WOW-- Satira. on  Skinny Fiber - she has now lost 109 pounds!!!!!!

Eggplant Parmesan Bites with Marinara Dipping Sauce

Yield: About 6 servings Prep Time: 50 min Cook Time: 5 min
Ingredients:

2 medium eggplants (about 2 1/2 pounds total)
2 cups Italian-style breadcrumbs (See Kelly's Note)
3/4 cup grated Parmesan cheese
3 large eggs
1 cup all-purpose flour
Vegetable oil, for frying
1 cup homemade or store-bought marinara sauce
Chopped fresh parsley, for garnish

Equipment: Deep-fry thermometer

Directions:

Peel the eggplants and dice them into 1-inch cubes. Place the cubes in a large colander and toss them with 1 1/2 teaspoons salt. Let them drain in the colander over a bowl in the sink for 30 minutes to remove excess moisture.

Combine the breadcrumbs with the Parmesan cheese in a large bowl. In a second bowl, whisk together the eggs with 2 tablespoons water. Place the flour in a third bowl. Bread the eggplant cubes in batches by coating them in the flour, then the eggs and then the cheesy breadcrumbs.

Line a baking sheet with paper towels.

Add three inches of oil to a large, heavy-bottomed pot set over medium heat and attach the deep-fry thermometer. Once the oil reaches 360ºF, add the breaded eggplant in batches, cooking them until they're golden brown on all sides. Using a slotting spoon, transfer the eggplant to the paper towel-lined baking sheet and immediately season them with salt. Repeat the frying process with the remaining eggplant, returning the oil to 360ºF between each batch.

Garnish the eggplant bites with chopped fresh parsley and serve them with marinara sauce for dipping.

Kelly's Note:

I prefer a mix of Italian-style Panko breadcrumbs and very fine Italian-seasoned breadcrumbs, which produces well-breaded eggplant with a crispy crunch.

Large head of romaine 15 oz.
 1 can of black beans, rinsed and drained
 1 large orange bell pepper...
 1 pint cherry tomatoes
 2 cups corn (fresh or frozen, thawed)
 5 green onions
 Optional: avocado

{Dressing}
 1 cup loosely packed cilantro, stems removed and roughly chopped
 1/2 avocado (or 1/2 cup plain vegan yogurt or Greek yogurt)
 2 Tbsp. fresh lime juice (about 1/2 lime), more to taste
 1-2 garlic cloves
 1/4 cup olive oil
 1 1/2 tsp. white wine vinegar
 1/8 tsp. salt

{Instructions}

Making the dressing: puree all ingredients in a food processor/blender until smooth. Taste and adjust seasonings if necessary.

Making the salad: Finely chop romaine, bell pepper, tomatoes, and green onions.Place all ingredients in a large bowl and stir to combine.Toss with desired dressing.

Cowboy "Tot" Casserole



A fun casserole for the whole family...

Cowboy "Tot" Casserole

Serves 12 - Each serving is 5 WW+ points

A hamburger casserole that is great for busy families or quick weeknight meals.
Prep Time - 10 min
Cook Time - 45 min
Total Time - 1 hr

Ingredients
1 package dry onion soup mix
1/2 cup fat-free, low sodium beef stock
1 1/2 pounds extra lean ground beef (90/10)
1 tbsp salt
1 tbsp pepper
2 tbsp garlic powder
1/2 cup fat-free milk
1/2 cup reduced fat sour cream
3 tbsp ketchup
1 tbsp mustard
2 tbsp Worcestershire sauce
2 cups reduced fat shredded cheddar cheese (divided)
30 oz bag of frozen tater tots

Instructions
1.Preheat oven to 350
2.Prepare a large casserole dish (9x13) with nonstick spray
3.In a small bowl combine the onion soup mix and beef stock, whisking until well combined, set aside
4.In a large skillet, over medium heat, combine ground beef, salt, pepper & garlic powder
5.Cook until beef is no longer pink
6.Drain hamburger meat and return to skillet
7.In a medium bowl combine milk, sour cream, ketchup, mustard, Worcestershire sauce & onion soup
8.Pour soup mixture & sprinkle 1 cup of cheese over the hamburger and gently combine
9.Place 1/2 of the tater tots on the bottom of the casserole dish
10.Pour beef mixture over the tater tots
11.Place remaining tater tots on top of the beef and sprinkle remaining cheese over the tots
12.Bake for 30 minutes, or until tots are crispy and browned
13.Let sit for 5 minutes before serving
14.ENJOY!

Here is my final updated pic and my story. I've put this off for awhile now because of me not wanting to post this pic of me from August 2013. This was me at my heaviest. I seriously don't even remember who that woman was! I'm so beyond HAPPY with the Girl on the right! LOL I DID THIS! I've lost 165 lbs! That is like an entire person! So am I done with the weight loss? Yes! I've actually went past my goal which was to be in a 9/10 and am now in a size 5/6. I'm working on maintaining my weight where I'm at! I am so excited for each of you that is on your own journey! Hang on coz I'm tellin' ya it's a trip! YOU CAN DO THIS!!!
I'm Missie, This pic is of me. My final before and after. The pic on the left is me in August of 2013. The one on the right is me now, Jan 2015. Who is that Girl on the left? Does the pain look familiar? Even though I was already heavy this was the beginning of the end for me. One of the worst days of my life was March 7th of 2012. My brother was gone. I was left here to go on and pick up the pieces. Trust me it hasn't been easy! I'm still dealing with issues. I made a promise to my brother Jim before he died. He asked me to get healthy. He made me PROMISE him I'd lose weight and get healthy! Another year went by and I got worse.. Yep! My health went totally down hill. I didn't want to be here. I didn't care! I had never felt so alone in all of my life. When I say I've been through it, I've BEEN THROUGH IT! I buried my Baby Boy and my Mama six weeks apart, a set of twins, then my Daddy. Every time I buried a parent, I lost my babies.. Then my sister skipped out on me in 2008 from an eating disorder. She pretty much starved herself to death. So I buried her and her husband eleven weeks apart. Then my Bubba..Jim. He was my lifeline... I never realized just how much till he was gone. How was I gonna do this without him?! I didn't even want to be here! Fast forward to June of 2013. I had just had a breast cancer scare but the biopsy came back fine. But I wasn't FINE! I was a mess! Stroke level blood pressure, out of control Diabetes, irritable bowel, Fibro, You name it! I was taking two handfuls of meds a day. I hadn't even turned 50 yet. My Doc leveled with me, told me I was gonna die. He said I was mourning myself to death and if I didn't get a grip I'd be dead. Something snapped inside of me..It's like I slowly started waking up. I began to eat healthier and after a 40 lb weight loss on my own I decided to finally give Skinny Fiber a try. My dear friend Vicki was selling this product and I had avoided it for two and half yrs. My weight had came to a standstill so I decided to give Skinny Fiber a try. I've taken it ever since! Now here I am! After taking SF twice a day and basically following a low carb diet I am HEALTHY! ! I am no longer on ANY meds! NOTHING! Everything has been corrected and restored in my body. No more Diabetes, no more stroke level Blood pressure, nothing! And guess what? I turned 51 yrs old in February! This lil Girl decided to take a chance on life and LIVE! I will NEVER go back to that Girl you see on the left. Nope! I'm keepin' my promise to my Bubba Jim! I'm gonna live and I'm gonna' enjoy every minute of this life I have. It's what he wanted and now it's what I want! Of course you know there's so much more that leads up to me being where I was on that day in March of 2012 when my brother passed away... You've been there. I can see it in your eyes. Don't give up! If I can do this I KNOW you can too! I'm here and I'll help you on your journey.. Take that first step... BLT Macaroni Salad



BLT Macaroni Salad

1/2 cup mayonnaise
3 tablespoons chili sauce
2 tablespoons lemon juice
1 teaspoon sugar
3 cups elbow macaroni, cooked
1/2 cup tomato, seeded and chopped
2 tablespoons green onions, chopped
3 cups lettuce, shredded
4 slices cooked bacon, crumbled

Directions:
1. In a large bowl, combine the first four ingredients; mix well.
2. Add the macaroni, tomato and onions; toss to coat.
3. Cover and refrigerate.
4. Just before serving, add lettuce and bacon; toss to coat

This is a repost...you can eat the whole pot with very little carbs and calories. It’s low in fat, high in fiber and protein, and has that wonderful sweet and sour taste that I’ve always adored in stuffed cabbage rolls. UNSTUFFED CABBAGE ROLLS

Ingredients:
1 1/2 to 2 pounds lean ground beef
1 tablespoon extra virgin olive oil
1 large onion, chopped
1 clove garlic, minced
1 small cabbage, chopped
2 cans (14.5 ounces each) low sodium diced tomatoes
1 can (8 ounces) tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

Directions:
In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.
Add the garlic and continue cooking for 1 minute.

Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.
Yield: Serves 6 to 8.

1. Dusting: used dryer sheets can knock the dust off nearly any surface, including furniture, blinds, car interiors, baseboards/molding. Also works for sawdust and drywall compound.

2. Keep bugs away: Tuck some in your picnic basket or under lawn furniture to repel bees from your juicy flesh and encourage them back to the flowers, where they belong. You can also rub a sheet directly on your bare skin to discourage would- be buggers from leaving their mark.

3. Keep your clothes fresh: tuck a few fabric-sheets in your drawers to keep that ‘just-washed’ smell happening for weeks. Throw one in your dirty clothes hamper to prevent any rampant, residual odors from escaping into your bedroom.

4. Scrub your showers: Lightly wet a used dryer sheet, and scrub to remove soap build-up and mineral deposits.

5. Freshen your home: Place (or tape) a dryer sheet on your HVAC vents to scent the air circulating through your home. You can even place one alongside your filter in your central heating unit to distribute the scent. Also works on ceiling fans, and on the back of box/portable fans.

6. Reduce static cling: Pat your self with a sheet to combat static on your clothes, stockings, and even long hair!

Hi im 35 and a mother of 2 beautiful kids. 15 Years ago due to a work injury I got a Disk Prolapse so couldnt do much in the shape of exercise. Baked Spaghetti


Baked Spaghetti

8 ounces thin spaghetti
1 lb ground beef
1 teaspoon minced garlic...
1 (26 ounce) can spaghetti sauce
2 cups finely shredded mild cheddar cheese
1 tablespoon oregano
Preheat oven to 350.
Cook noodles in boiling water; drain.
Meanwhile, brown ground beef and garlic over medium heat; drain.
Combine browned ground beef, spaghetti sauce, and oregano.
Spray a casserole dish with cooking spray.
Place 1/3 of noodles in bottom of dish.
Top with 1/3 of spaghetti sauce mixture, and 1/3 of cheese.
Repeat twice, ending with cheddar cheese.
Bake at 350 for 25-30 minutes.

Pork Chops w/Taters and Stuffing

4 boneless pork chops
3 oz. pork stuffing mix (comes in a 6 oz. box, saving the other half to try later with chicken)
1 large russet potato (washed and sliced into thin rounds)...
1 small onion, sliced thin...
10.5 oz. can cream of mushroom soup
1/4 soup can of water
1/2 tsp. soy sauce
Homemdae house seasoning: (equal parts garlic powder, onion powder and black pepper...store in airtight container)
1 T. olive oil or vegetable oil
1/4 C. shredded cheddar cheese

Lightly spray a 9x13 casserole dish with cooking spray. Place the potatoes in a single layer over the bottom of the dish, top with the onions. Heat oil in a skillet, season the pork chops with some of the house seasoning. Place the chops in the pan and cook to brown on both sides, 1-2 minutes per side. Remove the pork chops and place across the top of the potatoes. Using the same skillet, make the stuffing according to directions (halving the recipe of course). Top each chop with some of the stuffing. In a bowl combine the soup, water and soy sauce. Pour over the entire dish. Cover with foil and bake for 50 minutes at 350 degrees. Remove the foil, sprinkle the cheese across the top and return to the oven for 10 minutes.

Chicken and Bacon Pasta Bake



Chicken and Bacon Pasta Bake

2 cups pasta (dry measure - will be more cooked)
2 lbs chicken (approximately)
1 lb bacon ......
1 onion, diced and lightly sauteed
2 sweet peppers, colour of your choice
2 jars of spaghetti sauce
Lots of cheese for on top - you choose!
This is a great way to use leftover chicken, or a precooked if you are in a rush!
Combine al dente pasta (it will cook more in the oven so don't overcook it), cooked chicken in bite size pieces, crumbled bacon, sweet peppers diced, and spaghetti sauce in a 13 x 9 casserole dish (I mixed it in the pasta pot after draining then put it in the casserole dish). Top with cheese (I used Mozzarella but Sharp Cheddar or a mix with Parmesan or just about any other cheese would also be great!) and bake at 325 F for 45 minutes, until cheese is bubbly and starting to brown.
This is a great basic recipe that is really good as is, or perfect for customizing to what you have or what you like. If you are low carb, use spaghetti squash. Don't have peppers, use peas or asparagus or broccoli - what's on hand. Leaving out the bacon would still be good, and if you are vegetarian use Portobello mushrooms instead of the chicken. Throw in some hot peppers or more herbs to flavour it the way your family likes.
If it won't all fit in the 13 x 9 you can freeze some for later!

Scalloped Corn!! WOW this DEF looks DELICIOUS!!

Ingredients->>

15.25 oz. can whole kernel corn, drained (I used white)...
14.75 oz. can cream style corn (again, I used white)
2 green onions, chopped
2 eggs, beaten
20 Ritz Crackers, crushed (I used the new bacon flavored)
2 T. butter, melted
1 C. shredded sharp cheddar cheese
1/2 tsp. salt
1/2 tsp. pepper
1/4 C. French fried onions, crushed (for topping)

Instructions-->>

In a bowl, combine both cans of corn, the onions and the beaten eggs. Stir in the crackers, butter, cheese, salt and pepper. Pour into a lightly greased 9x13 baking dish. Bake at 350 degrees for 40 minutes. Remove and top with the crushed fried onions. Return to the oven for 5-6 minutes or until onions are lightly browned.

INGREDIENTS
2 lbs skinless, boneless chicken breast (or thighs)
1 bottle or can of your favorite beer
1 tsp salt...
1 tsp garlic powder or 3 cloves of minced
1 tsp. dried oregano
1/2 tsp black pepper
Instructions
Place all ingredients in the crock pot and cook on high for 4-5 hours or low 6-8 hours
Feel free to change out the spices and herbs and use whatever you like!

Bacon Onion Foil Potatoes!!

Ingredients:
2 to 3 sheets of heavy-duty foil...
1 packet onion soup powder
10-12 baby red potatoes, thinly sliced
12 slices of cooked and crumbled bacon
1 cup cheese (optional)
Salt and pepper to taste
3 tablespoons butter
Sour cream for serving (optional)
Directions:
Spray each sheet of foil with cooking spray. Top each piece with equal portions of potatoes, bacon, 1 packet onion soup powder and mix. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely.
Grill for 20 to 30 minutes. Or you can bake it in the oven, at 350° for about 35 minutes or till done. Let stand 10 minutes before serving. Serve in foil, topped with sour cream if desired.

BAYLEE'S CHICKEN BITES WITH A KICK

*This is not a diet food but great to enjoy just a small portion and share the rest with friends.
Ingredients:
2 large boneless skinless chicken breast
5 boneless skinless chicken thighs
Marinade:
1 quart buttermilk
1/2 cup Franks Original Red Hot Sauce
Breading:
3 cups all-purpose flour
1 1/2 Tbsp. garlic powder
1 1/2 Tbsp. Onion Powder
2 Tbsp. Texas Style Steak Seasoning
1 teaspoon black pepper
About 2 cups canola oil
Gravy Dip:
1 2.75 oz pkg. Pioneer Country Gravy Mix (prepared as directed on bag)
4-5 Shakes of Franks Original Red Hot Sauce
Instructions:
Cut the chicken into bite-size pieces. In a large bowl combine the buttermilk, Franks Original Red hot sauce, and chicken. Cover and let marinate in refrigerator for at least 8 hours or up to overnight.(overnight for stronger flavor)
In a glass bowl, whisk together the flour, Garlic powder, onion powder, Texas Style Steak Seasoning mix, and pepper. Remove the chicken from the buttermilk mixture and add to the seasoned flour. Make sure all the chicken pieces are thoroughly coated.
Heat the canola oil (at least 3/4”deep in the pan) in a large skillet to medium heat. Working in batches, fry the chicken until golden brown, about 3 to 4 minutes per side, turning only once. Transfer the cooked chicken to a sheet pan lined with paper towels.
Gravy Dip:
Mix Prepared Gravy Mix with Franks Original Hot Sauce. Pour in serving bowl.
Serve the chicken with the Gravy Dip on the side.

Brown Sugar Sauce & Grilling the Chops
A sweet, tangy sauce with a hint of spice that you will use over and over again.

Prep Time - 5 min
Cook Time - 10 min
Total Time - 15 min
Medium to thick Pork Chops (rinse and pat dry)
Sauce Ingredients
1/2 cup brown sugar
1/2 cup apple juice
3 tbsp vegetable oil
1 tbsp reduced sodium soy sauce
1 tsp pumpkin pie spice
1 tsp chili powder
1 tsp pepper
2 tsp cornstarch
1/2 cup water
For the Sauce
1.In a small saucepan combine brown sugar, apple juice, oil, soy sauce, and spices
2.Bring to a boil
3.In a small bowl combine cornstarch and water
4.Whisk into boiling brown sugar mixture
5.Reduce heat and let thicken for 5-10 minutes
To Grill
1.Prepare grill
2.Cook the chops (or whatever meat you prefer) as you would normally, for the pork chops we cooked them for about 8-10 minutes turning them only once
3.Brush meat with the sauce just before removing and then serve remaining sauce on the side
Notes
1 Tbsp of the sauce is 1 WW+ points

Hawaiian Chicken Chili -- Yummy!!!!!

Ingredients
1 (20 ounce) cans chunk pineapple, drained and juice reserved
8 -12 boneless skinless chicken breasts, cut into bite sized pieces
2 tablespoons butter
2 garlic cloves, diced
1 large onion, diced
1 large bell pepper, diced
2 (15 ounce) cans kidney beans
1 (28 ounce) cans chopped tomatoes, undrained
1 (24 ounce) jars pace mild-medium picante sauce ( or your favorite salsa- I use my homemade stuff)
1 (6 ounce) cans tomato paste
3 tablespoons chili powder
2 tablespoons cumin
1 1/2 teaspoons salt

Directions
In large pot or dutch oven, melt butter and sauté chicken* until almost cooked through.
Add garlic, onion and bell pepper and cook for 2 more minutes.
Add reserved pineapple juice and all other ingredients- EXCEPT- for the pineapple chunks.
Bring to a boil, then reduce heat and simmer for 45 minutes, stirring occasionally.
Remove from heat, stir in pineapple and serve immediately- OR, WHAT I LIKE TO DO- remove from heat allow to cool, cover and refrigerate over night.

Next day, reheat on stove top, stir in pineapple and serve.
*Note about chicken: recipe originally calls for 12 chicken breasts.
I found this a bit excessive and so tweaked the measurement.
I find 7-8 breasts works for me.
I guess it depends on how well endowed your chickens were.
Judge accordingly.

Diabetic Friendly Raspberry Peach Delight

1 -prepared 8-in angel food cake cut into 1-in cubes (SUGAR FREE)
1-.3 oz pkg.. of sugar-free raspberry Jell-O
1 cup boiling water...
1 cup cold water
1-16oz can light peach slices
3 cups fat free milk
1-1.5oz pkg. sugar-free vanilla pudding
1-8oz. carton of light or fat free Cool Whip (I use the free)
Arrange cake cubes on the bottom of a 9x13 pan.
Dissolve jello in boiling water then stir in cold water.
Pour Jell-O over cake.
Arrange peaches over Jell-O.
Mix together milk and pudding; spread over peaches.
Top with Cool Whip(FREE).
Refrigerate at least 2 hours before cutting

For those of you following my weight loss journey with Skinny Fiber, it's time to share another update photo. The further I make it in my journey, I am noticing the process seems to be a little slower, but I am perfectly ok with that! I don't like to talk about my weight because lets be real for a minute, it's embarrassing to admit that you have eaten your way to being so unhealthy that you hate looking in the mirror. I am finally ready to admit it. I have not told anyone this so let me just break it to the whole world! I was OVER 200 pounds when I started this journey! At a short person (or concentrated awesomeness as my friends put it) of only 5'1, being over 200# was going to kill me eventually. The first picture is when I started. I believe I took it August of last year some time? I am not positive. I sported oversized pajama pants (size 18-20 were tight but that what I wore) to hide my stomach and a tank top that was too tight (all my shirts were too small at size xl-xxl). The middle photo was taken in April earlier this year, I **think** I was down about 30 lbs in that photo. I can't be positive but that pants were a size 16 and the swimsuit top was still an XL. The last photo was on Saturday (11/22/14) My pants are a size 12 fitting a little on the loose side and the sweater is a small large (more like a medium I would say!) and I am officially down just over 55 pounds! I never thought I would ever make it this far. My new year's resolution was to be healthier, and while I tried not to set a number goal, I think we all do when we are this overweight. I secretly set my goal for 35 pounds. I WAY surpassed that goal! The year isn't even over yet! I have high hopes that by this time next year I will have met my weight goal and be toned and even more comfortable in my body than I already am!

THE VERY BEST SALISBURY STEAK
Ingredients
1 (10 1/2 ounce) cans Campbell's French onion soup
1 1/2 lbs ground beef
1/2 cup dry breadcrumbs
1 egg
1/4 teaspoon salt
1/8 teaspoon ground black pepper, to taste
1 tablespoon all-purpose flour
1/4 cup ketchup
1 -3 teaspoon Worcestershire sauce, to taste
1/2 teaspoon mustard powder
1/4 cup water
Directions
In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper.
Shape into 6 oval patties.
In a large skillet over medium-high heat, brown both sides of patties.
Pour off excess fat.
In a small bowl, blend flour and remaining soup until smooth.
Mix in ketchup, water, Worcestershire sauce and mustard powder.
Pour over meat in skillet.
Cover, and cook for 20 minutes, stirring occasionally.
