (so that chocolate won't just break up when you cut the cooled bars). Refrigerate for at least 1 hour to allow frosting to firm up. Makes 16 brownies.

Cookies

½ cup oat flour
3 scoops NLA Her Whey Vanilla Cupcake Protein Powder
¼ cup honey
2 Tbsp. coconut oil
1 Tbsp. ghee

Filling
½ cup fresh raspberries

Drizzle
½ cup dark chocolate chips
1 Tbsp. coconut oil

 Directions

Preheat oven to 350 degrees F and coat a baking sheet with non-stick cooking spray.
In a large bowl, combine all cookie ingredients and stir until well-combined.
Roll dough into balls, about a tablespoon of dough per cookie. Flatten balls until about ½-inch thick, shaping into nice round cookies.
Use your thumb (or whatever fingers) to press a well into each cookie.
Microwave raspberries for 30 seconds, or until raspberries burst and become syrupy.
Fill each cookie with raspberry “sauce.”
Microwave chocolate chips and coconut oil for 10-15 seconds, stir until smooth and drizzle over cookies.
You’re done. Eat your creations!

Paleo Cacao-Coconut Pudding for Two

Ingredients

1 ripe avocado,
6 Tbsp. coconut milk
2 Tbsp. cacao powder
2 Tbsp. honey
Optional: chopped walnuts, for topping



Directions

Cut open the avocado and remove pit. Cut avocado into large chunks and place in blender.
Add cacao, honey and coconut milk.
Blend mixture, starting on low and then moving to high speed until smooth.
Refrigerate pudding and serve cold. Top with chopped walnuts, if desired.

Cabbage Rolls with Cooking Variation Recipes!

Ingredients:

12 leaves cabbage
1 cup cooked white rice
1 egg, beaten
1/4 cup milk
1/4 cup minced onion
1 pound extra-lean ground beef
1 1/4 teaspoons salt
1 1/4 teaspoons ground black pepper
1 (8 ounce) can tomato sauce
1 tablespoon brown sugar
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce

Directions:

1. Bring a large pot of water to a boil. Boil cabbage leaves 2 minutes; drain.
2. In large bowl, combine 1 cup cooked rice, egg, milk, onion, ground beef, salt, and pepper. Place about 1/4 cup of meat mixture in center of each cabbage leaf, and roll up, tucking in ends. Place rolls in slow cooker.
3. In a small bowl, mix together tomato sauce, brown sugar, lemon juice, and Worcestershire sauce. Pour over cabbage rolls.
4. Cover, and cook on Low 8 to 9 hours.

Ingredients:

2/3 cup water
1/3 cup uncooked white rice
8 cabbage leaves
1 pound lean ground beef
1/4 cup chopped onion
1 egg, slightly beaten
1 teaspoon salt
1/4 teaspoon ground black pepper
1 (10.75 ounce) can condensed tomato soup

Directions:

1. In a medium saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
2. Bring a large, wide saucepan of lightly salted water to a boil. Add cabbage leaves and cook for 2 to 4 minutes or until softened; drain.
3. In a medium mixing bowl, combine the ground beef, 1 cup cooked rice, onion, egg, salt and pepper, along with 2 tablespoons of tomato soup. Mix thoroughly.
4. Divide the beef mixture evenly among the cabbage leaves. Roll and secure them with toothpicks or string.
5. In a large skillet over medium heat, place the cabbage rolls and pour the remaining tomato soup over the top. Cover and bring to a boil. Reduce heat to low and simmer for about 40 minutes, stirring and basting with the liquid often.

Cabbage Rolls - Oven Baked Recipe # 3

Ingredients:

12 cabbage leaves

Filling:
1 pound ground beef
3/4 cup cooked rice
1/2 cup finely chopped onion
1 egg
2 teaspoons salt
1 teaspoon pepper
1/2 cup milk

Sauce:
1 cans (8 ounces ) tomato sauce
1 can (14.5 ounces) diced tomatoes, undrained
3 tablespoons sugar
2 tablespoons vinegar
1/2 cup water
2 tablespoons cornstarch mixed with 1/4 cup cold water

Directions:

Drop cabbage leaves into boiling salted water; cover and cook for 3 minutes. Drain well. For filling, combine ground beef, rice, onion, egg, and salt, pepper, and milk. Mix well and divide into 12 portions. Place a portion into the center of each cabbage leaf. Roll leaf around filling; fasten with toothpick. Place in a baking dish. For sauce, combine tomato sauce, tomatoes, sugar, vinegar, and 1/2 cup of water and pour over cabbage rolls.
Bake covered in a preheated 350° oven 40 to 45 minutes.
Remove rolls and discard toothpicks.
Place pan with juices over medium heat or transfer the juices to a saucepan and place over heat; stir cornstarch and water mixture into the sauce; bring to a boil and cook until thickened.
Recipe for cabbage rolls serves 6
