Gingerbread Muffins

These muffins are perfect for this Holiday Season!
Gingerbread Muffins

Serves 12

A perfect muffin for this Holiday season, full of warm spices and with a crunchy top it makes it perfect

Prep Time - 15 min

Cook Time - 25 min

Total Time - 45 min

2 1/2 cups flour
2 tsp ground ginger
1 tsp cinnamon
1 tsp baking powder
1/2 tsp salt
1/2 cup butter, softened
1/2 cup brown sugar
1/4 cup maple syrup
1/2 cup pumpkin puree
1/2 cup molasses
1 egg
3/4 cup skim milk
1/4 cup course decorative sugar

1.Preheat oven to 350
2.Line a muffin tin with muffin liners, or spray a muffin tin with nonstick spray
3.In a large bowl combine flour, ginger, cinnamon, baking powder and salt
4.In the bowl of a stand mixer cream together butter and sugar until fluffy
5.Add in maple syrup, pumpkin and molasses & egg until just combined, scraping down the sides as necessary
6.Add in 1/3 of the flour mixture, mixing until just combined
7.Mix in 1/2 of the milk and then repeat with another 1/3 of the flour, remaining milk and then remaining flour, mixing until each addition is just combined
8.Using a large ice cream scoop divide batter between 12 muffin pans
9.Top each muffin with course sugar
10.Bake for 25-30 minutes or until a toothpick comes out clean when inserted into the middle of a muffin
11.Let cool for a few minutes before serving

Each muffin is 7 WW+ points
