Cowboy "Tot" Casserole

A fun casserole for the whole family...

Cowboy "Tot" Casserole

Serves 12 - Each serving is 5 WW+ points

A hamburger casserole that is great for busy families or quick weeknight meals.
Prep Time - 10 min
Cook Time - 45 min
Total Time - 1 hr

1 package dry onion soup mix
1/2 cup fat-free, low sodium beef stock
1 1/2 pounds extra lean ground beef (90/10)
1 tbsp salt
1 tbsp pepper
2 tbsp garlic powder
1/2 cup fat-free milk
1/2 cup reduced fat sour cream
3 tbsp ketchup
1 tbsp mustard
2 tbsp Worcestershire sauce
2 cups reduced fat shredded cheddar cheese (divided)
30 oz bag of frozen tater tots

1.Preheat oven to 350
2.Prepare a large casserole dish (9x13) with nonstick spray
3.In a small bowl combine the onion soup mix and beef stock, whisking until well combined, set aside
4.In a large skillet, over medium heat, combine ground beef, salt, pepper & garlic powder
5.Cook until beef is no longer pink
6.Drain hamburger meat and return to skillet
7.In a medium bowl combine milk, sour cream, ketchup, mustard, Worcestershire sauce & onion soup
8.Pour soup mixture & sprinkle 1 cup of cheese over the hamburger and gently combine
9.Place 1/2 of the tater tots on the bottom of the casserole dish
10.Pour beef mixture over the tater tots
11.Place remaining tater tots on top of the beef and sprinkle remaining cheese over the tots
12.Bake for 30 minutes, or until tots are crispy and browned
13.Let sit for 5 minutes before serving
