"Omelettes On The Go"

"Omelettes On The Go"

The amounts of each item are based on what you yourself would like in your omelette. The beauty of these is that you can use any combination that sounds good to you...you can even mix and match! They freeze well and reheat well for quick snacks too

Eggs (Can use Egg beaters)
Shredded Cheese (Can use Fat Free Cheese if you are watching calories and fat)
Red Bell Pepper,
Spinach leaves,
zucchini (any veggies you want)!
Sausage or any ground meat (I used the bagged turkey sausage crumbles in the freezer aisle)
Scallions

Preheat oven to 375.
Mix all ingredients together in large bowl.
Spray a cupcake/muffin pan with non-stick spray and spoon mixture into tins 2/3 full.
Bake in preheated oven for 20-30 minutes.
Test with a toothpick until t comes out clean.

Cool and place in container for breakfast on the go. In the morning, pop in the microwave for a minute or so and you are ready to walk out the door. Enjoy!
