Mummy Meatloaf (Lo Carb Version)



This is such a cute idea...kids would love this!

Mummy Meatloaf (Lo Carb Version)

Ingredients:
(You make this recipe with your own meatloaf recipe)
But this is how I made mine...this recipe is lo carb!!
2 lbs Lean Ground Beef (Can also use chicken or turkey)
1 can of tomato paste
1 egg
1/2 bag of pork rinds crushed ( can use regular bread crumbs)
1/2 cup shredded mozzarella cheese
1 medium onion chopped fine...leaving a chunk to make eyes and teeth
Salt, pepper, garlic powder, oregano to suit your taste..
3/4 lb bacon
Directions:
Preheat oven to 350°
Mix beef with all other ingredients (aside from the bacon) and place in baking dish and form a head shape....wrap bacon slices around outter edge of meat and add a few across the face... add onion eyes and teeth.
Bake for 1 hour until juices run clear!
ENJOY!!!!!

REMEMBER!! WATCH YOUR PORTIONS! I have found that many do best when they control their portions rather than deny themselves food!
