Garlic Crusted Cod (low carb)



Garlic Crusted Cod (low carb)

1 Tbsp butter...
2 Tbsp extra virgin olive oil
6 garlic cloves, chopped
1 c pork rinds - crushed and seasoned to taste
1/2 c parsley
1/4 t salt
1/8 t pepper
1 egg, beaten
2 lbs boneless cod
4 lemon wedges
Preheat over to 400
Heat butter and oil in a saucepan, add the garlic until softened, add in crushed pork rinds, parsley, salt and pepper. Mix until crumbs and seasonings are moist. Dredge the cod, in the beaten egg then the crumb mix. Place the coated fish in an oiled roasting pan. Bake the fillets for 10 -12 minutes until a golden brown. Use a fork to make sure the fish flakes and is done. Serve with lemon wedges.
