Low Carb Mug Cake

Low Carb Mug Cake

This mug cake is low carb and very easy to make.
It is good for low carb, those with diabetes or celiac disease

2 tablespoons almond meal
1 tablespoon Truvia sugar substitute (or more to taste)
1 tablespoon unsweetened cocoa powder
1 tablespoon coconut oil or 1 tablespoon canola oil
3 tablespoons cream or 3 tablespoons half-and-half
1 teaspoon vanilla extract
1 egg
Mix everything together in a large mug or small bowl and microwave for at least 90 seconds (I leave mine in about 10 seconds longer - depends on your microwave).
** I garnished mine with fresh whipped cream and a couple of walnut pieces. **
It doesn't look like much when it is done .. but it will fix a chocolate craving!

REMEMBER!! WATCH YOUR PORTIONS! I have found that many do best when they control their portions rather than deny themselves food!
