90 Day Challenge Complete!!!!

Laurie's Skinny Fiber Journey

I have been horribly overweight all my life. Plagued w/embarrassment, low self-esteem, chronic sinus headaches & debilitating migraines and self-deprecation. In the last 10 years it has become about disability, depression and pain. I've done the diet, lost over 70 lbs 1 time, plateau, frustration, all a vicious cycle. I learned to accep...t the fact I may never lose this weight or get healthy again.

My health took a downswing after a fall in 2003. Major problems w/the knee, rupture of the hamstring, shredded rotator cuff just in that fall was followed by arthritis, further depression, chronic migraines, carpal tunnel, fibromyalgia and more. By 2010 diabetes was added to the list.

March 2014 a FB page @ "Skinny Fiber" intrigued me. Some of the testimonies piqued my interest. I began to investigate. October 2014 I made the decision to accept their "90 day challenge." FF to today, Jan 30, 2015, official figures:

 29.5 INCHES AND 11 lbs.

SO PSYCHED about the inches off and feeling awesome!!!! Already off most of my drugs, my sugar hasn't gone over 100 in over 3 weeks. I've had only 1 migraine since I started on SF when I'm used having several a month. I can't tell you how wonderful it feels to lose the bonds of prescription meds & their side effects. Pants loose, shirts hanging off & longer, such a good feeling. I can't wear the shirt from the original pic anymore as the neck hangs under my bra lol. (The shirt is hanging on the door to the right) I LOVE MY SKINNY FIBER!!!!

Texas Toast Garlic Bread Pizza



Texas Toast Garlic Bread Pizza

Ingredients
6 Slices Texas Toast Style Garlic Bread
6 TBS pizza Sauce
12 TBS Part Skim Shredded Mozzarella
18 Slices Turkey Pepperoni

Instructions
Preheat the oven to 425 degrees. Lay the garlic bread on a baking sheet.
Top 1 TBS of pizza sauce on each slice
Top with 2 TBS of cheese on each slice and any topping of your choice, We used Turkey Pepperoni.
Bake for 8-10 minutes until its browned and cooked to your liking.
Enjoy!

Coca Cola Pot Roast



Coca Cola Pot Roast

Ingredients you'll need:
1 4 lb chuck roast
olive oil
1-2 Tbsp steak seasoning
1/2-1 tsp black pepper
4 clove garlic, minced
1/4 cup Worcestershire sauce
2 1b carrots, peeled and cut on the bias
1 large sweet onion, cut into wedges
1 12 oz can coca cola
1 1.0 oz package herb gravy for beef or brown gravy mix
1 tsp Herbes de Provence
2 lb medium Yukon Gold or russet potatoes, halved optional

Directions:
Spray the inside of the slow cooker with cooking spray. Rinse and pat dry the pot roast. Drizzle with olive oil then rub with steak seasoning, black pepper and minced garlic on all sides Tip: Adjust the amount of seasoning to your taste Center in the slow cooker.

Arrange the carrots and onion wedges around the roast, placing a few onion wedges on top. Drizzle the Worcestershire sauce over the roast.

Mix together the coca cola, brown gravy mix and Herbes de Provence until dissolved. Pour over the roast and vegetables. If adding potatoes, arrange the potato halves on top. If serving with mashed potatoes, omit. Season the vegetables with a light sprinkle of steak seasoning or seasoned salt and black pepper to your taste.

Cook on low for 8-10 hours. To make the gravy, use a slotted spoon to remove the roast and vegetables from the slow cooker to a platter. Cover and keep warm. Pour the drippings into a saucepan, skimming any excess fat from the top. Thicken with cornstarch or a flour slurry to make the gravy, if desired. Yield: 8 -10 servings

Chicken Broccoli & Cheese Casserole



Chicken Broccoli & Cheese Casserole Only 174 Calories per Serving!

Ingredients:

1 1/2 pounds of chicken (tenderloins are easiest)
a box or bag of stove top stuffing (i usually have half the stuffing left for the next time i cook this)
1 can of cream of chicken soup
1 can of cream of mushroom soup
~(you can use any kind of soup
as long as you use two cans)
1 bag, or two bundles, fresh or frozen broccoli
1 cups of cheese ( or more if you love cheese)
2tbs. real butter
S&P to taste

Directions:

boil your chicken til done.....cool... then.. shred or cut into pieces
while you are doing that , steam or boil you broccoli til tender
Mix both cans of soup with your chicken and add S&P to taste

next
melt your butter
layer stuffing on the bottom of a 9x13 square or round(whatever ya got)
pour half the butter over the stuffing and mix til moist (flatten out once mixed)

Layer chicken on stuffing and broccoli and cheese
( I usually get two layers of each..
Top with the remaining stuffing and butter mixture

Bake in a 350 degree oven for 25-30 mins or until golden brown

ITALIAN RIGATONI BAKE

Ingredients
16 oz. Lean Ground Beef
16oz. box Rigatoni Shells
24 oz. Jar Ragu Six Cheese Sauce
14.5 oz. can Red Gold Diced Tomatoes (w/basil,garlic,oregano)
1 sm. Onion
½ small can Tomato Sauce
16 oz. Shredded Mozzarella Cheese
Garlic Powder, Salt & Pepper to flavor

Directions:
Preheat your oven to 350 degrees.
Brown your ground beef in a skillet over medium heat. Cut your onion in and put in to cook with beef. Add your seasonings to beef. When beef is browned if you used a cheaper beef you will need to drain the grease. Add your can of Diced Tomatoes and tomato sauce into beef mix and simmer until heated thoroughly.
Cook the Rigatoni as directed on the box. Drain and pour back in your pot then add your beef mix. Add the Jar of Ragu and stir well. Layer into a 9 x 13 baking pan
putting layer of Rigatoni beef mix then shredded mozzarella cheese then do again ending with the cheese on top.
Place in the preheated oven and bake 15 minutes until cheese is melted thoroughly.

Make you a salad and garlic toast and you have a Delicious Meal ready!

Easy Mexican Casserole



Easy Mexican Casserole

1 pound lean ground beef
1 can Ranch Style beans
1 10-12 ounce bag tortilla chips, crushed
1 can Ro-tel tomatoes
1 small onion, chopped
2 cups shredded cheddar cheese, divided
1 package taco seasoning
1 can cream of chicken soup
1/2 cup water
sour cream and salsa for serving

Preheat oven to 325 degrees.
In a large skillet, brown meat and drain off fat.
Stir in beans, tomatoes, onion, taco seasoning, soup and water.
Simmer over medium-low heat until everything is well combined and heated through.

Grease a 9×13 casserole dish.
Put down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese.
Repeat layers.
Cover with foil and bake for 20-30 minutes, or until bubbly.

Let sit for 5-10 minutes before serving.
Top with sour cream and salsa.

Honey Roasted Potatoes!



Honey Roasted Potatoes!

You say Potato... I say... AWESOME!
Potatoes (cut into cubes), Onions, Butter, Honey, and any other spice you think is nice.
In a bowl - Melted butter, honey, and spices (I used dry mustard and cayenne) Toss in the chopped onions and potatoes. Then bake at 375 for 40 minutes - make sure you stir em' a couple times. Great way to punch up the Potato!!

Chicken Tetrazzini



This one comes from my friend, another Skinny Fiber Distributor, Joanne. I guarantee you it will be on my table within the week!

Chicken Tetrazzini   Made by yours truly

Ingredients
1 pkg bow tie pasta (one pound box)
3 Cups of cubed chicken
1 and a half cups of cheddar cheese
1 23 ounce can of Cream of Mushroom Soup
1 small onion chopped
2 cans of 4 ounce mushrooms, drained
1/3 cup of skim milk
1 cup of to your taste of frozen green peas

Heat oven to 350    Bake for 25 min.

Directions:  Cook pasta according to package, drain,
In a large bowl add all ingredients, stir it together well
and spoon into a greased 2 and half quart casserole dish,  sprinkle with cheese if desired.

Cheesy Meatball Cups

Makes 16
Estimated prep time: 10 minutes
Start to Finish: 30 minutes
Ingredients

2 (8 ounce) cans crescent dough
flour for dusting
5 ounces Cacique Queso Quesadilla Jalapeño, shredded
16 frozen meatballs
<1/2 cup garlic spaghetti sauce/span>
1 tablespoon fresh parsley, finely chopped

Directions

Preheat oven to 350° F.
Prepare two muffin tins with (16 molds total) with non-stick cooking spray.
Extend dough on a lightly floured surface. Pull apart dough triangles and press each inside a muffin mold. Covering the bottom of mold and pressing up the sides.
Sprinkle each dough cup with 1 teaspoon shredded cheese. Place a meatball on top of cheese, lightly pressing into the dough.
Bake for 10 minutes. Remove from oven and top with 1 teaspoon of sauce and 1 teaspoon shredded cheese. Place back in the oven and bake for 10 minutes more or until dough is golden brown and the cheese bubbles.
Serve with a sprinkle of fresh parsley.

Cornbread Topped Sloppy Joe Casserole

Ingredients

1lb lean (at least 80%) ground beef
1 medium onion, chopped (1/2 cup)
1 can (15 oz) tomato sauce
1 tablespoon packed brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon yellow mustard
1 pouch (6.5 oz) Betty Crocker™ golden corn muffin and bread mix
1/3cup milk
2 tablespoons vegetable oil
1 egg
1 cup shredded Cheddar cheese (4 oz)

Directions
1. Heat oven to 350°F. In 10-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until brown; drain. Stir in tomato sauce, brown sugar, Worcestershire sauce and mustard. Cook 2 to 3 minutes, stirring frequently, until boiling; keep warm.
2. In small bowl, stir corn bread mix, milk, oil and egg just until moistened (batter will be lumpy).
3. Spoon hot beef mixture into 8-inch square (2-quart) glass baking dish. Sprinkle with 3/4 cup of the cheese. Spoon corn bread batter evenly over top.
4. Bake 25 to 35 minutes or until toothpick inserted in center of topping comes out clean. Sprinkle remaining 1/4 cup cheese over hot casserole.
**Expert Tips**
Make sure the Sloppy Joe mixture is piping hot when you spoon the batter on top, so that the corn bread bakes all the way through.
Deli potato salad or chips with carrot and celery sticks are perfect partners with this Sloppy Joe taste-alike casserole.

Most Delicious Garlic Cheese Bread

1 loaf French bread, thickly sliced or halved lengthwise
olive oil
6 cloves garlic, minced
3/4 cup mayonnaise
1 cup grated parmesan cheese
1/8 teaspoon salt (optional)
1/2 teaspoon dried parsley flakes, for garnish (optional)

Directions:

1 Slice or halve the bread and brush one side of slices, or cut side of halves, with olive oil.
2 Place the bread under the broiler until it starts to look toasted.
3 Remove.
4 Mix the garlic, mayonnaise, Parmesan, and salt together.
5 Spread over the bread.
6 Place the bread back under the broiler until the tops are nice and bubbly and beginning to brown.
7 Garnish with parsley flakes (or not).

PIZZA EGG MUFFINS

12 eggs
1/2 chopped mixed bell peppers
40 slices of pepperoni cut into pieces
1/2 tsp of Italian seasoning
2 crushed garlic cloves
salt and pepper to taste
slice of American cheese to top muffin

Whip the eggs up with the garlic, salt, pepper, italian seasoning. Mix in the bell peppers and pepperoni. Pour into either silicone muffin bakeware or greased tin muffin pan. Cook for 10 mins at 375. Place cheese on each muffin and then cook for an additional 15 minutes. Enjoy!!

Cheesy au Gratin Potato Cupcakes

Ingredients

1box (6.2 oz) Betty Crocker™ Ultimate au gratin potatoes
1/4cup Old El Paso™ Thick 'n Chunky salsa
2eggs, beaten
3/4cup Yoplait® Greek 100 plain yogurt (from 2-lb container)
Sliced green onions, if desired

Directions
1.Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
2.Make potatoes as directed on box except omit butter and milk. Stir in salsa and eggs. Divide mixture evenly among muffin cups, about 1/3 cup each.
3.Bake 25 to 30 minutes or until tops are golden brown. Cool 5 minutes; carefully remove from muffin cups. Top cupcakes with yogurt; sprinkle with onions.

Ingredients:

1 (15 ounce) can seasoned black-eyed peas, rinsed and drained well
1 (15 ounce) can seasoned or plain black beans, rinsed and drained well
3/4 cup frozen sweet corn, thawed
3 green onions, chopped
1/2 cup chopped green bell pepper
2 or 3 tomatoes, diced
10 jarred jalapeno pepper slices, diced (mild or hot depending on preference)
1/3 cup cilantro, chopped
1 ripe avocado, chopped
Tortilla chips
Dressing:
1 tablespoon olive oil
1 tablespoon white wine vinegar
1/2 lime, juiced
1/2 teaspoon Dijon mustard
Salt and pepper to taste
Learn Basic Steps for Safe Cooking

Instructions:

Combine black eyed peas, beans, corn, green onion, bell pepper, tomatoes, jalapenos, and cilantro in a medium bowl. In a small bowl whisk together the olive oil, vinegar, lime juice, Dijon mustard, and salt and pepper. Pour over bean mixture. Cover and refrigerate until ready to serve.

Just before serving, add avocado and gently stir to combine. Serve with tortilla chips.

Buffalo Chicken Cheese Balls With Blue Cheese Dip

Ingredients:

Yield:
15-20

1 store-bought rotisserie-cooked chicken
1/4 cup hot sauce (recommended Frank's Red Hot)
1 teaspoon ground black pepper
1 3/4 cups sharp cheddar cheese, grated
1/2 cup thinly sliced green onion, green tops as well
1 cup all-purpose flour
3 eggs, lightly beaten
2 cups panko breadcrumbs
vegetable oil, for frying

For the dip.......
1 1/2 cups mayonnaise
1/2 cup packed blue cheese, crumbled
1/2 teaspoon hot sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/2 lemon, juiced
1 teaspoon minced garlic
Directions:

1.Have oil heated to 350 degrees F.
2.Pick the meat from the chicken and discard the skin, then dice.Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and green onions, and toss to combine. Roll the chicken into 2-ounce balls, about the size of a golf ball.
3.Place the flour, eggs, and Panko crumbs in 3 separate bowls. Roll each ball in the flour, then the egg and then the bread crumbs. Set aside.
4.When the oil is hot fry the chicken balls in batches. Cook for about 2 minutes per batch. Drain on paper towels.

5.To make the dip, combine all ingredients in a large bowl and adjust the seasoning if necessary. Serve the chicken alongside the dipping sauce.

Mexican Chili



Mexican Chili

1 lb. ground beef
1 med. onion, chopped
1 jalapeno, seeded and diced
1 pkg. taco seasoning
1 tsp. chili powder
14.5 oz. can petite diced tomatoes, undrained
4 oz. chopped green chilies
6 oz. tomato paste
1 1/4 C. beef broth
15 oz. can chili beans
15.5 oz. can dark red kidney beans
1 C. whole kernel corn
1/4 tsp. salt
1/2 tsp. black pepper
shredded queso cheese or cheese of your choice for serving

In a dutch oven, brown the ground beef and drain off the grease.  Add in the onion and jalapeno and cook for 5 minutes.  Add the taco seasoning and chili powder, stir to combine.  Add the diced tomatoes, green chilies, tomato paste and beef broth.  Stir well.  Add the remaining ingredients, stir and cover.  Cook over med. low heat for 1 hour, stirring occasionally.  Serve with a little cheese on top.

Jalapeno Corn Muffins (Makes 6 muffins)

1 C. self rising cornmeal
1/2 C. self rising flour
4 T. butter, melted
1 large egg
3/4 C. milk
1/4 C. whole kernel corn
1 green onion, chopped
1 jalapeno, seeded and diced
1/2 C. shredded queso cheese or Colby jack cheese

Whisk together the cornmeal and flour.  Add in all remaining ingredients and stir well to combine.  Lightly spray a muffin tin with cooking spray, completely fill each cup with the mixture.  Bake at 425 degrees for 12-15 minutes, until lightly golden brown on top and feels firm to the touch.

Broccoli Casserole



Everybody loves a casserole and this one looks extra good from "Janet's Appalachian Kitchen"! Thanks, Janet!!

Broccoli Casserole

10 oz. frozen broccoli cuts, thawed and at room temp.
2 T. butter
1 small onion, chopped
1 stalk celery, diced
1 carrot, peeled and grated
10.5 oz. can cream of mushroom soup
1/4 C. milk
1 C. cooked rice (I used a boil in bag)
3 T. sour cream
1 3/4 C. shredded extra sharp cheddar cheese
1/2 tsp. black pepper
Topping:  15 buttery crackers, crushed (like ritz) plus 1 T. butter, melted

Melt 2 T. butter in a small pan and add in the onion, celery and carrot.  Cook for 5 minutes.  In a large bowl add in the broccoli, onion mixture, soup, milk, rice, sour cream, cheese and pepper.  Mix well and pour into a 2.5 quart buttered casserole dish.  Bake in a 350 degree oven for 30 minutes.  Meanwhile, combine the melted butter with the crushed crackers.  After 30 minutes of baking, remove and top with the cracker mixture and return to the oven for an additional 5-7 minutes or until lightly browned.

Buffalo Chicken Pizza!

Ingredients:

Servings:4

1 pizza dough (12 inch)
1/2 lb chicken tenders, grilled
4 tablespoons butter, melted
1/4 cup hot sauce
1/3 cup ranch dressing
2 cups mozzarella cheese, grated

Directions:

1.Preheat the oven to 400.
2.Dice the cooked chicken.
3.Melt the butter, add the hot sauce and toss with the chicken.
4.Spread the ranch dressing on the pizza crust.
5.Top with the chicken.
6.Sprinkle on the cheese and bake for 10-12 minutes (or until the cheese is lightly browned).
7.It is ready to be devoured!

Buffalo Chicken Mac-N-Cheese!!

Ingredients:

Servings:8

1 lb elbow macaroni, uncooked (preferrably the large variety)
24 ounces chicken breasts, cooked and shredded
2 1/2 cups low-fat milk
1/4 cup flour
3 cups sharp cheddar cheese, shredded
8 ounces buffalo wing sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1 cup celery, chopped
hot sauce, to taste (optional)

Directions:

1.Cook the macaroni in a pot of boiling salted water.
2.While the pasta is cooking, whisk the milk and flour together in a bowl, then pour into a saucepan, bringing it to a boil, stirring constantly.
3.Reduce heat to medium and stir in chicken, cheese, onion powder, garlic powder, buffalo sauce and hot sauce (if you're using it). Cook until the cheese melts.
4.When the pasta is done, drain it and stir in the cheese mixture and the celery.

Hot Pizza Dip

Ingredients:

Serves: 10

8 ounces cream cheese, softened
1 teaspoon italian seasoning
1/4 teaspoon garlic powder
8 ounces mozzarella cheese, shredded
4 ounces cheddar cheese, shredded
1/2 cup pizza sauce (I used 1 cup)
1/2 cup green bell pepper, finely chopped
1/2 cup red bell pepper, finely chopped
tortillas or breadstick

Directions:

1.Combine cream cheese and seasonings.
2.Spread in the bottom of a 9 inch pie plate. (I used a round cake pan). Combine cheeses and sprinkle half over the cream cheese layer.
3.Spread sauce over that. Sprinkle remaining cheese on top.Bake 350 for 20 minutes.
4.Serve warm with breadsticks or tortilla chips.
(I used pita triangles).

1 (1 1/4 ounce) package taco seasoning
1 cup sour cream
1 cup guacamole
1 cup salsa
1 cup lettuce
1 cup Mexican blend cheese
4 ounces sliced olives
1 cup tomato

Directions:

1.Layer in this order.
2.16 oz refried beans mixed w/ 1 package taco seasoning.
3.1 c sour cream.
4.1 c guacamole.
5.1 c salsa.
6.1 c lettuce.
7.1 c Mexican cheese.
8.4oz sliced olives.
9.1 c tomatoes.

Fannie Farmer's Baked Mac and Cheese



Fannie Farmer's Baked Mac and Cheese

1 (8 ounce) packages macaroni
4 tablespoons butter
4 tablespoons flour
1 cup milk...
1 cup cream
1/2 teaspoon salt
fresh ground black pepper, to taste
2 cups cheddar cheese, shredded good quality
1/2 cup breadcrumbs, buttered
Directions
Preheat oven to 400°F.
Cook and drain macaroni according to package directions; set aside.
In a large saucepan melt butter.
Add flour mixed with salt and pepper, using a whisk to stir until well blended.
Pour milk and cream in gradually; stirring constantly.
Bring to boiling point and boil 2 minutes (stirring constantly).
Reduce heat and cook (stirring constantly) 10 minutes.
Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts.
Turn off flame.
Add macaroni to the saucepan and toss to coat with the cheese sauce.
Transfer macaroni to a buttered baking dish.
Sprinkle with breadcrumbs.
Bake 20 minutes until the top is golden brown.

2000 Year Old Lotion Recipe

Modern lotions are chock full of all kinds of bad, harmful chemicals that absorb right into our skin. We don’t need to be putting that on our bodies! So let’s take a BIG step back in time, 2000 years, to Greece, where a physician devised this recipe to be used as a cold cream. It’s easy to make, all natural, can be used to remove makeup, and has been shown to reduce wrinkles and other signs of aging. Are you ready to give it a try?
You will need:
1 tablespoon of honey
8 tablespoons of grated beeswax
200 ml of almond oil
About a half cup of rosewater
2 small, cleaned and sanitized jars.
Instructions:
On low heat, melt the beeswax and honey into the oil in a small sauce pan. Once melted, remove from heat and allow to cool slightly.
Pour the rosewater into a small jug and add one drop at a time, whisking well as you add.
When the cream is fully saturated with the rosewater, it will begin to bead and not stir in. At that point stop and allow the cream to cool.
Finally, pour the mixture in your jars and leave to cool completely before adding the lids. The cream will lighten as it cools.

When we say portion control  this is what we mean.   For me I use a smaller plate as well. Helps me do the portion control better and I do not feel jipped, I have a lot of what I want.   I have even have my kids trying it and they are not just "kids" they are teens and as we know teens have a mind set to eat what they want. With portion control they can. They have pizza  just not as much.  They have chips,

Mamas Chicken Pie (serves 4-5)


Oh My Goodness, was I glad to find this one!! I "found" it a while back and somehow, didn't save it. Showed it to the Hubs and it had us both drooling. Later, when we were hungry for chicken, it was no where to be found! You may find that only slightly amusing but now that we are retired and at home full time, we've made it a "thing" to try different recipes so we thought that this one had escaped us for good. Welcome back, you big beautiful dish of Mamas Chicken Pie!!

A Very special recipe from Janet...... Pure comfort food!!!

 Mamas Chicken Pie (serves 4-5)

 1 whole chicken or 3 large boneless breast
 10.5 oz. can cream of chicken soup
 1 1/2 cans chicken broth (use the chicken soup can to measure the broth...I used the water I cooked the chicken in for mine)
 1/4 tsp. salt
 1/2 tsp. black pepper
 2 frozen 9" pie crust, thawed and cut into 1" strips
 2 T. butter

 Place the chicken in a pot and cover with water, bring to a boil and cook thoroughly. Remove the chicken (save the cooking liquid), let cool and then chop up the meat. In a mixing bowl stir together the soup, broth, salt and pepper. Stir in the chicken, combine well.

 Lightly spray a 9x9 baking dish with cooking spray. Spoon half of the chicken mixture into the bottom and spread around. Then cover the mixture with a layer of the pie strips. Dot the strips with 1 T. of butter and place in a 400 degree oven for 25 minutes. Remove and spoon the remaining chicken mixture over the top, then place the remaining pie crust strips. Again, dot with 1 T. butter. Return to the oven for an additional 25 minutes or until golden brown. Remove and let sit 5 minutes before serving.

ITALIAN ROASTED POTATOES



YUMMY!! These are definitely going on my "to try" list and I'd almost bet that they stay in the rotation!

 ITALIAN ROASTED POTATOES

Ingredients:...
8 medium potatoes, washed and cubed
1/2 cup Parmesan cheese, shredded
1/4 cup breadcrumbs
1/4 cup olive oil
1 packet of Wish Bone Robusto Italian Dressing & Seasoning Mix
Instructions:

Preheat oven to 425 F degrees.
Wash and cut the potatoes in cubes. Fill a medium pot with water, add the potatoes to it and cook the potatoes for about 10 minutes just until they are a little tender. Do not cook through.
In a bowl, mix the Parmesan cheese, breadcrumbs and Italian seasoning.
Drain the potatoes and toss with olive oil. Sprinkle Italian mixture over the potatoes and toss, making sure each potato is coated with the mixture.
Bake for 30 minutes or until potatoes are golden.
Enjoy!

SLOW COOKER COCKTAIL SAUSAGES

The easiest, most effortless cocktail sausages you will ever make right in the crockpot. Just be sure to double the batch because these will disappear fast!

INGREDIENTS

1 1/2 cups ketchup
1/4 cup brown sugar, packed
1 tablespoon Worcestershire sauce
1 tablespoon Sriracha, or more, to taste
1 teaspoon Dijon mustard
2 (16-ounce) packages beef hot dogs, quartered
2 tablespoons chopped fresh parsley leaves
Make A Quick & Easy Ranch Spinach Dip

INSTRUCTIONS

In a large bowl, whisk together ketchup, brown sugar, Worcestershire, Sriracha, Dijon and 3 tablespoons water.
Place hot dogs into a slow cooker. Stir in ketchup mixture and gently toss to combine.
Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours.
Serve immediately, garnished with parsley, if desired.

 KEN'S HOMEMADE CHILI

Ingredients:...
3 Lbs Angus ground chuck, or coarse ground chili meat.
3 onions, diced
6 garlic cloves, diced small
1 large bell pepper, diced
1 large can tomato juice
3 cans Diced tomatoes & Green Chilies
4 cans kidney, pinto beans or a combination of both, drained and rinsed
1/4 cup chili powder, or a little more.
3 Tbsp cumin
1 Tbsp cayenne pepper
1 Tbsp Creole seasoning, or season to taste
1 Tbsp paprika
3 Tbsp black pepper
2 Tbsp white pepper
2 tsp oregano
2 Tbsp olive oil
3 Tbsp flour, or corn starch
1 cup of water

Instructions;
Heat oil in a large frying pan. Sauté onions and bell pepper until soft. Add garlic and continue to cook for about 2 min.
Cook ground beef in separate pan, drain off excess fat.
Add tomato juice, diced tomatoes, onions, bell pepper, beans and seasonings. Bring to a slow boil, reduce heat and simmer, stirring occasionally.
Mix flour, or corn starch in water. stir well and add to chili during the last 30 min.
Serve with cornbread or top with tortillas and shredded cheese.

Julienne Potatoes



Julienne Potatoes

2 large potatoes...
3 T. butter
3 T. all purpose flour
1 to 1 1/2 C. milk
1/4 tsp. mustard powder
1/4 tsp. salt
1/4 tsp. paprika
1/4 tsp. pepper
2 C. shredded sharp cheddar cheese

In a pot melt the butter and whisk in the flour over med. high heat. Cook for 30 seconds then add 1 C. of milk, whisking as it begins to thicken. Add in 1/4 - 1/2 C. more milk, until it reaches a "thin gravy" like consistency remove from the heat and stir in 1 1/2 C. cheese and the seasonings.

Wash the potatoes, leaving the skin on, use a mandolin to julienne them or a knife to cut them into thin matchsticks. Place half of the potatoes in the bottom of a 2.5 quart casserole dish. Pour half of the cheese sauce over the potatoes and spread around. Top that with 1/4 C. of the remaining cheese. Place the rest of the potatoes on top of that and then top with remaining sauce. Cover with foil and place in a 400 degree oven for 30 minutes. Remove and uncover and top with remaining shredded cheese. Return to the oven for 15 more minutes. Let sit 5 minutes before serving.
