Fajita Kabobs

Fajita Kabobs
Serves 4 - 1 Chicken Kabob & 1 Steak Kabob is only 5 WW+ points...

Fajitas without the guilt

Prep Time - 20 min
Cook Time - 20 min
Total Time - 2 hr

8 oz boneless, skinless chicken breast - cut into bite-size pieces
1 cup cilantro - chopped
2 tbsp pepper - divided
2 tsp salt -divided
2 tbsp chili powder -divided
3 tbsp lime juice -divided
3 cloves garlic -minced
2 tbsp canola oil
6 oz lean strip steak - cut into bite-size pieces
3 bell pepper's (I used 1 red, 1 yellow & 1 orange) - cut into bite-size
1 onion - cut into bite-size
can You use whatever veggies you like, we used peppers and onions as these are fajita inspired kabobs

Marinade Chicken
1.In a large zip closure bag combine chicken, cilantro, 1 tsp salt, 1 tbsp. chili powder, 2 tbsp. lime juice, minced garlic and oil. Massage the bag to make sure the chicken is coated with the marinade.
2.Refrigerate and massage the bag every hour or so until it is time to cook - Marinate for at least 1 hour

1.Prepare & preheat grill
2.Soak wood skewers in water for 30 minutes to 1 hour prior to making the kabobs
3.Season steak with remaining salt, pepper, chili powder and lime juice
4.Thread the kabobs with 3 veggies and 1 piece of meat and repeat until kabob is full
5.You should get 4 chicken kabobs and 4 steak kabobs - make sure to not mix the meats on the kabobs as they will cook at different rates
6.Grill kabobs until meat is cooked through to desired doneness
7.Serve & Enjoy!!
