LEMON WHIP


LEMON WHIP

INGREDIENTS:
60 buttery round crackers, crushed
1/4 cup confectioners' sugar
1/2 cup melted butter
1 (6 ounce) can frozen lemonade concentrate
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) container frozen whipped topping, thawed

DIRECTIONS:
1. In a mixing bowl, combine the crushed crackers, confectioners sugar and melted butter. Press into the bottom of a 9x13 inch pan; reserve 1/3 cup for sprinkling on top.
2. Blend together the lemonade, sweetened condensed milk and whipped topping. Pour over crust and sprinkle with remaining crumb mixture. If desired, garnish with thinly sliced lemons.

Club Pasta Salad

Ingredients
2 cups uncooked shell pasta
1 (1 ounce) packet hidden valley ranch dressing mix
1/4 cup bacon bits
1/2 teaspoon onion powder
1/2 cup mayonnaise
1 1/2 cups cut-up cooked turkey or 1 1/2 cups chicken
1/2 cup cherry tomatoes, cut into fourths
1/2 cup julienne strips cheddar cheese
4 cups bite-size pieces lettuce

Directions
Fill large saucepan 2/3 full of water. Heat to boiling. Stir in contents of Pasta.
Gently boil uncovered 15 minutes, stirring occasionally, until tender.
Drain pasta. Rinse with cold water. Shake to drain well.
Combine Hidden valley ranch mix, onion powder and bacon bits with mayonnaise in large bowl. Stir in chilled pasta and remaining ingredients except lettuce. Serve on lettuce. Refrigerate leftovers (if desired, moisten with a few teaspoons milk before servings).

This is Sue....

"So, for today's results, I'm including a picture of myself (I'm nervous to share this). Did I plan for the first picture to have such crazy hair and look so awful? Absolutely not. But I think back to that day, and realize how out of control I felt. The next picture is today. Different clothes and different hair, I feel better, I look better and I wanted to look prettier. I'm still on my weight loss journey, I would love to take off 18 more pounds off. I sleep better (I require less) and have so much more energy. My back problems have greatly diminished.

I know you're thinking, Sue..enough rambling get on with it. So for today's results...I measure weekly (thankfully). I'm down 2 1/2 inches overall for a total of 22 1/4 inches since I began My weight did go up just under pound. Not sure why, but it did. I promised when I began my Skinny Fiber journey, I'd be truthful and honest to all of you, and myself too. I track and write everything down. I see a pattern ~~ 4 weeks ago, I also gained a little. I have one ovary, so I'd assume I still ovulate. I will be watching this to see if it's a trend. Am I upset with the scale..you bet (thought about a pony tail chop, just briefly . Am I discouraged, no way. I will get back up, dust myself off, and begin again. I will take my almost 12 lb loss and 22 1/4 inches loss and celebrate (but not with food LOL, ok maybe a beer or two)! Next week..I will drink more water (I know I harp on that, but I don't think I drank as much water as I usually do)."

CHEMICAL FREE FLEA SPRAY

Its that time of year again! Flea season for animals (especially dogs who like to be OUTSIDE, in the DIRT.. ) Here is a chemical free preventive spray to use on your dogs. I also mix vinegar with my pups shampoo equal parts in my hand to help rid any that are lingering...

How to prepare:

1 C white distilled vinegar
32 Ounces water

A few drops of lemongrass or lavender essential oil (to smell good but also, fleas, like other bugs, do not like either of these plants/oils/scents- it'll help keep those buggers at bay!:))

You will also need a spray bottle large enough to hold this all together and use

Directions

Mix the vinegar and essential oil together then add to water in the spray bottle and gentle shake. You can mist your dog (please keep away from their eyes -- for hard to spray areas I suggest using a hand towel or cloth with mixture on it and rub on those areas) You can also spray your pets bedding and clothing, collars etc. You can do this weekly! Also I do mix white vinegar with her shampoo when bathing her now in case there are any buggers on her.

Garlic & Herb Grilled Bread...

Serves 8
A grilled bread that full of flavor, and grilled to perfection
Prep Time - 10 min
Cook Time_20 min
Total Time - 30 min
Ingredients
1 loaf Sourdough Bread
4 tbsp. butter, melted
1 tsp fresh thyme
1 tsp fresh rosemary
1 tsp dried basil
4 garlic cloves, minced
1 tsp salt
1 tsp pepper
Instructions
1.Slice sourdough loaf in half lengthwise and lay cut side up on a rimmed baking sheet
2.Preheat grill (indoor or outdoor) to medium heat
3.In a small bowl combine melted butter with thyme, rosemary, basil, garlic, salt & pepper
4.Brush butter and spices onto sourdough loaf and let sit for 5 minutes
5.Place cut side of bread down onto the grill and cook for 5-10 minutes, or until bread is starting to brown
6.Flip and cook for an additional 5-10 minutes or until bread is starting to crisp
7.Remove, slice and serve
8.ENJOY!!

Pecan Pie Muffins ...

These ooey gooey treats are amazing!!!
Makes 24 mini muffins

1 cup packed light brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans
2/3 cup butter, softened
2 eggs, beaten
1 tsp vanilla

Directions
Preheat oven to 350 degrees F (175 degrees C). Grease 24 mini muffin cups.
In a medium bowl, stir together brown sugar, flour and pecans. In a separate bowl beat the butter, vanilla and eggs together until smooth, stir into the dry ingredients just until combined. Spoon the batter into the prepared muffin cups. Cups should be about 2/3 full.
Bake at 350 degrees F (175 degrees C) for 15 to 20 minutes.
Cool on wire racks when done.

Let me say that in my after picture I'M WEARING A BATHING SUIT. Lol I swear. The bottoms are the same as my before and the top I got from Old Navy a couple months ago.

My before picture is from November 2013 and the after was taken today. I haven't stepped on the scale in a few weeks, but last time I weighed, I went from 154 to 128.

Cherry Gelatin Fruit Salad!


Cherry Gelatin Fruit Salad Sooooo good ...low cal, low sugar!

INGREDIENTS:...
2 small pkgs cherry gelatin (use sugar-free)
2 cups boiling water
1 can tart pitted cherries
1 20 oz can pineapple in natural juice
4 small bananas (or 3 medium)

DIRECTIONS:
Completely dissolve gelatin with the boiling water. Drain cherries into a 2-cup measure, then add cold water to equal 1 1/3 cups of liquid. Add the cold water/juice mixture to gelatin and stir. Then, add the drained cherries, the entire can of pineapple - juice and all. Mix well. Then slice the bananas and add to the mixture and stir. Refrigerate and chill for at least 4 hours or until firm. Serves about 9-10
ENJOY!!

ALTERNATIVE for if you cannot get Cherry Gelatin
Serves: 4-6
Ingredients
1½ cups of unsweetened cherry juice
¼ cup cool water
¼ cup hot (almost boiling) water
1 tablespoon of Kosher Gelatin Powder
1 cup sliced bananas (about 2)
1 8 oz. can of Pineapple tidbits
1/2 can tart pitted cherries drained

Please note the recipe can be doubled.
Instructions
Pour the cool water in a large mixing cup and add the gelatin powder.
Stir briskly until mixed- it will start to thicken a lot.
Add the ¼ cup of really hot water and stir to mix- it should be thinner now.
Combine this with the juice and mix well.
Put the fruit into the container that you are going to make the jello in. 8×8 baking dishes work well.
Pour the jello mixture over the fruit and stir lightly to make sure it has coated the fruit too.
Put in the fridge, covered, for at least 2-3 hours or overnight and serve.

Use left over sloppy joes (or you can make you own)...
Sprayed down an 13X9 casserole dish with non stick cooking spray
Flatten out 16 pillsbury grand buttermilk flaky biscuits
Spooned some of the sloppy joe in the the biscuit
added two cubes of colby jack cheese on top of the sloppy joe, then folded the biscuit in half and placed into the casserole dish.

Cook at 350* for 15-20 min or done.

You may have seen these little seeds and their cousins, fennel, on foods. But, eaten alone, they can help resolve such symptoms as gas and slow digestion. Eat about a teaspoon of them with water or steep them in a cup of boiling water for 10 minutes. Strain and then drink.

Courtney sent this to us and said.....Last week we had dinner at Tony Roma’s. My friend Judy chose a chicken dish that had pineapple salsa on it. It was so good she decided to give it a shot herself! We put it on our pork chops last night. AMAZING!!!!!!! ...

Here is her recipe:

1/2 fresh pineapple diced
1/2 Red Onion diced
2 small tomatoes
Cilantro
1 Jalapeno (optional)
Mix all together and refrigerate.

This is delicious and a great garnish for any of your grilled or baked main dish meats. Let us know what you think!

Good Low Carb Dish or can be lightened up with healthier version of the following ingredients:

Bunch of fresh broccoli
1/2 pound of Bacon (crumbled)
1 Cup Cheddar Cheese (more or less to your liking)
Dressing:
Mayo, Vinegar and I used Stevia to sweeten. I don’t measure, just add as I go
Mix it all up and refrigerate.
Add optional items such as grapes, onion and nuts to dress it up!

Makes 30
3 ripe bananas
2 cups oats
1/4 c peanut butter
1/4 c cocoa powder
1/3 c unsweetened apple sauce
1 tsp vanilla

Preheat oven to 350F. Mash bananas then add the rest of the ingredients and stir and let sit for 20 min. Then drop by teaspoonful onto ungreased cookie sheet. Bake 10-12

Crock Pot Parmesan Honey Pork Roast!!

Ingredients:
1 boneless whole pork loin roast (4 pounds)
2/3 cup grated Parmesan cheese
1/2 cup honey
3 tablespoons soy sauce
2 tablespoons dried basil
2 tablespoons minced garlic
2 tablespoons olive oil
1/2 teaspoon salt
2 tablespoons cornstarch
1/4 cup cold water

Directions:
Cut roast in half. Transfer to a 3-qt. slow cooker. In a small bowl, combine the cheese, honey, soy sauce, basil, garlic, oil and salt; pour over pork. Cover and cook on low for 5-1/2 to 6 hours or until a meat thermometer reads 160°.

Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Slice roast; serve with gravy. Yield: 10 servings.

Buffalo Chicken Cups

Ingredients

1 (8 ounce) package cream cheese, softened
1/2 cup Ranch dressing
1/2 cup Buffalo wing sauce (Frank's is the brand I like)
1 cup shredded cheddar cheese, divided
1 1/2 cups cooked and shredded chicken
24 wonton wrappers
1/4 cup blue cheese crumbles

Directions

1. Preheat oven to 375 degrees. Spray brownie pan very lightly with kitchen spritzer.

2. In a medium bowl, combine softened cream cheese, Ranch dressing, wing sauce and 3/4 cheddar cheese (save remaining 1/4 cup for topping). You can soften the mixture slightly in the microwave if needed to make it come together. Stir in shredded chicken.

3. Start layering your cups. Begin with a wonton wrapper and press it into the bottom of each muffin tin. Spoon about a tablespoon of the chicken mixture. Top with another wonton wrapper and add another tablespoon of chicken mixture. Sprinkle with remaining cheddar cheese and a little blue cheese.

4. Bake for 18 minutes or until edges are brown. Check cups after 10 minutes into cooking and if edges are browned cover the cupcakes with foil for the remaining cooking time.

5. Remove from oven and let cool for 5 minutes. To remove, use a knife to loosen the edges then pop each cup out

CROCK POT SPAGHETTI SAUCE

Easy & Simple...

If you've ever wanted to make your own spaghetti sauce and freeze it, here is rich, thick, delicious sauce that can be made in your slow-cooker. There are several things to love about this recipe, first- you don't have to have access to "fresh" tomatoes as it uses canned. That's not to say   that you can't use home canned tomatoes if you'd prefer.

Secondly, it's a very 'forgiving' recipe, the seasonings can be altered to your taste preference and if you accidentally add "too much", you can fix it easily by simply adding 1 more can of tomatoes.

You'll Need:
4 28-ounce cans whole tomatoes, crushed by hand
1 12-ounce can tomato paste
1/4 cup red wine vinegar (or red wine if you happen to have some on hand that you love the taste of!)
2 Tbs black pepper
1 Tbs salt
3 Tbs dried red-pepper flakes
3 Tbs dried basil
8 cloves garlic, minced
3 Tbs fennel seeds
3 Tbs dried oregano

What do do:
Combine all ingredients in a large, thick-bottomed stock pot and simmer until thickened and slightly darkened, about 2 to 3 hours. Adjust seasoning as desired.
This combination creates a spicy, slightly tangy sauce that is excellent on pasta, pizza, zucchini noodles and much more. The red wine vinegar really packs a nice kick of flavor.

CRUNCHY HONEY GARLIC PORK CHOPS


CRUNCHY HONEY GARLIC PORK CHOPS (you can also use chicken)

Ingredients:
6-9 pork chops (not too thick or chicken breasts)
4 Tbs water
2 eggs
2 cups all purpose flour
1 tsp. garlic powder
1 tsp. salt
1 tsp. black pepper
Coconut oil for frying

Glaze:
1 1/2 cups honey
dash of cayenne pepper (to your taste)
1 tsp. fresh ginger-grated
1/2 cup Tamari or soy sauce
1 Tbs chopped garlic
2 Tbs coconut oil or butter

Preparation:

Preheated over 350 degree. In a shallow dish Whisk the eggs and 4 Tbs. water together. Mix the flour, salt, pepper and the garlic powder in a plate or shallow pan. Dip the chops or chicken in the flour, then into the egg and then back over to the flour mixture again. (This is what puts the extra crispy coating on them).

Place in a pan with about a half inch of the oil. You need to get it good and hot first and then turn to about medium, so they will not cook too fast. Cook for about 5-6 minutes on each side without turning more than twice so you will not lose your breading. Remove from the pan and put into a baking dish.

In the coconut oil over medium heat sauté the garlic then add the honey, soy sauce, cayenne, and ginger. Cook until bubbly then reduce to low and simmer for about 5 minutes. Watch this carefully because it might boil over.

Pour 1/2 of the glaze over the pork chops. Turn them over and pour the other 1/2 over the other side. Place in oven and cook uncovered for about 20-25 minutes. This sets in the glaze and finishes them to be sure they are cooked through. When ready, place on serving dish with parsley garnish and Enjoy!

PEPPER N' ONION SAUSAGE

Total cook time: 20 minutes
Prep time: 10 minutes

Ingredients:

1 lb beef, turkey, kielbasa, chicken smoked sausage
1 chopped green pepper
1 chopped onion
1 can of Rotel tomatoes w/green chillies
Cooking spray

Directions:

Spray pan with cooking spray. Slice sausage, cut onions and green peppers and saute in pan. Cook until green pepper is tender to your consistency and onions are translucent. Add tomatoes with green chillies and simmer. Serve over rice or noodles, if preferred.

PISTACHIO DREAM CAKE

1 white cake mix
1 (small) Sugar-Free instant pistachio pudding
2 c. cold Milk (I used almond milk. Just cut down amount to 1 cup)
2 c. Sugar-Free Cool Whip topping
4 Graham Crackers, crushed
3 Tbsp. Coconut

Prepare cake according to the direction on the cake mix box. Bake in a 9" x 13" pan. When golden brown, remove from oven and allow to cool for 5 minutes.

After it has cooled, use the handle of a wooden spoon to poke holes all around the baked cake. Be sure to make the holes big enough for the pudding to flow into and go deep enough with the spoon handle that you hit the bottom of the pan.

Next, prepare your pudding mixture according to instructions on box. Whisk until the mixture is fully combined and there are no lumps left in the bowl.

Pour the pudding mixture over the entire cake, being sure to get it into all your holes. Use a spatula to help get it into the cake and spread evenly.

Place in the refrigerator for about two hours... or until set. Top with Cool Whip topping, crushed graham crackers and sprinkle with pistachio nuts and coconut! Serve and enjoy. (Refrigerate any leftovers if you're lucky!!!)

TOMATO PIE RECIPE  **  Serves 6

Prep time: 15 mins - Cook time: 40 mins - Total time: 55 mins

Tomato Pie is a perfect summertime recipe. Get this family-favorite recipe for Tomato Pie full of ripe tomatoes, sweet onions, and cheesy goodness!

Ingredients
1 9-inch unbaked pie crust
3 medium tomatoes, thinly sliced
1 teaspoon Kosher salt
1 medium Vidalia onion, thinly sliced
1 teaspoon freshly ground black pepper
1 tablespoon olive oil
2 tablespoons chopped basil
1 cup grated cheddar cheese
½ cup grated Parmesan cheese
¼ cup mayonnaise

Instructions
Preheat oven to 425º F. Prepare pie crust for blind baking by placing unbaked pie crust into pie plate, crimping edges and pricking bottom and sides with a fork for venting. Then, line unbaked pie crust with a sheet of parchment paper and fill with dried beans. Bake pie crust until lightly golden brown, about 20 minutes. Remove from oven, remove dried beans and parchment paper (storing for later use) and set aside. Reduce oven to 350º F.

In the meantime, spread tomatoes onto a baking sheet lined with paper towels. Sprinkle tomato slices with salt and then top with another layer of paper towels. Allow tomatoes to rest for at least 15 minutes to dry as much as possible.
Layer tomatoes and onion slices in pie crust until filled. Sprinkle with black pepper and drizzle with olive oil. Sprinkle on chopped basil.

Mix together cheddar and Parmesan cheeses in a small bowl with mayonnaise. Spread on top of Tomato Pie to ensure completely covered. Bake Tomato Pie at 350º F for approximately 40 minutes. Remove from oven and allow to rest for about 5 minutes before slicing.

Cinnamon Vanilla Almond Butter Banana Pops

These Banana Pops are a fun treat to serve both kids and adults. The cinnamon vanilla almond butter is a treat in itself and then sandwich it in between two banana slices makes it even better. Adding antioxidant rich dark chocolate to the mix makes the whole thing out of this world resulting in a really yummy, healthy treat.

Makes 4 Banana Pops

Ingredients:

2 bananas
1/3 cup almond butter
½ tsp vanilla
¼ tsp cinnamon
1/3 cup all natural dark chocolate pieces or chips (at least 60% cacao)
1 T coconut oil

popsicle sticks or bamboo skewers

DIRECTIONS:

Mix almond butter, vanilla, and cinnamon together until well mixed.

Peel and cut bananas in half. Slice the halves vertically in half.

Divide your almond butter mixture into 4 equal portions. Use 1 portion of almond butter per 2 banana slices. Spread the almond butter mixture over half of the banana slices.

Press your popsicle stick or skewer on top of the almond butter and top with the remaining banana slices.

Place the banana pops in the freezer and freeze until firm.

When your banana pops are all the way frozen, melt your dark chocolate and coconut oil in a double boiler over low heat. (If you don’t have a double boiler, use a large skillet filled with some water and place a smaller pot inside the skillet on top of the water. Put your chocolate and oil in the smaller pot.) Stir until melted and smooth.

Dip each banana pop in the dark chocolate and place on parchment paper. Place back in the freezer for a few minutes until chocolate is hardened and cold. Enjoy!

Teddy Bear Race Cars

1 packet of mini Mars Bars or Milky Way chocolate bars

1 family packet of smarties, M&Ms or Skittles


1 box of Teddy Grahams

1 quantity of icing sugar icing paste for glue (mix half cup of icing sugar and a teaspoon of cocoa powder with a few drops of hot water)

Glue each of the 4 wheels (smarties) on to the sides of the milky way bars. Press into each center a tiny teddy biscuit. Glue on a smartie steering wheel for each one.

 BATTERED BUFFALO CAULIFLOWER!!!!
   
 Ingredients
 1 head of cauliflower

For the batter
 1/2 cup all purpose flour
 1/2 cup water
 dash of Frank's Wing Sauce (or Frank's Original Hot Sauce)
 1/4 teaspoon garlic salt
 1/4 teaspoon dried onion (I use Tastefully Simple's Onion Onion)


For the buffalo sauce
 1/4 cup Frank's Wing Sauce
 4 Tablespoons salted butter, melted
 pinch of salt

Directions
 Preheat the oven to 450 degrees.

Line a baking sheet with tin foil and spray with non-stick spray (I always use olive oil spray) and set aside.

Wash your head of cauliflower and cut into pieces. I made a variety of sizes.

In a medium bowl, mix together the batter ingredients. It will be fairly thick.

Dip each piece of cauliflower into the batter until fully and evenly coated. Place onto the prepared baking sheet in a single layer.

Bake for about 15 minutes until the batter just hardens.

In a small bowl, mix together the buffalo sauce ingredients.

Once the cauliflower are done, remove from the oven and brush with the buffalo sauce. Again, fully and evenly coat each piece.

Put back into the oven and bake for a few more minutes (I think 5-7 minutes was my range), until the sauce has mostly dried and the cauliflower is crispy.

Remove from the oven, let cool, then enjoy! We dipped ours in Ranch dressing.
