Vanilla......mmmmm



This is from a friend who shared, "My daughter just put 2 capfuls of vanilla extract in an ovenproof cup and turned the oven on at 300 degrees. Put the cup in the oven for an hour! My apartment smells delicious! Try it! "

Honey Bun Cake!



Honey Bun Cake!

1 yellow cake mix 1 cup brown sugar 2 cups powdered sugar
3/4 cup oil 1 Tablespoon cinnamon 4 Tablespoons milk
4 eggs 1 Tablespoon vanilla extract
8 oz sour cream...
Mix cake mix, oil, eggs, and sour cream by hand, about 50 strokes.
Put half the batter in 9 x 13 pan.
Combine brown sugar and cinnamon and spread over entire cake. Spread the rest of the batter on top of this.
Use a knife to make swirls in the cake.
Bake at 325 degrees for about 40 minutes.
Blend powdered sugar, milk and vanilla extract and spread on warm cake.

CARAMEL APPLE SHEET CAKE

“This wonderful recipe is from the Bring ‘Em On Home Cookbook, it was given to us by Londa Pogue. It is the yummiest apple cake ever and one of my very favorite cakes to make as everyone loves it! The Icing will taste exactly what you remember a good old fashioned caramel apple on a stick should taste like. So Good!! (Cowboy Approved)

CAKE:
2 eggs
1 cup vegetable oil
1 3/4 cups sugar
2 1/4 cups self rising flour
1 teaspoon vanilla
3 cups chopped apples, peeled
1 cup chopped pecans
1 teaspoon cinnamon

Preheat oven to 300 degrees. Grease a 13 x 9 pan. In large bowl beat eggs, then add oil and sugar, stir until well blended. Stir in remaining ingredients and blend thoroughly. Pour batter into pan. Bake for 1 hour and 10 minutes until cake begins to pull away from the sides of pan. Cool.

CARAMEL ICING:
1/3 cup butter
2/3 cup dark brown sugar, firmly packed
1/3 cup milk
3 cups powdered sugar
1 teaspoon vanilla
Pecan halves, optional

Melt butter in saucepan over medium low heat. Stir in brown sugar, cook and stir for 2 minutes. Add milk and continue cooking until mixture boils, stirring constantly. Remove from heat and gradually stir in powdered sugar. Add vanilla and blend well. Spread over cooled cake. If icing gets to thick, add a little milk and blend well. Garnish with pecan halves if desired.

 31 THINGS YOU CAN FREEZE

What would we find in your freezer?...

CHEESE: You can freeze blocks of cheese without it becoming crumbly if you let it thaw completely before putting it in the fridge. If you prefer to shred your cheese first, add a tablespoon or so of cornstarch or flour to the bag and shake it to prevent clumping when it thaws.

Another great idea…buy a big piece of Parmigiano Reggiano (the good stuff!!), grate in the food processor and put in a freezer bag. It keeps for months and all you have to do is open the bag and scoop out a couple of tablespoons when you need it.

HOMEMADE PANCAKES, WAFFLES, FRENCH TOAST: Make up a few batches over the weekend for quick “defrost and go” breakfasts during the week. Freeze on a cookie sheet, then toss them in a freezer bag. Reheat in microwave, toaster, or toaster oven. WAY better then frozen ones you buy in store!

FRUIT: When freezing fruit, it’s best to first freeze spread out on freezer or parchment paper on a cookie sheet, and then place in bags. Individual frozen pieces let you pull out just how much you need. Try keeping a “Smoothie Bag” in the freezer. Toss in extra apple wedges, peaches, pears, bananas, chunks of melon…any kind of fruit…and use in smoothies.

If you don’t like handling mushy bananas, just throw the bananas into the freezer with the skin on. Then when you need them for a recipe (banana bread anyone?), pull out what you need, microwave for a few seconds, then cut off the top and squeeze the insides into your mixing bowl!

RICE: Cook a big batch of rice, spread it on a cookie sheet on parchment paper and freeze. When the rice is frozen, just put in a freezer bag or containers and you have rice in a pinch! Great for BROWN rice which takes so long to cook! Use in casseroles, soups or fried rice.

PIES: Make apple pies in the fall to enjoy throughout the year. Bake them, freeze them in freezer bags wrapped in freezer paper then when you have a hankering for pie, take out of the freezer, remove wrapping, and place in oven for 2 hours at 200 degrees. You can also freeze SLICES after baking a whole pie.

CORN: An EASY way to freeze corn on the cob is to put the ears of corn, WITHOUT removing ANY silk or husk, straight into freezer. When you want to eat it, put it in microwave just the way you put it in the freezer and cook for 5 minutes on high for two ears or 4 minutes for one ear. The silk insulates and protects the corn while it cooks. Tastes like fresh-picked corn!

TOMATOES: Roast roma tomatoes in oven at a low temp (225 degrees) with garlic, fresh herbs, and a drizzle of olive oil for 4 to 5 hours. When cooled, transfer to freezer bags. Use them in chili or in your own tomato-based sauces.

PASTA: Whenever you make pasta, cook whole package. and freeze leftovers for later to add to soups and casseroles. Or freeze individual size portions in a baggie, making sure to squeeze out the air; get the bag as flat as possible. Reheat by running hot water over bag for a few minutes!

FLOUR AND OTHER GRAINS: Freezing flour and other types of grain for at least 3 days discourages uninvited “guests” from hatching. You can also store it in the freezer, just make sure to double wrap to avoid condensation and to keep it from picking up other freezer smells.

PESTO: Make (or buy) and freeze pesto in ice cube trays. Once frozen, pop it out and put in a freezer bag. Nice to have pesto whenever you want it.

MASHED POTATOES: Using an ice cream scoop, put even portions of mashed potatoes onto parchment-lined cookie sheet. Freeze until hard then transfer into a freezer bag. These will keep in the freezer for at least 2 months.

COOKIE DOUGH: Make a batch of cookie dough, scoop onto cookie sheets and freeze. When they are frozen solid. put them in freezer bags. When you NEED cookies, bake as few or as many as you NEED without lots of waste or guilt. Just add 1 to 2 minutes to the cook time. You can also make “slice-and-bake” cookie dough by shaping it into a cylinder, and freezing it wrapped in foil.

SOUPS AND CHILI: Cool leftover soup completely and transfer to a freezer-friendly container, leaving about 1 cup of empty space for expansion during freezing. The night before eating, move the container to the fridge to thaw safely and then reheat and serve.

BROTH AND STOCK: Keep a gallon bag in freezer and add any leftover veggie pieces, including onion peels, celery stalks, potato peels, etc. When you have enough, make vegetable stock. Keep another bag for pan drippings or sauces that are left after cooking chicken. This can be used to flavor soups.

SANDWICHES: When packing lunches for school/work, it’s a time-saver to pull a sandwich straight from the freezer. Just throw it into your lunch box/bag in the morning; it’s thawed by lunch time. It also helps keep meat cold. Peanut butter and jelly or honey, or deli meat and a slice of cheese work well. You can freeze butter or mustard but not mayo, lettuce, or tomato. Pack these separately or add in the morning.

You can also freeze breakfast sandwiches. Cook scrambled eggs and sausage/bacon in bulk, pile them onto biscuits or English muffins, wrap them individually and freeze.when you want one, grab out of the freezer, microwave, and enjoy.

POTATO CHIPS, CRACKERS, & PRETZELS: Stock up on chips, crackers, and pretzels when they're on sale and throw them in the freezer. FROZEN chips actually taste BETTER. Eat them straight from freezer; they are crisper and the flavors pop.

MILK: Ever wonder why plastic milk jugs have those circle indents on the side?? They are there to allow milk to expand while freezing! To use frozen milk, let thaw, and then SHAKE WELL before opening, to make sure any solids are remixed.
You can also freeze buttermilk. No more tossing out half a quart because you only needed a cup.

JUICE: Like milk, the only concern about freezing juice is leaving room for expansion. A good rule of thumb is to take out 8 ounces for every half gallon of juice. Stock up when it goes on sale or at a discount warehouse.

BREAD & BAKED GOODS: When your favorite bread is on sale, stock up; freeze it. Or when in a baking mood, make extras of your favorite baked goods and freeze them for later.

Tip for defrosting baked goods or breads: place them in your microwave overnight. It keeps them from drying out like they do on the counter.

BUTTER CREAM FROSTING: Freeze leftover frosting. When when you need to frost something, let it thaw in the fridge, then whip it up, and color/decorate as if it were just made.

TOMATO PASTE: Most recipes using tomato paste only call for one tablespoon out of the whole can. Then you’re left with an almost full OPEN can. What to do!? Put the rest in a sandwich bag, flatten it out in freezer, and when you need a tablespoon, just break off a piece and throw it into whatever you are cooking.

DICED VEGGIES: Dice onions, chili's, or bell peppers, then freeze flat in gallon freezer bags. As they are freezing, press “score lines” into the bags so you can break off as much or as little as you wish for recipes.

HOMEMADE & STORE_BOUGHT DOUGH: You can freeze all kinds of homemade dough – pizza dough, pie crust – shaped in a ball and wrapped in Saran Wrap.
Or you can also freeze canned biscuits, crescent rolls, pizza dough, etc. right in the tube.

EGGS: crack eggs into an ice cube tray for cakes and cookies. Thaw out in refrigerator and use as you normally would.

SHREDDED CHICKEN: Cook a big batch and shred or when you get a rotisserie from the grocery store, shred the leftovers and put it in a bag.

LEMON/LIME JUICE & ZEST: Squeeze lemons and limes into ice cube trays, then pop them out after they have frozen and store in freezer bags. Now you have “fresh” lemon and lime juice whenever you need it. Don’t forget to ZEST the lemons/limes first and keep that in the freezer as well.

HERBS: Freeze fresh herbs in ice-cube trays with a little water or leftover stock to use for soups, stews, and casseroles later in the year.

MARINATED MEAT: Place meat in a freezer bag, pour in marinade and freeze. When you defrost it, it will be fully-marinated and ready to cook.

HOMEMADE CASSEROLES: When you are cooking a casseroles (lasagna, mac and cheese, enchiladas, etc), why not make 2 and FREEZE one for when unexpected company drops by or to use during a busy school/work week.
You can do this a couple of ways.
1. Freeze entire casserole by lining base of dish with freezer paper, add ingredients, then freeze it in the dish. When it’s frozen solid, remove from dish (easy to do thanks to the freezer paper), rewrap the food, and put back in the freezer. When you want the item for a meal, unwrap and place in the original dish to defrost and cook.
2. Bake casserole, let cool, and then cut into individual servings and freeze. Reheat in microwave!

FISH STICKS: Forget the premade fish sticks. Buy fresh fish in quantity, cut it crosswise into fish ‘fingers,’ dip in egg, and
dredge in flour and bread crumbs, then freeze laid out on a tray before putting into bags to freeze.

HAMBURGER: Pre-cook ground hamburger and portion it out for meals. When you need hamburger for shepherd’s pie, sloppy joes, tacos, or whatever, just pull it out of the freezer, add the seasoning, and microwave. Three minutes, or 1 minute.

CINNAMON & SUGAR PUMPKIN MUFFINS



A DELICIOUS donut like muffin that is wrapped in cinnamon and sugar!

 CINNAMON & SUGAR PUMPKIN MUFFINS

Each muffin is ONLY 1 WW+ point! ...

Muffins
1/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1 cup canned pumpkin puree
1/4 cup skim milk
1 1/4 cup all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp pumpkin pie spice

Topping
3 tbsp unsalted butter, melted
1/4 cup sugar
1 1/2 tsp cinnamon

Instructions
1.Preheat oven to 375
2.Prepare 2 mini muffin pans with nonstick spray or mini-muffin liners

For the Muffins
1.In a stand mixer cream together the butter and sugars until combined
2.Add in egg, vanilla, pumpkin & milk and mix until combined well
3.In a small bowl gently combine flour, baking powder, baking soda, salt & pumpkin pie spice
4.Add flour mixture into pumpkin mixture slowly, moving until just combined
5.Divide mixture into muffin tins evenly, about 1 tbsp. per muffin cup
6.Bake for 10 minutes
7.Remove to wire rack to cool

For the Topping
1.In a shallow dish mix together cinnamon and sugar
2.In a separate shallow dish melt butter
3.Dip top of each muffin in butter then roll in cinnamon and sugar
4.Set on rack to let set for a few minutes
5.ENJOY!!

Prep Time - 10 min Cook Time - 10 min Total Time - 25 min
Serves 48

 CARAMEL APPLE BARS

Enjoy all the best of apple pie in a bite-size bar! Each bar is 4 WW+ points and only 134 calories! ...

Serves 24

Shortbread Crust
1/2 cup butter, melted
1/4 cup sugar
1 tsp vanilla
1/4 tsp salt
1 cup flour

Apple Filling
1/2 cup caramel sauce (for an easy homemade recipe: http://bit.ly/sltedcarsce) - divided
2 apples, peeled and cubed into small pieces
2 tbsp. flour
2 tbsp. brown sugar
1 tsp pumpkin pie spice
1/2 tsp cinnamon

Topping
1/2 cup old fashioned oats
1/3 cup brown sugar
1/2 tsp pumpkin pie spice
1/4 cup flour
1/4 cup butter, cold and cubed into small pieces
1/2 cup caramel sauce (for an easy homemade recipe: http://bit.ly/sltedcarsce)

Instructions
1.Preheat oven to 300
2.Line a 8x8 baking pan with parchment paper or foil, making sure there is a little overhang on the sides
To make the crust
1.In a medium bowl combine melted butter, sugar, vanilla and salt
2.Slowly add in flour, stirring until well combined
3.Press crust into pan, making it as even as possible
4.Bake for 15 minutes - while baking make the filling and topping

To make the filling
1.In a medium bowl combine cubed apples, flour, brown sugar, pumpkin pie spice and cinnamon, until the apples are well coated
2.Set aside

To make the topping
1.In a medium bowl combine oats, brown sugar, pumpkin pie spice and flour
2.Add in cold butter and using your fingers combine the mixture until it comes together as coarse crumbs

To finish
1.Raise oven temperature to 350
2.Remove crust from the oven and top with 1/4 cup of the caramel sauce, drizzling it over the crust as evenly as possible
3.Spread apples over caramel sauce
4.Top apples with crumb topping, making sure to evenly distribute the topping
5.Return pan to oven and continue baking for 25 minutes or until topping is golden brown
6.Remove from oven and let cool for 20-25 minutes
7.Place in the refrigerator for 2-3 hours to let bars completely set-up
8.When ready to serve drizzle remaining 1/4 cup of caramel sauce over bars
9.Serve room temperature or cold
10.ENJOY!!

ENGLISH APPLE PIE



This is So Delicious!!! My granny's recipe for English Apple Pie!! She made this all the time! My mom made it a few weeks ago and it brought back so many great memories!!

 ENGLISH APPLE PIE

Super easy!!!...

5 large Apples peeled & sliced
1 tsp Cinnamon
1 cup sugar
1 stick butter
1/2 cup Brown Sugar
1 tsp Cinnamon (for top mix)
1 cup Flour
1/4 tsp salt
1 cup chopped Pecans

Preheat oven to 350
Peel and slice apples. Spread apple slices in bottom of greased a 9 x 13 pan or 3 quart baking dish. Combine 1 tsp cinnamon & 1 cup sugar~~sprinkle evenly over apple slices~~~ Mix butter, brown sugar, 1 tsp cinnamon, flour and salt blending well. ~~ Spread over top of apple slices~~ Sprinkle with pecans~~~ Bake @350 for 45 min - 1 hour

Makes a YUMMY breakfast!!!! ...

Ingredients:
16 ounces of Ground sausage
1/2 cup onion, diced
4 potatoes, washed and diced, (really small pieces)
2/3 cup butter
2/3 cup flour
2/3 cup chicken or beef broth
2 1/2 cup milk or more
1/2 tsp. seasoning salt
Salt and Pepper to taste
16 of the large home-style buttermilk biscuits
(the pop and bake kind)
8 miniature pie tins
Preheat oven to 350

Instructions:
Wash, cut and dice potatoes first. Dice onions, then in a large skillet,
add sausage, crumble in to small pieces, add potatoes, and onion.

Cook on medium heat for about 15 to 20 minutes stirring so mixture
doesn't burn.

Meanwhile in a large saucepan, melt butter on medium heat,
and once melted add the flour and broth. Whisk together till
well blended. Slowly add in the milk, and continue to stir until
mixture thickens. Add more milk if too thick. Add seasoning
salt and salt and pepper to taste.

Add the sausage potato mixture to the gravy and stir well.
Set aside.

Roll the biscuits out, one at a time. Roll out one for bottom layer
a little bigger than the pie tin, and one that will go over the top.
After you roll out the biscuits, put it into the pie tin, fill it with the
gravy mixture, be careful not to get on edges. Top off with the
top biscuit and pinch edges together all around the top layer of
the pies. Do this with the rest of the biscuits.

If you don't have the pie tins, this will also work with a muffin tin.
Use one roll for the bottom of the tin, and half a roll for the top.
Bake for 15 minutes for the pies, and 13 for the muffin size.

Keep this Recipe! Hope you don't have to use it!!

 FLU FIGHTING TEA

Drink while warm. ...

Ingredients:
3 cups of water
Juice of half a lemon
1 cinnamon stick
3 slices (1/4 inch thick) of fresh ginger
¼ tsp cloves
½ tbsp. turmeric
1 pinch cayenne (start with this and add more to taste…the more you can handle the better)
1 ½ tbsp raw honey (can add more or less to achieve desired sweetness)

Directions:
1. Add all ingredients (except honey) to a pot and bring to a boil.
2. Once boiling reduce heat and let simmer for about 10 minutes.
3. Add honey and stir, adding more if necessary.
4. Pour tea through a strainer and drink while warm.

 PEANUT BUTTER NUTELLA BROWNIES

Topped with chocolate chips and grated white chocolate!...

Ingredients:
3/4 cup granulated sugar
1/4 cup butter
1 tbsp. water
3/4 cup semi sweet choc. chips plus 1 cup divided
1 large egg
2 tsp vanilla
1 cup flour
1/4 tsp baking soda
3/4 milk choc. chips
1/2 cup creamy peanut butter
1/2 cup nutella
White chocolate, for garnishing

Directions:
Preheat oven to 350. In medium sized microwave safe bowl combine sugar, butter, and water. microwave on high until butter is melted. Stir in 3/4 cup semi sweet choc chips until melted. Stir in egg and vanilla, mix well. Add flour, and baking soda, stir until combined.

Allow batter to cool to room temp, then stir in 3/4 cup semi sweet choc chips. spoon into 12 muffin cups. Bake for 15 min or until top is set or toothpick comes out slightly wet.

After brownies are out of oven wait for centers to fall, which will happen upon cooling. If not then tap the center with the back of a spoon to make a hole for the peanut butter. Place peanut butter in a small bowl and microwave on high for 45 sec then stir. Add 1 tsp. of peanut butter in each brownie. Melt Nutella in microwave and add 1 tsp in the middle of the peanut butter. Top with remaining 1/3 cup of remaining choc chips and grated white chocolate.

The streusel topping drizzled in caramel makes this recipe MOUTH-WATERING delicious!!!!

 CARAMEL APPLE SURPRISE

Ingredients:...
Crust:
2 1/4 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup (2 sticks) butter, softened

Cheesecake Filling:
3 (8-ounce) packages cream cheese, softened
1 cup sugar, divided (3/4c and 1/4 c.)
3 large eggs
1 1/2 teaspoons vanilla extract

Apples:
3 Granny Smith apples, peeled, cored and finely chopped
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Preheat oven to 350 degrees F.
In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until mixture is crumbly. Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.

In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.

In a small bowl, stir together chopped apples, remaining 1/4 c. sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with Streusel topping. Bake 40-45 minutes, or until filling is set. Drizzle with caramel topping and let cool. Serve cold and enjoy!

Streusel Topping: In a small bowl, combine all ingredients
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup (1 stick) butter, softened

Cracker Barrel Broccoli Cheddar Chicken..

Ingredients
4 boneless skinless chicken breasts
1 can of Campbell's Cheddar Cheese Soup
1 cup milk
1 1/2 cups Ritz Crackers (one sleeve)
4 tablespoons of melted butter (you can use more)
8 ounces frozen broccoli
4 ounces shredded cheddar cheese
1/2 teaspoon seasoned salt

Instructions
Preheat your oven to 350 degrees. Make can of Cheddar cheese soup mix according to package directions (one can of soup mix to one can of milk). Place chicken breasts in a baking dish. Season with seasoned salt. Pour 3/4 of the prepared soup over the chicken breasts. Add broccoli to chicken that has been covered with the cheddar soup. Melt butter and combine with Ritz crackers, sprinkle buttered crackers over the broccoli. Add remaining soup mix, and bake for approximately 45 minutes or until the chicken is done. (Check chicken by cutting the thickest part and look to see that the chicken is uniform in color). When chicken has been removed from oven sprinkle with shredded cheddar cheese.

Pumpkin White Chocolate Chip Cookies

Ingredients:
2 1/4 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
3 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves
1/2 tsp salt
1/2 cups butter(softened)
1 cup sugar
1/2 cup brown sugar
1 cup Pumpkin Puree (NOT pumpkin pie mix)
1 large Egg
1 tsp vanilla extract
1 12 oz bag White Chocolate Chips
Directions:
1. Preheat oven to 350 degrees F.
2. Mix Flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves set aside.
3. Cream together butter and sugars for 5 min. (I used a hand mixer)
4. Add in pumpkin, egg, and vanilla and mix until well incorporated.
5. Then slowly mix in the dry ingredients until the dough forms. (I mixed in with a
wooden spoon)
6. Stir in white chocolate chips. Dough is a bit sticky, place in frig for 30 min.- 1 hour to firm
7. Drop by spoonfuls onto foil lined baking sheet and bake for 10 -12 minutes. (I used a
1 ½” cookie scoop and placed them about 2” apart…they don’t spread out a lot)
8. Cool and serve
Notes
**Optional add 1/2-3/4 cups chopped walnuts or pecans

 THE PERFECT OATMEAL COOKIE

So delicious and soft. mmmmmm.......

1 cup white sugar
2 cups old fashioned oats
1/2 cup brown sugar
1 1/2 cup flour
1 egg
1 tsp baking soda
1 tsp baking powder
1 cup butter, softened
1 Tbsp vanilla
Instructions:
Cream sugars and butter together. Add egg and vanilla. Mix. Add baking powder and baking soda. Mix well. Add oatmeal. mix. Add flour and mix well. Scoop into cookie sheets. Bake at 350 until edges are golden!

Peanut Butter Snowballs

Peanut Butter Snowballs

1 cup confectioners' sugar...
1/2 cup creamy peanut butter
3 tablespoons butter, softened
1 pound white candy coating, coarsely chopped

Instructions
In a bowl, combine the sugar, peanut butter and butter. Shape into 1-in. balls and place on waxed paper-lined baking sheet. Chill for 30 minutes or until firm.
Meanwhile, melt the candy coating in a microwave-safe bowl. Dip balls and place on waxed paper to harden. Yield: 2 dozen.

Cheesy Cauliflower Patties



ARE YOU KIDDING!! Just when I think cauliflower can't get any better! Well here we go!
 Cheesy Cauliflower Patties = YUM YUM!

 1 head cauliflower
 2 large eggs
 1/2 c cheddar cheese, grated
 1/2 c panko
 1/2 t cayenne pepper (more of less to taste)
 salt
 olive oil

 Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste.

 Coat the bottom of a griddle or skillet with olive oil over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.

Texas Two-Step Buttermilk Pie

So I saw this recipe from Debi Newton at JustaPinch and I figured, hey, it sounds interesting.

And it’s very easy. Which is always a plus....

The taste?

It’s hard to describe. It’s more than a custard, has a bit of tang, and is sweet like a pecan pie filling would be. So a small piece is plenty.

In any case, this goes in the cookbook and will be made often.

INGREDIENTS:

2 c sugar
1/4 c All purpose flour
1 stick butter, melted
3 eggs
1 tsp vanilla extract
1 c buttermilk (1/2 pt container)

INSTRUCTIONS:

Make your pie crust dough and refrigerate for 30 minutes.
A few minutes before your dough is ready from the fridge, set oven at 350°
Mix together the dry ingredients.
Mix the wet ingredients in a separate bowl. Then add the dry to the wet and stir together until mixed.
Roll out your pie crust dough and place in a deep dish pie plate.
Pour in the pie filling.
Bake for 60-70 minutes. Start checking at about 50 minutes. If the top is browned, throw a piece of foil on it to keep it from further browning. Pie is done when it appears fully “set” in the middle.
Servings: 8

One Pot Pasta



One Pot Pasta

Everything cooks in one pot! So easy!

Ingredients:
12 oz pasta (I used large elbow noodles)
1 lb lean ground meat (I used beef but you can use turkey, chicken or pork as well)
1 cube beef bullion (or whichever flavor to go with your choice of meat)
1 med onion (chopped)
4 cloves garlic (minced)
1 can diced tomatoes (14.5 oz undrained)
1 can stewed tomatoes (14.5 oz undrained, used Italian seasoned)
4 cups water
2 tsp dried oregano
2 tsp dried basil
2 tbsp sugar
salt & pepper to taste
*Parmesan cheese (optional)

Directions:
1 In a medium stock pot brown the ground meat on med/high, with the bullion cube. (drain if needed)
2 Add to the meat the garlic and onion and cook on med heat til the onion begins to get a bit transparent then add all the remaining ingredients and stir well.
3 Cover and bring to a boil. Once at a boil, turn the heat to a simmer and continue cooking until pasta is tender and most of the liquid is absorbed. Stir occasionally.
4 Sprinkle with Parmesan cheese if desired. Enjoy!!

Pumpkin Maple Coffee Cake

Nothing says Fall like pumpkin.  Here's a heartwarming coffee cake recipe from Lovin' From the Oven

Ingredients:
    1 1/2 cup of all-purpose flour
    3/4 cup of brown sugar
    2 teaspoons of baking powder
    1/2 teaspoon of salt
    1/4 teaspoon of baking soda
    2/3 cup of buttermilk
    1/2 cup of canned pumpkin
    1/3 cup of canola oil
    2 teaspoons of maple syrup
    2 eggs, beaten
    Topping:
    1/4 cup of brown sugar
    1/4 cup of granulated sugar
    1 teaspoon ground cinnamon
    3 tablespoons cold butter
    1/4 cup of pecans, chopped (optional)

Directions
    Preheat the oven to 350 degrees F.
    In a mixing bowl, combine flour, sugar, baking powder, salt, baking soda, buttermilk, canned pumpkin, canola oil, maple syrup and eggs. Mix until just moistened.
    For the topping. In a small bowl combine brown sugar, granulated sugar, ground cinnamon, cold butter and pecans. Mix well with a fork until crumbly.
    Pour half of the batter in a 9x7 pan. Sprinkle with half of the topping. Spoon the remaining batter over the top, using a spatula to spread evenly. Sprinkle the remaining topping evenly.
    Bake for 40-45 minutes or until toothpick comes out clean.
