HOMEMADE VANILLA EXTRACT

3 vanilla beans
1 cup Vodka

Cut vanilla beans in half vertically. Place in pint size glass jar. Add vodka and submerge beans. They must remain totally covered. Seal jar and store in cool, dark place 2-3 months—the longer the better. Top up infusion with more vodka to replace what you have removed.
The vanilla beans should keep their flavor for about 6 months.
***The alcohol will evaporate with cooking and lose its potency.

***Add your own special touches to bottle, such as label, etc. and hand out as Christmas presents, housewarming gift, etc.
