Baked Spinach and Cheese Stuffed Chicken Breast seasoned with Herbs and Lemon Pepper

Ingredients:

2 Chicken Breasts
Chopped Spinach frozen or fresh
Cheese shredded of your choice ( I used Mozzarella )
1 egg
2 tablespoons milk
I/2 cup Breading Crumbs of your choice (I make my own)
1/3 cup Parmesan cheese, grated
1/2 teaspoon paprika
1/2 teaspoon Thyme
1/2 teaspoon Lemon Pepper seasoning
1/4 teaspoon salt
1/8 teaspoon pepper

Directions:

1. Beat egg and milk in a shallow bowl and set aside. In another bowl, combine breading ingredients.

2.Take the Chicken Breasts One at a time and pound them out to 1/4 to 1/8" thick, sprinkle with salt and pepper, then layer spinach and then cheese in amounts that you like( I like lots) then roll up as firmly as you can.

3. Then dip the rolled up chicken breasts into the egg mixture, then roll in breading to coat well

4. Bake uncovered on an oiled baking sheet at 350 degrees for about 25 to 30 minutes let cool for 10 minutes before slicing .

May be served with a salad if desired.

REMEMBER!! WATCH YOUR PORTIONS! I have found that many do best when they control their portions rather than deny themselves food!
