Sweet Potato Bites ( Low Carb- Gluten Free)

Sweet Potato Bites ( Low Carb- Gluten Free)

1 pound sweet potatoes (sliced to 1/4 inch thick)
4 Tbsps. olive oil ( more if needed)
salt and pepper
3/4 cup of shredded mild cheddar
6 slices cooked, chopped bacon
1/2 cup sour cream
2 Tbsps. chopped chives
Preheat oven to 400 degrees F. In a large bowl mix together sweet potatoes, olive oil, salt and pepper to taste. Mix until coated well. Place on rimmed baking pan and bake for 25 minutes. Top each slice with cheese , bacon, sour cream, and chives.
