Fresh Tomato Salsa



Here is a simple and delicious salsa recipe. It is almost identical to the guacamole recipe I use, only diced tomato instead of avocado. This can be used as a dip, a condiment, an addition to eggs, wraps, sandwiches...etc. There are lots of applications and it's so fresh and vibrant you definitely won't be feeling guilty after eating it! Here it is:

Fresh Tomato Salsa

6 organic tomatoes (medium ...dice)
1/4 medium red onion (fine dice)
1/2 bunch of green onion (sliced)
1/2 bunch of chopped cilantro
2-3 Tbsp cumin
1 lime (juice)
Salt and Pepper to taste
2 jalapenos seeded and diced (optional)
Did you know? Lycopene (the pigment that makes red fruits/vegetables red) is a free radical fighting antioxidant. That basically means it goes around and fights things in the body that promote disease. Studies are also showing it to be a preventative measure in many forms of cancer. One doctor I spoke with (he researches this stuff) suggested eating a half a can of tomato paste per day. Why not? haha. You could also just eat a lot of this salsa!

REMEMBER!! WATCH YOUR PORTIONS! I have found that many do best when they control their portions rather than deny themselves food!
