Apple Cider Cupcakes with Apple Cider Cream Cheese Frosting

APPLE CIDER CUPCAKES WITH APPLE CIDER CREAM CHEESE FROSTING are the ultimate in Fall desserts! The cupcakes full of the delicious spices of cider and small bites of fresh apple!

Apple Cider Cupcakes
2½ cups all-purpose flour
2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp ginger
½ tsp nutmeg
¼ tsp allspice
½ cup butter, room temperature
2 cups sugar
2 tsp vanilla extract
2 eggs, room temperature
¾ cup buttermilk, at room temperature
3 cups shredded apples, (I used Figi and the big wholes on the grater)
Apple Cider Cream Cheese Frosting
8 oz. cream cheese, room temperature
½ cup butter, room temperature
1 tsp cinnamon
½ tsp nutmeg
⅛ tsp allspice (half of a ¼ tsp)
4 cups of powdered sugar
2 tbsp of apple cider
Get a Musselman’s® Apple Butter Cookbook

preheat the oven to 350 degrees F and line a muffin pan with cupcake liners
in a medium bowl whisk together flour, baking powder, salt, cinnamon, ginger and allspice then set aside
in the bowl of a stand mixer beat the butter until it becomes light and fluffy
add in the sugar and vanilla extract and continue to beat for another 2 minutes
add in the eggs one at a time and mix until completely incorporated
pour in the buttermilk and mix (batter will look lumpy but don't worry)
turn off the mixer and dump in the flour mixture
slowly turn the mixer back on and allow it to work until ingredients are just combined
remove from stand mixer and fold in the shredded apple
fill the cupcake liners ¾ of the way full
place in the oven to bake for 20-25 minutes or until a toothpick can be inserted into the center and removed clean
remove from oven and allow to cool
Apple Cider Cream Cheese Frosting
using a stand mixer or electric mixer beat the cream cheese until it's light and fluffy
add in the butter and continue to beat until fluffy
slowly add the powdered sugar, cinnamon, nutmeg, and allspice
add in the apple cider
Frost the cupcakes with the frosting and enjoy!!!
