MINI MEXICAN MEATLOAVES



MINI MEXICAN MEATLOAVES

Preheat oven to 350 F

1 lb lean ground beef
1 egg (beaten)
1/2 cup salsa
1/4 c corn meal
1/4 c milk
1 tsp chili powder (or more)
1 sm can chopped green chilies (4 oz)
1/2 c grated cheddar cheese
Pepper to taste

Mix corn meal and milk and set aside to soak.
Drain chopped green chilies and mix with 1/2 c grated cheese.

Mix ground beef with egg, salsa, soaked corn meal, chili powder and pepper.

Grease muffin/loaf pan lightly. Put about 1/4 c of meat mixture into each "muffin cup".
Spoon approx. 1 tbsp of chili/cheese mixture onto meat. Use the rest of the meat to cover up filling on each one.

Bake at 350 for about 40 mins.

Add a bit more cheese to garnish if desired. Serve with salsa and sour cream.
Makes 8 mini loaves...
