Country Fried Steak and Gravy

Country Fried Steak and Gravy

For the steak:...

4 pieces of cube steak
1 C. all purpose flour
1/2 tsp. salt
1/2 tsp. black pepper
1 tsp. garlic powder
1/4 tsp. cayenne pepper
1 egg
2 T. milk
vegetable oil for frying

Heat about 1/2" of oil to 350 degrees in a large skillet. On a plate mix together the flour, salt, pepper, garlic powder and cayenne pepper. In a bowl beat together the egg and the milk. Take each cube steak and dredge in the flour then the egg mixture then back into the flour. Carefully place each piece into the hot oil. Fry about 5-6 minutes, turn and fry an additional 5-6 minutes. Remove to a paper sack or paper towel lined plate. Make the gravy...

Drain the grease from the pan, add in:

3 T. bacon grease
1 T. butter
When the bacon grease and butter have melted, add
4 T. flour
1/4 tsp. each salt and pepper
Stir together till well combined and cook for 1 minute to cook the flour. Next you will quickly stir in...
1 1/2 C. whole milk (possibly more)
When the gravy starts to thicken you may want to add a little more milk to thin out. Once it has reached your desired consistency, remove from heat.

Serve the cube steak topped with the gravy.
