Gluten Free Peanut Butter Chocolate Chip Mini Muffins

Makes 34 mini muffins
INGREDIENTS:

1 cup peanut butter
2 medium ripe bananas
2 large eggs
7 tablespoons honey (agave syrup may be substituted)
1 1/2 tablespoon vanilla extract
1/2 teaspoon baking soda
1/4 tsp salt
1 cup mini semi-sweet chocolate chips

DIRECTIONS:

Preheat oven to 400F. Prepare mini muffin pans by spraying very well with cooking spray,set aside.
Place the first 7 ingredients into blender, and blend on high speed until creamy and smooth.
Stir in chocolate chips by hand.
Using a tablespoon drop 1 tablespoon into each cavity 3/4 full.
Bake for 8 to 9 minutes, or until the tops are set, springy to the touch, and a toothpick comes out clean. Allow muffins to cool in pans for about 10 minutes, or until they are firm enough to handle.
These are amazing fresh,, but will keep airtight at room temperature for 5 days, or in the freezer for 4 months.

These are so super yummy!!! You would never guess there was no flour in here!!! They were bouncy and soft!!

WHAT TO DO WHEN YOU START SKINNY FIBER:
1. Know your health issues. If you have some health conditions that require
medication, please expect that it may take longer for you to lose weight.
Reason being is that your body needs to be “reconditioned” first before
your body will be READY to lose this extra weight. You may have some
health issues that is causing you to be overweight (and I mean that in the most non-judgmental way possible!) and preventing you from losing weight quickly.
In the beginning of starting your Skinny Fiber journey (ONLY if you are
“unhealthy”) you may consider taking 2 capsules 3x’s a day for 60 - 90 days before your biggest meals without fail. Otherwise, you can take the typically recommended dose of 2 capsules 2x’s a day before your biggest meals for also at least 60 - 90 days to see real effects.
Skinny Fiber first starts working on the issues that are slowing the
metabolism down, by correcting the body naturally and preparing it for weight loss - that is done by the detox that takes place in the first few days or even weeks. The more off balance the body is, the longer it will take to see weight loss. Have had several people that said they began to notice the weight or inch loss at the very end of the first bottle - that is why we have the 30 day empty bottle guarantee!!! 2. Drink PLENTY of water........The directions say to drink 8 ounces of

4. How can I take Skinny Fiber? If you are good with pills, then you
shouldn’t have a problem. Otherwise, take one capsule at a time, do NOT
tilt your head backwards or you can get gassy from gulping air, and swallow your capsule with a mouthful of water very quickly. Swallow the

5. Alternative Ways of Taking Skinny Fiber: You can also open the capsule
and put it in your favorite beverage (even coffee is fine), mix it with yogurt,
applesauce, oatmeal, etc. You can mix Skinny Fiber in almost anything!! It

6. I get this question all the time - What if
I don't eat on a normal schedule? My answer is then take the Skinny Fiber
product as if it's medication. Take it every day at the same time like

1 Head cabbage
1/2 lb Cooked bacon
1 Whole white onion
1 Envelope Ranch seasoning mix
2 T. Olive oil

DIRECTIONS->

After cooking bacon drain and set aside. Chop onions and caramelize in Olive oil. Chop cabbage and add to onions, cover and let cook down a bit. Add Ranch mix and bacon and continue to cook down to desired doneness...I cook mine way down. Enjoy!

 DREAM MAC-N-CHEESE

Cook time: 30 mins
Total time: 50 mins
Serves: 12

Ingredients
12 ounces elbow macaroni
2 Tbsp butter
2 Tbsp all-purpose flour
2 cups half & half
3 slices white american cheese
2 ounces reduced-fat cream cheese
1 ounce grated Parmesan cheese
6 ounces shredded extra-sharp white cheddar
1 Tbsp salt
1 Tbsp pepper
*1-2 Tbsp additional half & half or milk is you need to thin it out

Instructions
Prepare pasta in large pot according to the package
While pasta is cooking…in a medium saucepan melt butter on low heat
Whisk in flour and cook for 1 minute, whisking constantly
Gradually whisk in half & half, cook over medium heat, whisking until mixture starts to thicken. Reduce heat to low
Add in cheeses, salt & pepper – stirring until cheese melts and sauce is smooth
*Add in additional milk is necessary to thin it out
Drain pasta and stir into cheese mixture and heat over medium heat for 1-2 minutes until thoroughly heated

Breakfast Hash.

1 lb Breakfast Sausage of your choice
1 Green Pepper
1 Yellow Onion
1 Bag Southern Style Hashbrowns (thawed)
1 Cup Chicken Broth
1/2 Stick Butter
Franks Hot Sauce (to your liking)
1-2 Cup Shredded Cheese of your choice
Salt & Pepper to Taste

Cook onions and green peppers till soft (about 10 minutes)
Mix Sausage in and cook till done
Add Thawed Potatoes, Chicken Broth, 1/2 Stick Butter, Hot Sauce and Salt & Pepper.
Cook Until Potatoes Are Heated Through. Stir gently so the potatoes do not break down!
Add Cheese and Stir Till Just Melted

The recipe ya'll have been waiting for!!!! The delicious dinner my cousin Kim made tonight! Oh so good, you just gotta taste it!!

 LOADED POTATO & BUFFALO CHICKEN CASSEROLE

Great for Parties or a Potluck Dinner!...

Ingredients:
2 pounds boneless chicken breasts, cubed (1")
8 medium potatoes, cut in 1/2" cubes
1/2 cup olive oil
1&1/2 tsp salt
1 Tbsp. black pepper
1 Tbsp. paprika
2 Tbsp. garlic powder
6 Tbsp. hot sauce
Topping:
3 cups fiesta blend cheese
1 cup crumbled bacon
1 cup diced green onion

Preheat oven to 500 degrees. Spray a 9X13" baking dish with cooking spray. In a large bowl mix together the olive oil, salt, pepper, paprika, garlic powder and hot sauce. Add the cubed potatoes and stir to coat. Carefully scoop the potatoes into the prepared baking dish, leaving behind as much of the olive oil/hot sauce mixture as possible. Bake the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and crispy and browned on the outside. While the potatoes are cooking, add the cubed chicken to the bowl with the left over olive oil/hot sauce mixture and stir to coat. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400 degrees. Top the cooked potatoes with the raw marinated chicken. In a bowl ix together the cheese, bacon and green onion and top the raw chicken with the cheese mixture. Return the casserole to the oven and bake for 15-20 minutes or until chicken is cooked through and the topping is bubbly delicious.
Serve with extra hot sauce and/or ranch dressing.
Serves 6-8

Tayna's Crockpot Cowboy Stew

If you like chili beans this is a winner!!

1-2 lbs of ground meat (beef or turkey) you can also use cooked and shredded chicken
1 can Kidney beans
1 bag frozen corn
7 sliced red potatoes
2 sliced or diced onions
1 can diced tomatoes
1 jar of your favorite salsa
1 can of cream of mushroom (or cream of choice) soup
1 pack taco seasoning
Salt and Pepper
Optional - Shredded cheese, sour cream etc
Cook the meat until done and drain.
You will be layering the ingredients, but start with onions and continue to layer all of the ingredients including spices and finish with a layer of potatoes and spices.
Cook on low for 6 hours -stirring 2-3 times during cook time.
Serve with corn bread, saltines, tortilla chips etc.
This was so yummy and so easy.

Kicked Up Broccoli Avocado Salad

2 cups Broccoli Florets and Trimmed Stems......
1/8 cup red onion chopped fine
3 pieces cooked sugar or maple bacon, crispy and chopped
1/4 cup raisins
1/2 avocado
3-4 tablespoons mayo
1/4 red bell pepper chopped fine
sea salt
Wash and trim broccoli. Trim outer layer of stalk and chop into bite size pieces. Place in medium bowl.
Add remaining ingredients and combine.

Cleo’s Pumpkin Dog Biscuits

Ingredients:
2 eggs
1/2 cup canned pumpkin
2 tablespoons dry milk
1/4 teaspoon sea salt
2 1/2 cups brown rice flour *
1 teaspoon dried parsley (optional)
Directions:
Preheat oven to 350º
In large bowl, whisk together eggs and pumpkin to smooth. Stir in dry milk, sea salt, and dried parsley (if using, optional). Add brown rice flour gradually, combining with spatula or hands to form a stiff, dry dough. Turn out onto lightly floured surface (can use the brown rice flour) and if dough is still rough, briefly knead and press to combine.
Roll dough between 1/4 – 1/2″ – depending on your dog’s chew preferences, – and use biscuit or other shape cutter to punch shapes, gathering and re-rolling scraps as you go. Place shapes on cookie sheet, no greasing or paper necessary. If desired, press fork pattern on biscuits before baking, a quick up-and-down movement with fork, lightly pressing down halfway through dough. Bake 20 minutes. Remove from oven and carefully turn biscuits over, then bake additional 20 minutes. Allow to cool completely on rack before feeding to dog.
* Brown rice flour gives the biscuits crunch and promotes better dog digestion. Many dogs have touchy stomachs or allergies, and do not, like many people I know, tolerate wheat.
Makes up to 75 small (1″) biscuits or 50 medium biscuits

Butterfinger Rum Cake

Butterfinger Rum Cake
...
Ingredients:
Sugar
½ cup water
1 package yellow cake mix
½ cup oil
1 small package butterscotch instant pudding
½ cup Butterscotch Schnapps
4 eggs
5 full size Butterfinger candy bars, crushed
hot fudge sauce
Directions:
Sprinkle sugar in a greased bundt pan. Mix water, cake mix, oil, pudding mix, and rum. Beat until smooth. Beat in eggs one at a time. Fold in 1/2 of the crushed Butterfingers. Bake 1 hour in a preheated 325 degree oven. Cool for 10 minutes, pierce with fork and pour sauce over cake. Cool in pan.
Rum sauce:
1 cup sugar
½ cup butter
¼ cup Coconut Rum (or your favorite rum)
1/4 cup Butterscotch Schnapps
Combine and boil one minute. Pour over cake.
After inverted, pour on additional Schnapps (if you like more) and drizzle top with hot fudge, and garnish with remaining crushed Butterfingers.

Chicken Spaghetti



Chicken spaghetti

1 pound spaghetti
1 pound cooked chicken cubed
1 lg can cream of chicken soup...
1 jar Ragu cheese sauce
1 can rotel
Cook and drain spaghetti. In large skillet add remaining ingredients mix well. Add to spaghetti and place in a baking pan 9x13 bake @ 375 for 15 minutes and serve.
Can top with shredded cheese before baking if desired.

I love soup anytime of the year, but as the weather starts to get cooler, I love it even more!! This is a good one...Enjoy!

 CABBAGE SOUP WITH HAMBURGER

Ingredients:...
2-3 pounds of hamburger (can substitute ground turkey)
1 head of cabbage, chopped
2 cup celery, diced
2 cup white or yellow onion, diced
1 green bell pepper, diced
2-3 cloves garlic, minced
5-6 cups beef broth
2 - 14 oz can basil, oregano, garlic diced tomatoes
2 teaspoon oregano
2 teaspoon basil
½ teaspoon red pepper flakes
few shakes of black pepper
½ teaspoon salt (optional)
Directions:
Brown your hamburger before adding to crock pot.
Put all the ingredients in the crock pot, stir it around
Cook on high between 5-6 hours
or cook on low between - 6-8 hours

Random Tips!



1.) If you've got an itch in your throat, scratch your ear. When the nerves in the ear get stimulated, they create a reflex in the throat that causes a muscle spasm, which cures the itch.

2.) Having trouble hearing someone at a party or on the phone? Use your right ear it's better at picking up rapid speech. But, the left is better at picking up music tones.

5.) Clear a stuffed nose or relieve sinus pressure by pushing your tongue against the roof of your mouth then pressing a finger between your eyebrows. Repeat that for 20 seconds it causes the vomer bone to rock, which loosens your congestion and clears you up.

6.) If you ate a big meal and you're feeling full as you go to sleep, lay on your left side. That'll keep you from suffering from acid reflux it keeps your stomach lower than your esophagus, which will helps keep stomach acid from sliding up your throat.

7.) You can stop a toothache by rubbing ice on the back of your hand, on the webbed area between your thumb and index finger. The nerve pathways there stimulate a part of the brain that blocks pain signals from your mouth.

8.) If you get all messed up on liquor, and the room starts spinning, put your hand on something stable. The reason: Alcohol dilutes the blood in the part of your ear called the cupula, which regulates balance. Putting your hand on something stable gives your brain another reference point, which will help make the world stop spinning.

9.) Stop a nose bleed by putting some cotton on your upper gums right behind the small dent below your nose and press against it hard. Most of the bleeding comes from the cartilage wall that divides the nose, so pressing there helps get it to stop.

10.) Nervous? Slow your heart rate down by blowing on your thumb. The vagus nerve controls your heart rate, and you can calm it down by breathing.

11.) Need to breathe underwater for a while? Instead of taking a huge breath, HYPERVENTILATE before you go under, by taking a bunch of short breaths. That'll trick your brain into thinking it has more oxygen, and buy you about 10 extra seconds.

12.) You can prevent BRAIN FREEZE by pressing your tongue flat against the roof of your mouth, covering as much surface area as possible. Brain freeze happens because the nerves in the roof of your mouth get extremely cold, so your brain thinks your whole body is cold. It compensates by overheating which causes your head to hurt. By warming up the roof of your mouth, you'll chill your brain and feel better.

13.) If your hand falls asleep, rock your head from side to side. That'll wake your hand or arm up in less than a minute. Your hand falls asleep because of the nerves in your neck compressing so loosening your neck is the cure. If your foot falls asleep, that's governed by nerves lower in the body, so you need to stand up and walk around.

14.) Finally, this one's totally USELESS, but a nice trick. Have someone stick their arm out to the side, straight, palm down. Press down on his wrist with two fingers. He'll resist, and his arm will stay horizontal. Then, have him put his foot on a surface that's half an inch off the ground, like a stack of magazines, and do the trick again. Because his spine position is thrown off, his arm will fall right to his side, no matter how much he tries to resist.

15.) Got the hiccups? Press thumb and second finger over your eyebrows until the hiccups are over -usually, in a short while.

Yield: 8 servings

Ingredients:...
4 Tbsp butter
2 chicken breasts, cooked and shredded...
Up to 2 cups mixed vegetables (can use frozen, fresh or a mix)
¼ onion, diced small
1/2 cup shredded cheddar cheese
2 cups reduced fat biscuit mix
1 ½ cups skim milk
1 ½ cups chicken broth
2-3 chicken bouillon cubes (if using canned broth, use all 3)
1 can fat free cream of chicken soup

Directions:
Heat oven to 350° F. In a 9X13 dish, place butter in cubes and allow to melt in the oven. Heat the broth and dissolve the bouillon, set aside. Remove the dish from the oven and layer chicken on top of the butter, do not stir. Place your favorite mix of vegetables and onions on top of the chicken, do not stir (I used corn, green peas, carrots, spinach and bell pepper). Top with the cheese, no stirring! Combine the biscuit mix and the milk, pour over the top and again, do not mix! Mix together the broth and the cream of chicken soup, pour THIS over the top of everything, again, DO NOT STIR…yep, it looks like a mess, but bake for 45-50 minutes and the magic happens! Remove when top is evenly browned and allow to sit for 5-10 minutes before serving. This is absolutely delicious!

This kickin’ casserole has all the classic buffalo chicken flavor you love.
It delivers big, bold taste and is on the table in less than an hour!

Serves 6
Servings: about 1 cup each
Bake: 25 min.

What You'll Need
3 cups shredded cooked chicken breast
1/3 cup Franks Original RedHot Sauce
1/3 cup Ranch Salad Dressing
6 ounces egg noodles (or pasta of your choice), cooked and drained
1 3/4 cup Alfredo Sauce (make your own or use 14 oz jar of pre made)
1/4 cup shredded Parmesan cheese
1/4 cup crumbled blue cheese
6 slices of provolone cheese (for top)
1/4 cup shredded cheddar cheese (for top)

How to Make It
Heat the oven to 350°F. Lightly grease an 11x8x2-inch baking dish.
Stir the chicken and Franks hot sauce in a large bowl. Stir in the pasta, Ranch dressing and 1/2 cup cheese. Spoon the chicken mixture into the baking dish. Cover the top with the 6 slices of provolone chess and sprinkle with the cheddar cheese.
Bake for 25 minutes or until the chicken mixture is hot and bubbling and the cheese is melted. Serve with Franks HotSauce if you like it real spicy!

 BEER BATTERED PICKLES

Ingredients:...
16 dill pickle spears, drained
Beer Batter>>
1 egg
1 (12-oz.) bottle beer
1 tablespoon baking powder
1 teaspoon salt
Pinch cracked black pepper
1/2 tsp dried dill
1 1/2 cups all-purpose flour

Directions:
Place pickles in a strainer drain for 10 minutes.
Dredging Flour>>>
1/2 cup flour
1/2 tsp dried dill
1/2 tsp seasoning salt
Mix and coat drained pickles.
In a large bowl, whisk together the egg, beer, baking powder, salt, pepper, and dill. Add the flour and whisk until smooth.
In a large sauce pan, pour oil to a depth of 1 1/2 inches and heat over medium-high heat .
Dip flour dredged pickle spears into batter and fry in batches, until golden. Drain paper towels and serve with Dill Ranch dipping sauce.
Dill Ranch>>>
1/2 cup Ranch
1 tsp dried Dill
1/4 tsp garlic salt
Mix and let stand at least 30 min for flavors to mix.

1 (16-ounce) package butter-flavor crackers, crushed...
3/4 cup (1-1/2 sticks) butter, melted
2 cups chunked cooked boneless, skinless chicken breasts
1 (8-ounce) can water chestnuts, drained and chopped
1 (10.75-ounce) can condensed cream of mushroom soup
1 (10.75-ounce) can condensed cream of chicken soup
1 cup sour cream
1/2 cup water
1 garlic clove, minced
1 teaspoon dried basil
1/8 teaspoon black pepper

Preheat oven to 325 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.

In a large bowl, combine crushed crackers and butter; mix well and set aside 1/4 cup of mixture. Spoon remaining mixture into prepared baking dish. Evenly distribute chicken over cracker layer. Sprinkle water chestnuts over chicken.

In a large bowl, combine mushroom and chicken soups, sour cream, water, garlic, basil, and pepper; mix well and pour over water chestnuts and chicken. Sprinkle with reserved cracker mixture.

Bake 60 to 70 minutes, or until golden and bubbly.

Put ingredients into a jar and shake.

Dry Onion Soup Mix:

2/3 cup dried, minced onion
3 teaspoons parsley flakes
2 teaspoons onion powder
2 teaspoons turmeric
1 teaspoon celery salt
1 teaspoon sea salt
1 teaspoon sugar
1/2 teaspoon ground pepper
Mix all ingredients in a jar, then give the jar a good shake. I’d recommend shaking the jar to mix the ingredients well before each use.
Use 4 tablespoons in a recipe in place of 1 packet of onion soup mix. Store this in a dry, cool place.

Ranch:

5 tablespoons dried minced onions
7 teaspoons parsley flakes
4 teaspoons salt
1 teaspoon garlic powder
Mix together and store in an air tight container.
For dressing: Mix 2 tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.
For dip: Mix 2 tablespoons dry mix with 2 cups sour cream.
Mix up a few hours before serving, so the flavors all blend.
*Can also substitute Greek Yogurt in the Ranch! I PROMISE your kids and spouse will NEVER notice!

Easy Chicken and Broccoli Pie

Ingredients

2 cups Green Giant™ frozen broccoli cuts, thawed, drained
1 1/2 cups shredded Cheddar cheese (6 oz)
1 cup cut-up cooked chicken or 2 cans (5 oz each) chunk chicken, well drained
1 medium onion, chopped (1/2 cup)
1/2 cup Original Bisquick™ mix
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs

Directions
1.Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Sprinkle broccoli, 1 cup of the cheese, the chicken and onion in pie plate.
2.In medium bowl, stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate.
3.Bake 35 to 38 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 1 to 2 minutes longer or until cheese is melted. Let stand 5 minutes before serving.

Expert Tips
Sprinkle this easy topping over the pie before baking: In a small bowl, mix 1/2 cup Original Bisquick mix, 1/4 cup chopped almonds or walnuts, 1/4 cup grated Parmesan cheese and 1/8 teaspoon garlic powder. Cut in 2 tablespoons cold butter or margarine, using pastry blender or fork, until crumbly.

Oil Pulling

Oil pulling has been around for years, which makes me mad I’ve only just found out about it. It’s an ancient Ayurvedic technique that basically involves you swishing oil in your mouth for 20 minutes (no more no less) & it pulls toxins out of your body through your mouth. The idea behind it is pretty simple stupid- the oil is “sticky” and when you swish it around in your mouth bacteria gets stuck in the oil & dissolves.

It’s easy to do. Pick an oil, you can use ORGANIC coconut oil or sesame oil (I prefer coconut cause it also has anti-bacterial, anti-fungal, & anti-inflammatory properties), put anywhere from a teaspoon to a tablespoon (depending on what you can handle) in your mouth, swish for 20 minutes.

I know, I know you are freaking out about the 20 minute thing, but TRUST me when I say- it flies by. Something about the whole process is relaxing to me. No talking, just swishing. Pull the oil through your teeth & make sure NOT to swallow it. Once you start, that oil fills up with toxins (the ones you’re going to get rid of), you don’t want to swallow!! When your timer beeps, spit out the toxic waste into a plastic baggy or directly into the trash. Don’t spit it down the drain cause the oil will solidify again & mess up your pipes.

Chicken Broccoli & Cheese Casserole



Chicken Broccoli & Cheese Casserole

Ingredients:

1 1/2 pounds of chicken (tenderloins are easiest)...
a box or bag of stove top stuffing (i usually have half the stuffing left for the next time i cook this)
1 can of cream of chicken soup
1 can of cream of mushroom soup
~(you can use any kind of soup
as long as you use two cans)
1 bag, or two bundles, fresh or frozen broccoli
1 cups of cheese ( or more if you love cheese)
2 tbsp. real butter
S&P to taste

Directions:

boil your chicken until done.....cool... then.. shred or cut into pieces
while you are doing that , steam or boil you broccoli til tender
Mix both cans of soup with your chicken and add S&P to taste

next
melt your butter
layer stuffing on the bottom of a 9 x 13 square or round(whatever ya got)
pour half the butter over the stuffing and mix til moist (flatten out once mixed)

Layer chicken on stuffing and broccoli and cheese
I usually get two layers of each..
Top with the remaining stuffing and butter mixture

Bake in a 350 degree oven for 25-30 mins or until golden brown.
