GARDEN FRESH PORK SCRAMBLER

INGREDIENTS
1 Red Onion Diced
2 Roma Tomatoes Diced
3 Super Sweet Mini Peppers Diced
4 Baby Bella Mushrooms Diced
1 Hand full of Baby Spinach Chopped
2 Cooked Pork Chops Diced
6 Farm Fresh Eggs
Small Handful of Grated Pepper Jack Cheese
1 Tomato Sliced
Grape Seed Oil
Small Knob of Butter
2 Green Onions DIced
Small Cucumber sliced
Salt and Pepper to Taste

Directions
Heat Oil and Butter together in a skillet on a medium heat.

Add Diced, Onion, Tomatoes, Mushrooms and Peppers.

Add salt and pepper to taste.

Fry until onions are translucent and softened.

Add the Chopped Spinach and Diced Pork Chop.

Fry until the spinach is combined with the other ingredients.

Break in the 6 eggs and turn the heat down a touch

Constantly stir the scrambler until the eggs close to cooked through

Add the Grated Pepper Jack Cheese.

Finish cooking until the cheese is melted into the scrambler and the eggs are completely cooked

Serve, garnish with fresh sliced tomatoes and cucumbers and enjoy.
